Made with just 6 ingredients (and no butter or oil!), this healthy granola is lightly sweetened with plenty of giant, crisp, crunchy clusters. Blueberries add bright pops of natural sweetness, which pair perfectly with this granola’s hints of almond. It’s great for breakfasts, afternoon snacks, or any time of day! It’ll keep for at least one week (if not longer!) if stored in an airtight container at room temperature.

Healthy Blueberry Granola Granola

tbsp (15 milliliters) almond extract

(60 milliliters) pure maple syrup ((see Notes!))

(60 grams) crisp brown rice cereal

½ cups (150 grams) old-fashioned oats

(26 grams) freeze dried blueberries ((see Notes!))

Preheat the oven to 325°F, and line a rimmed baking sheet with a silicone baking mat (highly recommended!) or parchment paper.

In a large bowl, whisk together the egg whites until the egg whites are broken up and slightly bubbly. Whisk in the almond extract. Whisk in the maple syrup. Pour in the brown rice cereal and oats, and gently stir with a spatula until both cereals are evenly coated.

Spread the mixture evenly onto the prepared pan. Bake at 325°F for 20 minutes. Gently stir and move the clusters around the pan to break up the granola and prevent the bits closest to the edge from burning. Bake for an additional 10 minutes, then gently stir again. Bake for an additional 5-9 minutes (for a total of 35-39 minutes), or until the granola is crunchy. Let the granola cool for 5 minutes before breaking apart any extra large clusters. Cool the granola completely to room temperature on the pan before sprinkling the freeze dried blueberries on top and transferring to an airtight container.

Blueberry Granola

oats

almonds

Preheat oven to 250° F.

Combine the oats and almonds in a medium mixing bowl.

In a separate small bowl, combine the melted butter, brown sugar, honey, and cinnamon and mix well. Drizzle over the oats mixture and mix until coated.

Spread the mixture evenly on a 10x15 inch rimmed baking sheet.

Bake for 35-40 minutes or until light brown. Stir in the coconut and bake 45 minutes longer or until golden brown, stirring every 15 minutes.

Remove from the oven and stir in the dried blueberries. Let stand until cool.

Store in an airtight container at room temperature.

Easy Blueberry Granola

gluten-free rolled oats*

ground flax (I prefer golden flax)

salt

lemon

coconut oil, melted

maple syrup

vanilla extract

almond extract

Preheat &amp; Prep

. Start by preheating the oven to 300 degrees F. Line a baking sheet with parchment paper.

Combine Dry Ingredients

In a large bowl, combine gluten-free oats, almonds, ground flax, and salt. (Do NOT add dried blueberries yet!)

Add Wet Ingredients

. Add lemon zest and pour coconut oil, maple syrup, vanilla, and almond extract over the dry ingredients. Stir with a spatula to combine well until everything is evenly coated and blended.

Pack Down On Baking Sheet

. Transfer the granola mixture onto the prepared baking sheet and pack down tightly into an even layer with the back of a spatula. (You want the mixture as tightly packed as you can&#8211;this will make for bigger granola clusters later!)

Bake Granola 40-45 minutes,

but do NOT stir during the bake time. (Again, this helps with big clusters!)

Cool Completely

. When the granola is golden brown, remove the pan from the oven and let the granola cool COMPLETELY (about 1 hour) before touching it. Sprinkle with dried blueberries, then break granola into clusters when it&#8217;s cool.

Serve &amp; Store

. Enjoy granola right away with milk, yogurt, smoothies, or chia bowls, or store leftover granola in an airtight container at room temperature up to 3 weeks. (Or, freeze up to 2 months)
