How to Boil Chicken

chicken (about 3-4 lbs)

onions

carrots

garlic (smashed)

lemon

lemon (for stuffing the chicken)

celery

thyme

rosemary

oregano

parsley

bay leaves

peppercorns

Cut the onions into quarters, the carrots, and the celery into large chunks.

Place one of the onions, 2 cloves garlic, and half a lemon into the cavity of the chicken.

Place chicken into a large pot or dutch oven and add the rest of vegetables, fresh herbs, bay leaves, peppercorns, and salt. Add enough water to cover the chicken.

Cover pot and bring to a boil over high heat. Once boiling, reduce the heat down to low-medium and simmer partially covered for 1 1/2 – 2 hours.

Remove chicken and allow to cool before removing the meat from the bones.

Strain and reserve the broth for later use.

Use chicken meat in sandwiches, salads, wraps or serve as is with a healthy side dish.

Poached chicken is incredible if you are looking for a low calorie, pure protein source. A great option for salads and sandwiches.

Simple Poached Chicken

x 6 oz chicken breast

Learn how long to boil chicken, whether you&#039;ve got a whole chicken, breasts, thighs, wings or legs. Boiling one of the easiest cooking methods, and you can start with fresh or frozen chicken.

How Long to Boil Chicken

chicken (whole chicken, chicken breasts, legs, wings

water (to cover)

onion

carrot (or 2 medium, roughly chopped)

celery (roughly chopped)

rosemary (or thyme, sage)

black peppercorns

parsley stems

Place the chicken in a large pot (see note) along with the optional vegetables and seasonings. Add the salt and enough water or broth to cover.

Place the pot over high heat and bring to a boil. Remove the grey residues that float to the surface using a skimmer/spoon and discard.

Reduce heat to low and simmer until cooked: 15-20 minutes for chicken breasts, 20-30 minutes for thighs/legs/wings, and 40-60 minutes for a whole chicken depending on size. (For frozen chicken, see notes.)

Remove the chicken to a plate to cool for several minutes. Use a fork and knife to cut up the meat or two forks to shred it.

Remove chicken from packaging and place in large stock pot or Dutch oven. Cover with filtered water and put on burner on high heat.

Vegetables

If using, chop and add recommended vegetables and/or herbs to the pot. You can complete this recipe without adding any veggies or herbs, but they really amply the flavor of the meat if included.

Simmer

Salt the water and bring to a boil. Once boiling, turn down to low and simmer for 45 minutes to 1 ½ hours. Simmer until the chicken is cooked throughout and reaches an internal temperature of 165° F.

Pull meat

Remove the chicken from the pot and let cool. Pull the meat off the bones and use in any recipe requiring cooked chicken. (See below for suggestions.)

Freeze stock

Do not pour out stock! Pull out cooked vegetables and discard (or compost or give them to your backyard pig). Strain the stock and use immediately or freeze for later use.
