These delicious blueberry biscuits are such a wonderful treat! Loaded with fresh fruit and finished with a sweet glaze. They are easy to make and can be baked in the oven or the air fryer. Perfect for dessert, brunch or a tasty mid-afternoon snack.

Blueberry Biscuits

flour ¼ cup for flour the board, biscuit cutter, and blueberries)

white granulated sugar

unsalted butter

shortening

buttermilk (cold)

blueberries

sugar

Tablespoon milk

vanilla extract

Add flour and sugar to a large bowl, stir to combine. Add butter and shortening and use a pastry cutter or your fingers to mix in butter and shortening. The mixture should resemble the size of small peas.

Make a space in the middle of the bowl and pour in buttermilk. Use a wooden spoon to mix the flour and buttermilk mixture until it’s combined.

In a separate bowl, add blueberries and 1 ½ tsp of flour. Toss the blueberries in the flour. Add the floured blueberries to the flour mixture and gently fold them in.

Flour a clean countertop and pour the dough onto it. Flour your hands and gently knead the dough one or two times until it’s smooth. Pat the dough into a square that’s about ¾ of an inch thick.

Use a floured 2-inch biscuit cutter to cut out biscuits. You should get about 8-9 biscuits.

Optional step: Place your biscuits in the refrigerator for 10 minutes to ensure they are cold before baking.

Air Fryer: Place in air fryer basket and bake on 400 degrees Fahrenheit for 10-12 minutes.

Oven: Preheat oven to 450 degrees Fahrenheit. Once biscuits are formed, place on a baking sheet lined with parchment paper. Bake for 14-15 minutes, until tops are golden

While biscuits, prepare the glaze by whisking powdered sugar, milk, and vanilla extract in a bowl. Set aside.

Once biscuits are done baking, allow biscuits to cool on a cooling rack for about 5 minutes. Use a fork and sprinkle glaze on top. Serve and enjoy.

Mix flour, baking powder and sugar together with a whisk. Cut in butter in pieces.  Beat egg and milk together in a separate bowl.

Add to dry ingredients and mix with a spoon.  Fold in blueberries.  Turn out onto a floured surface and pat to about 1/2 inch thick with your hands

Cut out with biscuit cutter.   Place on a sprayed baking sheet with biscuits touching.  Bake in preheated 425 degree oven for 15 to 20 minutes until biscuits are brown on top.  This makes about 12 biscuits.

In a bowl whisk together the milk and sugar until you get the consistency you want to drizzle over the biscuits.

Biscuits for dessert? You betcha. These are great with that morning cup of coffee or for a quick and easy dessert any time of the day. They might even go well after a meal of fried chicken. Smile.

Blueberry Biscuits Recipe

Blueberries,

Self-Rising Flour, sifted

Tablespoons Lard

Tablespoon Granulated Sugar

Buttermilk

Confectioner’s Sugar

Vanilla Flavoring

Tablespoon Milk, maybe a few drops more

Rinse fresh berries under cold running water. Set aside to drain.

Cut the lard into the flour until it’s about pea sized pieces.

Make a well in the center of the flour. Add the buttermilk.

Stir with your hand, combining the flour and milk to make the dough.

Turn the ball of dough out onto a parchment paper sheet on your countertop.

Knead the dough a couple of turns, adding more flour so it’s not sticking to your counter or fingers.

Gently press the dough out until it’s about ¼ inch thick.

Sprinkle the cup of blueberries over the top of the dough.

Lightly press the berries into the dough.

Fold the top half of the dough down over the bottom half.

Gently press the dough out until it’s about ¾ inch thick.

Place biscuits in a lightly greased skillet.

Bake at 500F degrees for 10 to 12 minutes, until lightly browned on top.

Remove from oven when done. Place on wire rack to cool.

Brush the tops with butter once you remove them from the oven.

Place confectioner’s sugar in a small mixing bowl.

Gradually add milk until icing is of desired consistency.

Drizzle icing over warm biscuits. Serve while warm.

Sweet Keto Blueberry Biscuits

almond flour

coconut flour

unflavored whey protein powder

erythritol sweetener (granular)

tsp baking powder

tsp salt

sour cream

eggs

tsp vanilla extract

sweetener

lemon juice

Preheat the oven to 375ºF.

In a large bowl, whisk together the almond flour, coconut flour, protein powder, sweetener, baking powder, and salt.

Add the sour cream, eggs, and vanilla extract and stir until well combined. Gently fold in most of the berries, saving a few for the tops of the biscuits. Let the dough rest 5 minutes.

While the dough is resting, place 1 tablespoon of the butter in a 10-inch ovenproof skillet. Place the skillet in the oven to melt the butter.

Remove the skillet from the oven. Use floured hands to form the dough into 2-inch balls and arrange in the hot skillet (you will need to re-flour your hands a few times. I used coconut flour). Press any remaining blueberries into the tops of the biscuits.

Melt the remaining 1 tablespoon of butter and drizzle over the biscuits. Place the skillet in the oven and bake 20 to 25 minutes, until the biscuits are golden brown and the tops are firm to the touch.

Remove and let cool at least 20 minutes.

Whisk together the powdered sweetener and lemon juice. Drizzle over the cooled biscuits before serving.
