shallots, thinly sliced

carrot,

caraway seeds

thyme,

dijon mustard

tbsp. all-purpose flour

beer,

vegetable stock

apple cider vinegar

Kosher salt

black pepper

white beard, crusts removed, cut into ½” cubes

garlic powder

Make the Cabbage and Braising Liquid: In a large Dutch oven or heavy-bottomed pot, heat 2 tablespoons of oil until it starts to shimmer. Working in batches if necessary, add cabbage wedges in one even layer and cook, turning once, until thoroughly browned on each side, about 6 minutes. Transfer to a plate and set aside.

Wipe out the pot, melt butter over medium heat until foamy. Add mushrooms and cook until they begin to become golden brown, 6 to 7 minutes. Stir in shallots and carrots, and cook until softened, about 5 minutes more.

Add garlic, caraway seeds, and thyme, and cook until just fragrant, about 1 minute. Add Dijon and cook for about 1 minute more. Sprinkle the flour over the mixture, mix thoroughly, and cook until the smell of raw flour dissipates, about 1 to 2 minutes.

Pour in the beer, vegetable stock, and apple cider vinegar, making sure to scrape any browned bits from the bottom of the pot. Bring to a boil, then reduce the heat to a simmer, allowing the liquid to cook down until reduced by about one-third, about 8 minutes.

Season the braising liquid to taste with salt and pepper, then add the cabbage back to the pot. Cover and cook, flipping the cabbage once halfway through, for about 40 minutes.

Meanwhile, Make the Croutons: Adjust oven rack to center position, and preheat oven to 350ºF. On a baking sheet, tosscubed white bread, oil, garlic powder and salt. Transfer to the oven and bake for about 15 to 17 minutes, or until golden brown and crispy. Remove from the oven and set aside.

To serve, add cabbage to a bowl and top with braising mixture and a few croutons.

These cabbage wedges braised in a delicious tamari-sesame sauce mixture and drizzled with creamy homemade tahini dressing are seasoned with umami and savory goodness from the sauce and creamy nuttiness of the tahini is just out-of-this-world delicious!

Braised Cabbage in Tamari sauce and Tahini Dressing

green cabbage (about 2 lb)

canola oil or vegetable oil

garlic (minced)

sesame oil

San-J Tamari Soy Sauce

red pepper flakes

water

tahini

maple syrup

garlic (minced; optional)

parsley

white sesame seeds (toasted*)

Preheat the oven to 350°F.

Peel the outer layer of the cabbage off if it looks dirty. Cut the cabbage down the core and into 6-7 wedges.

Heat a large oven-safe skillet (with high sides) with the canola or vegetable oil over medium heat. Carefully place the cabbage pieces into the skillet and sear on each side for 3-5 minutes until caramelized, then turn off the heat. If your pan is on the smaller side, sear the cabbage wedges in batches and then return all the cabbage wedges to the pan once all batches are seared.

While the cabbage is cooking, make the sauce. In a medium bowl, whisk together the minced garlic, sesame oil, tamari soy sauce, salt, red pepper flakes, pepper, and water. Pour the tamari-sesame sauce mixture over the cooked cabbage pieces in the skillet. Carefully tilt the skillet and using a spoon, spoon the sauce a few times over any areas of the cabbage that didn’t get well coated.

Cover the skillet with an oven-safe lid or foil and bake for 30 minutes in the center rack of the oven. Then, carefully remove the lid/foil and bake at 425°F for 15 minutes.

Remove the pan from the oven and set it on a wire cooling rack. Carefully, spoon the remaining hot liquid from the bottom of the pan onto the cabbage wedges a few times. Let it cool for at least 10 minutes before serving.

While the cabbage cools, make the tahini dressing by whisking all the ingredients together in a medium bowl. Add more water as needed until you’ve reached a creamy drizzle consistency.

When ready to serve, spoon any remaining liquid over the cabbage a few times. Then, drizzle the tahini dressing over the cabbage and sprinkle with chopped parsley and toasted sesame seeds. Enjoy!

