This Blueberry Muffin Cake is an ALL TIME favorite of mine! It's soft, loaded with blueberries and topped with the best crunchy crumble!

Blueberry Muffin Cake

sugar

all-purpose flour

cinnamon

butter, room temperature

milk

baking powder

salt

blueberries

vanilla

Spray a 9&#8243; Springform pan with nonstick spray and set aside.

In a medium bowl combine all the Crumb ingredients with a fork or pastry cutter until they are blended. Set aside.

In a large bowl mix together all the cake ingredients except the blueberries and mix until mostly smooth. Fold in the blueberries.

Spread the cake batter into the prepared pan and top evenly with the crumb topping.

Bake for 40-50 minutes until a toothpick inserted in the center comes out clean.

Allow the cake to cool for 10 minutes in the pan. Loosen the edges of the cake from the pan with a butter knife and then remove the sides of the pan.

For the glaze mix together all the ingredients together until smooth and then drizzle on top of the cake.

I made this Sour Cream Blueberry Bundt Cake over the weekend and couldn't wait to share the recipe! It's CRAZY moist, soft and loaded with fresh blueberries!

Sour Cream Blueberry Bundt Cake

eggs

sour cream

flour

blueberries (fresh or frozen and thawed)

butter, melted

In the bowl of your stand mixer fitted with the paddle attachment, mix the butter and sugar together on medium speed for 2 minutes, until light and fluffy. Add in eggs, vanilla, sour cream, salt, and baking powder, and mix for an additional minute until smooth, scraping the sides of the bowl as necessary.

Turn mixer to low and mix until the flour until just combined.

Coat a 9-10 inch bundt pan with baking spray. Spread the cake batter in the pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 15 minutes and then invert the pan onto a wire rack to cool completely.

In a medium bowl whisk together the butter, powdered sugar, vanilla, and 1 tablespoon of milk. Add an additional tablespoon of milk if you would like a thinner icing.

Drizzle the icing on the cake when mostly cooled.

Preheat oven to 325F. Grease a 13 x 9 inch baking pan with baking spray.

In a large bowl combine flour, baking soda, and salt in a large bowl. Mix well.

Using a hand mixer or stand mixer, in a medium bowl, beat sugar and butter for about 3 minutes.

Add egg and egg whites one at a time and beat until combined. Add buttermilk, vanilla and applesauce until incorporated.

Add wet ingredients to the flour mixture and stir until just blended. Gently fold in blueberries.

Place the batter into the prepared cake pan; bake cake until a toothpick comes out clean, about 30-32 minutes.

Serve room temperature.

Light Blueberry Buttermilk Cake

Blueberry icebox cake is a light a refreshing summer dessert. Angel food cake is layered with sweetened cream cheese, whipped cream and blueberries.

Blueberry Icebox Cake

(8 ounce) package cream cheese, softened

whipping cream

(8-inch) prepared angelfood cake

In a large chilled mixing bowl, beat the cream cheese on medium-high speed for 2-3 minutes until cream cheese is smooth.

Slowly add the heavy whipping cream and continue beating until the cream cheese resembles a liquid. Then increase the speed to medium-high until soft peaks form.

Add the powdered sugar. Whip for about 1 more minute until stiff peaks form.

Carefully cut the angel food cake into three layers. Separate each layer.

Spread 1/3 the whipped topping over the top of the bottom layer. Spoon some of the blueberry pie mixture over the whipped topping.

Carefully place the second layer over the first. Repeat layering with the cream cheese and blueberry pie filling.

Place the top layer of the cake over the filling. Finish with a layer of whipped topping and blueberry pie filling.

Cover and refrigerate for four hours.

Easy Blueberry Bars are a moist delicious dessert.&nbsp; These cake bars are made with either fresh or frozen blueberries.&nbsp; A fast and easy recipe makes them perfect for breakfast, snack or dessert.

Easy Blueberry Bars

cake flour

milk (either whole or 2% milk) room temperature

zest of half or whole lemon

Pre-heat oven to 350F/180C, grease and flour a 9 inch (22cm) square pan.

Sift together the flour, baking powder and salt, set aside.

In a large bowl beat together the butter and sugar until creamy, 2-3 minutes then add the vanilla and egg, beat until fluffy, approximately 2-3 minutes. Add the dry ingredients to the creamed mixture alternating with the milk. Beat until smooth, about one minute.

In a small bowl gently mix together the blueberries, sugar and zest.

Spread half the cake batter onto the prepared cake pan, top with the blueberry filling and then top with remaining batter. Bake for approximately 45-55 minutes or until done. Check with a toothpick for doneness, if dry or a few crumbs attached it&#39;s done. Let cool before cutting into squares. Before serving, dust with powdered sugar and or serve with a scoop of ice cream. Enjoy!

May grandson is allergic to eggs and dairy. I can relpace the dairy but not the eggs. He loves blueberries and I would like to make the blueberry bars for him. Any ideas, as many of your recipes uses eggs.

I would like to know about if I use fresh blueberries that I have frozen.  Is it okay to use them?  I love you and your daughters recipes.

This delicious buttery homemade blueberry cake has a tender, moist crumb from sour cream, plenty of fresh blueberries in every bite, and a light lemon glaze.

Preheat oven to 350 degrees. Spray a 10-inch bundt cake pan with non-stick baking spray.

Whisk the flour, baking powder, baking soda, and salt in a medium bowl.

Using a stand mixer with the paddle attachment or a handheld mixer, on medium speed, cream the butter and sugar. Reduce the speed to low and add the eggs one at a time, mixing for a few seconds after each one or until the yolk breaks and blend a little.

Add the vanilla extract and half the sour cream. Mix until incorporated on low, scraping down the bowl and beater when needed.

Add the flour mixture in two increments, alternating with the remaining sour cream, scraping down the bowl and beater if needed, and mixing just until combined.

Remove the bowl from the stand and fold in the blueberries. Spoon the batter into the prepared bundt pan. Use a rubber spatula to even the batter in the pan.

Bake for 55-65 minutes or until a toothpick inserted near the center comes out clean. Let the cake cool for 30 minutes on a wire cooling rack before inverting it onto a serving platter. Cool the cake thoroughly.

Mix the powdered sugar and lemon juice, starting with 1½ tablespoons lemon juice. Add another teaspoon at a time until you reach your desired consistency. Drizzle the glaze over the cake.

MmmMMM! This is so good! The blueberry is vibrant, and the cake is so moist. Wonderful.

This is what I'm talking about! I made it a sheet cake because I just don't like dealing with bundt pans. LOL. It came out great!
