This recipe for blueberry banana bread is a moist loaf of the classic sweet bread that's chock full of juicy blueberries. It's the perfect snack or dessert option and can be frozen for later use!

Blueberry Banana Bread

all purpose flour (+ 1 tablespoon to coat the blueberries)

Preheat oven to 350 degrees F.

In a medium bowl, combine the 2cups of flour, baking soda, and salt.

Place granulated sugar and butter in a large bowl, beat with a mixer at medium speed until mixture is fluffy and well blended (about 1 minute).

Add mashed banana, eggs, yogurt and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist.&nbsp;

Place the blueberries in a bowl with 1 tablespoon of flour and toss to coat.

Gently fold blueberries into the batter. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Press additional blueberries into the top of the batter for decoration.

Bake for 60-70 minutes or until a wooden pick inserted in center comes out clean. Cool the bread 10 minutes in pan on a wire rack; remove the bread from pan.

Cool completely on wire rack.

This blueberry banana combination goes so well together and makes a super moist bread. Using lots of very ripe sweet bananas allows you to cut back on the fat without sacrificing the flavor and texture.

Preheat oven to 350°F. Lightly spray a 8 x 4 loaf pan with baking spray.

In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture and blend at low speed until combined, do not over mix.

Fold in the blueberries and pour batter into the prepared loaf pans; bake in the center rack for about 50 to 55 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

Preheat oven to 325 degrees F.

Grease bread pan (if necessary).

Mash bananas with a fork.

Soften butter in a microwave.

Lightly beat eggs.

Stir eggs, bananas and butter together. Then add the brown sugar &amp; stir until creamy.

Mix in the remaining ingredients (except the blueberries). For the best results (see tips section), stir in the flour in small batches (i.e. 1/4 of total flour at a time). Stir until batter is completely mixed.

Add the blueberries to the batter. Stir in blueberries until fully mixed into batter.

Pour batter into bread pan. Smooth out the top of the batter in the bread pan.

Optional - For an even greater blueberry &quot;appearance&quot;, you can push a few extra blueberries into the top of the batter within the bread pan just before you place it in the oven.

Bake in the oven for 60-65 minutes or until golden brown.

Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.

After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

Fluffy, easy banana bread is made with flour, fresh blueberries, coconut oil, and other simple and clean ingredients to make this bread lighter without missing out on taste.

Grease a loaf pan and set aside.In a medium bowl combine flour, baking powder, baking soda, cinnamon, and salt. Mix it well and set it aside.

In another bowl beat the egg and sugar for a minute with a hand blender or whisk.

Add oil, yogurt, vanilla extract, and add the mashed banana and mix until well combined.

To the wet mixture slowly add the flour mixture and combine until everything is well incorporated.

Gently fold the blueberries into the batter. (Coat the blueberries with a tablespoon of flour and then add it to the batter)

Transfer the batter to the prepared loaf pan and bake them for 55-65 minutes, until the toothpick inserted in the middle comes out clean.

Once done, cool the bread on the wire rack for 10 minutes.

Slice and serve the banana bread to enjoy.
