Thanksgiving means Southern soul food, made by our grandmamas, mamas, and favorite aunties. A meal we’ve waited all year to eat!One Southern dish that you shouldn’t miss this Thanksgiving is Black folks chicken and dressing. 

Black Folks Chicken And Dressing

sugar (granulated (*can be omitted if you don't prefer cornbread sweet))

butter (unsalted)

oz cream cheese (whipped cream cheese)

oz heavy whipping cream

onion

celery (diced)

thyme (fresh

rosemary (fresh

sage (ground)

parsley (finely chopped)

chicken stock (or chicken broth)

salt

black pepper

egg (large)

oz chicken (skinless cooked chicken thighs,

Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter).

Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.

While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.

Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.

Pour the cornbread mixture into the skillet.

Bake at 350 degrees F. In the conventional oven for 20-25 minutes. Instant Pot Omni Plus oven for 15-18 minutes.

When the baking time has finished, allow the cornbread to cool for approx 10 minutes.

Cut the bread lengthwise and then across into 1-inch bread cubes and set aside.

Instructions for the cornbread recipe

Grease an 8″ or similar-sized baking dish and set it aside.

Remove the lid from the Instant Pot and turn on the sauté setting for 8 minutes.

With the lid off, melt ½ a cup of butter.

Add the chopped onion, celery, thyme, rosemary, and sage.

Stir to coat the vegetables in the herbs and melted butter and then sauté until they soften and slightly brown.

Add the shredded chicken, chicken stock, salt, and pepper to the inner pot’s simmer, and stir to combine.

Remove the chicken and herb mixture from heat and set aside.

Allow the mixture to cool to the touch so that it can be mixed with the egg. (You don’t want the egg to cook from the residual heat and scramble!)

While the herbs are cooling off, beat the egg with the parsley in a medium-sized bowl.

Gently fold in the cornbread cubes to coat with the egg.

Pour the cooled chicken and herb mixture into the egg mixture.

Transfer the mixture to the pre-greased baking dish.

Cut the 2 tablespoons of butter into small pats and place them all around on top of the dressing.

Cover the baking dish with foil and bake at 350 degrees F. 35 minutes in the conventional oven. In the Instant Pot Omni Plus oven for 30 minutes.

Uncover and bake until golden, 10-15 more minutes (conventional oven), 10 minutes (Instant Pot Omni Plus oven).

Serve this baked chicken and dressing recipe warm, and enjoy!

Optional – serve with gravy on top.

Candied yams are an old-fashioned African-American recipe. A sweet potato soul food side dish cooked to perfection in a cinnamon-brown sugar glaze.

Black Folks Southern Candied Yams

sweet potatoes (3 -3 ½ pounds)

water (cool water)

water

butter (unsalted butter,

brown sugar

½ cup sugar (granulated)

cinnamon (of ground)

nutmeg

maple syrup

ginger (ground

(ground)

vanilla extract

Wash the sweet potatoes. (I like to use this vegetable scrubber HERE.)

Peel and cut the sweet potatoes into thick round wedges.

Then set them aside to soak in a bowl of cool water to prevent browning while you’re preparing the candied yams syrup.

Melt the butter in a medium-sized bowl in the microwave.

Add the brown sugar, granulated sugar, cinnamon, nutmeg, maple syrup, ginger, ground clove, and vanilla extract to the melted butter.

Mix the ingredients well to create the syrup glaze for the candied yams.

Next, Drain the sweet potato rounds in a colander.

Open the Instant Pot lid and add ½ a cup of water and the sweet potato rounds to the stainless-steel inner pot.

Pour the syrup glaze over the sweet potatoes.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 5 minutes.

When the cooking time is finished, allow a natural pressure release for at least 5 minutes.

To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.

Optional – Open the Instant Pot lid and sprinkle the miniature marshmallows over the cooked, candied yams.

With the lid placed not entirely on the Instant Pot (in a resting position, so it doesn’t lock back into position on the pot) continue with the setting on ‘keep warm.’

After about 5 minutes, check to see if the marshmallows have melted.

Once the marshmallows are melted, turn off the Instant Pot and transfer your Black folks’ Southern candied yams recipe to a serving dish.

Serve right away and enjoy!

Soul food baked mac and cheese is made with a rich &amp; creamy homemade cheese sauce &amp; yummy Southern spices. Southern comfort food the Black folks way!

Black Folks Soul Food Baked Macaroni And Cheese

unsalted butter (divided – 1 tablespoon & 3 tablespoons)

flour

heavy cream

cheddar cheese (shredded)

Colby-jack cheese (shredded)

garlic powder

onion powder

mustard (dried)

paprika

milk (divided – 1 ¼ cups & 3 cups)

macaroni noodles (uncooked)

Turn the Instant Pot on the sauté setting for 25 minutes (although you may not need this entire amount of time).

Fill the Instant Pot stainless steel inner pot with 3 cups of milk, 3 cups of water and 1 tablespoon of butter.

Once the liquid begins to simmer, add the macaroni and cook according to the package directions, stirring occasionally to make sure the macaroni does not clump &amp; stick.

Drain the macaroni and set it aside.

Add the 3 tablespoons of butter to the empty inner pot and turn it back on the sauté setting.

When the butter is melted, add the flour, 1 ¼ cups of milk, and seasonings (salt, pepper, garlic powder, onion powder, dried mustard and paprika) and whisk until smooth.

