Blueberry Oat Pancakes with Greek Yogurt

oats (180 grams)

tsp baking powder

greek yogurt (250 milliliters)

milk (125 milliliters)

maple syrup

blueberries (300 grams)

Rapeseed oil

Place the oats and baking powder into a blender and blend until they turn into a light flour, then empty into a mixing bowl, making a well in the centre

In a jug whisk together the yogurt, milk, egg and maple syrup until fully combined

Slowly pour the wet mixture into the flour until it forms into a smooth batter, then fold in the blueberries

Drizzle about 1/2 a teaspoon of rapeseed oil into a frying pan and heat over a medium heat

Use an ice cream scoop to divide the batter into the pan

Leave until the mixture starts to bubble up, then flip over and cook the other side until both are golden

Serve warm or cold

Passion Fruit Yogurt and Oat Pancakes

Add oat flour and baking powder into a large bowl.

In a separate bowl, mix the milk, greek yogurt, egg and melted butter.

Make a well in the flour and slowly whisk in the liquid mixture until completely combined.

Heat a large frying pan over a medium heat. For each batch of pancakes, use about 1 teaspoon rapeseed oil.

Spoon 2–3 tablespoons of batter into the pan. Cook until you see bubbles forming (about 1–2 minutes). Flip over and cook the other side.

Serve pancakes with a dollop of greek yogurt and half of a passion fruit per person.

A healthy breakfast muffin option for baby led weaning. Soft eggs and finely dices tomatoes, bell pepper, and spinach are easy for baby to chew even without teeth.

Baby Led Weaning Egg Muffins

Pre-heat oven to 180ºC.

Whisk together the eggs and milk until they are light and fluffy.

Use the butter to lightly coat a muffin tin then, divide the mixture equally into a muffin tin. They should all be roughly half filled.

Finely chop the spinach and pepper and quarter the cherry tomatoes. Place about a tablespoon of spinach leaves into each muffin, top with a little pepper and add half of a tomato to each one.

Add a little cheese to each muffin then a sprinkle of pepper. Finally use a spoon to press the vegetables down so they are covered in egg.

Bake in the oven for 25 minutes until golden.

Cool before serving.
