A traditional British dessert made with oats, cream and flavoured with orange.

Flummery

tbsp caster sugar

150 ml double cream (heavy)

75 ml double cream

tbsp whiskey

Soak

Measure the oats into a measuring jug and top up with water to the 500ml or 18 fl oz mark. Leave for 48 hours for the mixture to steep.

Strain

Place a sieve over a saucepan and strain the oat water into it.

Boil

Juice the oranges and the juice to the saucepan with the sugar. Bring the mixture to the boil over a medium heat and simmer for about 10 to 15 minutes until the mixture is thick.

Let the custard cool for 5 minutes and then stir in the cream.

Chill

Divide between 4 glasses and chill for an hour until set.

Pour

Whip

Whip the cream until it just holds its shape then place in a piping bag fitted with a large star nozzle.

Pipe

Pipe the cream onto the middle of the flummery.

Mix the jelly with 250ml boiling water until it has dissolved. Pour into a bowl and leave to cool.

Stir through the evaporated milk and pour into an approximately 20cm trifle bowl. Cover and put in the fridge to set overnight. To serve, top with cream, if you like.

For a light and fresh dessert, try this easy French Blanc-manger (known as Blancmange in English) - made with a few ingredients. Served in glasses or small jars, it is perfect for family gatherings or entertaining parties.

+ 2 teaspoons (125 ml) unsweetened almond milk

+ 2 teaspoons (125 ml) heavy cream

+ 4 teaspoons (250 ml) whipped cream

gelatin

(65 g) granulated sugar

vanilla bean

strawberries

raspberries

blueberries

(15 g) granulated sugar

To make red fruit coulis,

 mix the fruits and sugar in a food processor (except a few for the decoration). Pass it through a fine-mesh sieve to obtain a coulis. Refrigerate.

To make blanc-manger,

soak gelatin in cold water for 10 minutes. Split the vanilla bean in half, lengthwise. Pour almond milk and heavy cream into a saucepan. Add sugar and vanilla pod, bring to a boil and let it simmer for a few minutes. Take the pan from the heat, add drained gelatin to the hot mixture, and mix. Pour it in a shallow dish, cover with plastic film in contact and refrigerate for at least 4 hours.

Whisk whipping cream with an electric mixer into whipped cream. Take the milk preparation from the refrigerator. Add a few spoons of cream to the almond blancmange and mix with a hand whisk. Then pour the blancmange into the whipped cream. Gently mix by lifting the mixture with the whisk.

Transfer the blancmange to a pastry bag with the cut tip and push it into glasses/small glass jars. Refrigerate for about 2 hours.

To serve,

pour 1 to 2 tablespoons red fruit coulis on top of the blancmange. Decorate with fresh fruit and serve.

This is a rich, decadent, and creamy vegan chocolate pudding, perfect as a family dessert or for events! This recipe uses just 7 ingredients (and no odd ‘hidden’ ingredients). It is dairy-free, egg-free, can be made nut-free, and refined sugar-free!

Vegan Chocolate Pudding

dairy-free milk ((*see notes))

cornstarch (or arrowroot flour)

coconut sugar (or sugar of choice)

tbsp unsweetened cocoa powder

salt

tsp vanilla extract

peanut butter ((*see notes))

1.75 oz dairy-free chocolate (chopped (optional))

Watch the video in the post for easy visual instructions.In a medium-sized saucepan, combine all ingredients except vanilla extract, peanut butter, and chocolate. Whisk until the cornstarch dissolves completely, only then turn on the heat. This step is important to avoid any lumps.

Bring the mixture to a boil over medium heat, whisking frequently.

Once the pudding starts boiling turn the heat to low and whisk continuously for about 30-60 seconds. You will notice that the pudding thickens.

Remove from heat, add vanilla extract, peanut butter, and dairy-free chocolate (if using). Whisk until the peanut butter and chocolate melted and no lumps remain.

Pour the pudding into jars, cover with a plastic wrap to avoid a film, and refrigerate for a couple of hours until set. Enjoy!

The Best Vegan Chocolate Pudding (Easy Recipe)

Our easy blancmange uses only a handful of thrifty ingredients. This retro, milky dessert is infused with lemon and can be topped with juicy fresh berries.

Oil a 1.2-1.5 litre jelly mould, then set aside. Soak the gelatine in cold water following pack instructions. Mix together the cornflour with 6 tbsp of the milk and pour into a saucepan. Add the remaining milk, lemon peel and sugar, then bring to a boil. Lower to a medium-low heat and whisk continuously until thickened enough to coat the back of a spoon (around 8-10 mins).

Squeeze any excess water out of the gelatine, then stir into the warm milk mixture to dissolve. Set aside to cool down for 5 mins. Discard the lemon peel, pour the mixture into the prepared jelly mould and put in the fridge to set overnight.

When ready to serve, bring a kettle of water to the boil and pour into a large heatproof bowl. Dip the mould in the water, holding it there for 1 min. Turn the blancmange out onto a serving plate, and top with a handful of fresh berries, if you like.