Change the Instant Pot cook setting from sauté to slow cook for 1-hour (although you will not need this entire amount of time).

While the cook setting changes from sauté to slow cook, allow the ingredients to simmer for about 3 minutes until the mixture thickens slightly.

Stir in the cheeses (reserve some for topping when baking).

Close the Instant Pot with the lid and let slow cook for 5-10 minutes until the cheeses are blended.

Open the lid to add the cooked pasta and the heavy cream to the inner pot, stirring the mixture to blend evenly.

Transfer the pasta mixture into an 8-inch cast iron skillet or baking pan.

Top with the remaining shredded cheese.

Bake in the Instant Pot Omni Plus oven at 350 degrees F for 20 minutes or until golden and bubbly. Or bake in the conventional oven for 25 minutes or until mac and cheese is golden and bubbly.

Optionally, garnish with a sprinkle of dry thyme or 4-5 fresh thyme sprigs.

Serve and enjoy!

Pro tip: For baked mac and cheese the Black way, use milk to coat the macaroni and give it a smooth, silky texture. Perfect for layering on cheese!

Black Folks Southern Banana Pudding

bananas (ripe &

whipped cream (1 container)

cream cheese (1 container, whipped)

vanilla

Nilla Wafers (1 box and ¼ cup of crumbled Nilla Wafers cookies)

Make the instant pudding according to the pudding mixture instructions and set it aside in the refrigerator.

In a medium-sized bowl, mix the whipped topping and cream cheese and set aside.

Line the bottom and sides of a 9×13 baking pan with Nilla Wafer cookies.

Add a layer of banana slices over the Nilla Wafers.

Using a small spatula, spread the vanilla pudding evenly over the bananas.

Add a layer of the whipped topping and cream cheese mixture over the layer of pudding.

Sprinkle the ¼ cup of crumbled cookies all over the top layer of whipped cream.

Allow the banana pudding to chill in the refrigerator for at least 2 hours.

Black Folks Soul Food Southern Fried Chicken Recipe

chicken (6-8 pieces of chicken,

oz peanut oil (or vegetable oil)

all-purpose flour (divided)

½ teaspoon paprika

red pepper ((chili pepper))

poultry seasoning (or all-purpose seasoning)

buttermilk (½ cup of buttermilk = ½ cup of milk & ½ tablespoon of apple cider vinegar)

Mix the poultry seasoning, salt, and pepper in a small bowl.

Rub the seasoning mixture all over each piece of chicken.

Pour the peanut oil (preferred) or vegetable oil into a deep fryer, 6-quart skillet, or Dutch oven until the oil is 1-inch deep.

Heat the oil over medium heat or until it reaches 350 degrees F.

While you’re waiting for the oil to heat up, place 1 cup of the divided flour, garlic powder, onion powder, paprika, and red pepper in a medium-size mixing bowl or 1-gallon resealable food storage bag.

Shake (or mix) the sealed bag to combine the ingredients for a homemade poultry seasoning, and set the flour mixture aside.

Pour the second cup of flour into a second resealable bag (or medium-sized mixing bowl) and set it aside.

In another medium-sized bowl, whisk together the buttermilk and egg, and set that mixture aside too.

The chicken will go through a 3-step process from here.

First, place the chicken in the bag (or bowl) of seasoned flour and shake or toss to coat the chicken evenly.

Second, shake off the excess flour and dip the chicken into the buttermilk mixture.

Third, transfer the chicken to the last bag (or bowl) of flour and shake or toss until it’s very well coated.

Place the coated chicken into the pre-heated oil, skin-side down, and be careful not to overcrowd the chicken in the oil. You can fry a second batch if need be to avoid overcrowding by frying all the chicken at once. Just make sure the hot oil remains at 350 degrees F.

Cook the chicken pieces for 10 to 12 minutes, occasionally turning to prevent excessive browning.

As the chicken batter turns golden brown, remove it from the hot oil, and allow it to drain in a closed container (to keep the fried chicken warm) with a paper towel under the chicken.

Serve soul food Southern fried chicken right away, and enjoy!

Southern Chicken And Dumplings The Black Way

all-purpose flour

baking powder

milk

vegetable oil

chicken breast (pre-cooked, seasoned & chopped)

chicken broth

carrots (chopped)

celery (chopped)

garlic (minced)

chicken bouillon

thyme (dried)

heaving cream ((heaving whipping cream))

parsley (fresh & chopped to garnish (optional))

Add the dry ingredients: flour, baking powder, and salt in a medium-sized bowl.

Then stir in the milk and vegetable oil until thoroughly combined.

Set aside this flour mixture to make the dumplings later.

Instructions for the homemade dumplings recipe

Open the Instant Pot lid and turn it on to the sauté setting.

With the lid off, allow the sauté to heat up, and after a minute, add the vegetable oil.

Then add the carrots, onion, and celery.

Sauté for 2-3 minutes so that the onion and celery soften.

Add the garlic, chicken bouillon, thyme, salt, and pepper and cook for an additional minute.

Stir in the broth, then the cooked chicken, and turn off the Instant Pot.

Pinch off the dough and form 1-2″ course dumpling-shaped balls by quickly rolling the dough with your hands. The dumplings will increase in size as they cook.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 3 minutes.

When the cooking time is finished, allow a natural pressure release for at least 10 minutes.

Then stir in the heavy whipping cream.

Optionally, garnish with fresh chopped parsley.

Serve Black folks’ Southern chicken and dumplings right away, and enjoy!