Variations on Braised and Roasted Cabbage Wedges
The beauty of a simple cabbage wedge recipe is really showing a simple technique that can be expanded on.

Some ideas to change up this versatile cooked cabbage wedge recipe include:

changing the broth: vegetable, chicken, beef
a splash or two of vinegar or wine: apple cider vinegar, white wine vinegar, balsamic vinegar, white wine
splash of fresh lemon or orange juice and zest
favorite fresh or dried herbs: rosemary, thyme, oregano, sage...
favorite spices: curry, coriander, paprika, chili powder, cumin, turmeric...
Add some cheese: Parmesan cheese, feta cheese, colby jack...

Tips For How To Cook Cabbage Wedges
Keep most if not all of the cabbage stem intact so that the wedges stay together. So cut the wedges with the stem in mind.
Use a cast iron pan if you have it. Cast iron holds heat well and heats evenly and can go from the stovetop to the oven.
It's hard to penetrate a raw cabbage wedge with salt so don't salt it until it's softer. I salt once after the sear lightly. I salt once during the flip lightly. The broth should have enough salt to flavor it. Salt can always be added later.

Use An Ovenproof Skillet For Braised and Roasted Cabbage Wedges
These pictures and video show using a cast iron skillet being used for braised and roasted cabbage wedges.

Use any skillet you want to cook cabbage wedges, but make sure that it can go straight from the stovetop to the oven.

See notes below for baking cabbage wedges in the oven and skipping the sear.

Easier Braised and Roasted Cabbage Wedges
Sometimes it's ok to skip some steps when there's not enough time or energy to sear and roast the cabbage wedges. I get it and I go that route sometimes too.

If energy levels are low then skip searing and roasting the cabbage wedges and bake them instead. Having said that, it does not make this braised cabbage wedge recipe faster. It just makes it easier.

Nestle cabbage wedges into a baking dish.
Bake for 1 hour in the broth covered. Turn the wedges once at 30 minutes.
Check for desired tenderness.
Serve with broth sauce and add salt to taste. Eat!

Ukrainian shredded, braised cabbage is a warm, filling side often served on its own if you add meat. It can be stuffed into fried yeast dough (Piroshki) or dumplings (Vareniki), and is a popular side dish. My mom's recipe is perfect for using up fresh cabbage and sauerkraut in abundance. It is so delicious with a slight tang, sweetness from the caramelization, and is just addictive to eat from the spoon!

Ukrainian Braised Cabbage

green cabbage

sauerkraut ((packed))

onions

tbsp white distilled vinegar

sugar

tbsp homemade ketchup

Tbsp avocado oil oil

Shred the cabbage

Keeping the core intact, cut the cabbage in half lengthwise. Shred finely into a large pot (preferably a non-stick pot). It will seem like a lot of cabbage, but the volume will reduce significantly during the cooking process.

Steam the shredded cabbage to begin the caramelization process

Place the pot over medium-high heat. Once the cabbage starts to sizzle slightly, add one cup of water. Cover the pot with the lid slightly tilted, allowing steam to escape.

Cook for 20 minutes, stirring often.

Allow the cabbage to cook for about 15 to 20 minutes, stirring every 5 minutes or so until almost all the water has evaporated. Toward the end of 15 minutes, you can increase the heat to high for a few minutes to allow the water to evaporate more quickly.

Dice the onions

In the meantime, prepare the onions by dicing them finely.

Add oil to the cooked cabbage

Once the water has almost evaporated, add about 5 tablespoons of oil to the pot of cabbage and stir thoroughly.

Add the remaining ingredients

Add the diced onions, sauerkraut, salt, ground black pepper, vinegar, sugar, and ketchup. Stir until all the ingredients are well combined.

Braise mixture for 1.5 hours

Reduce the heat to medium-low. Continue to cook the cabbage for 1 ½ hours, stirring every 10 to 15 minutes, and adding oil when necessary (about 8 tablespoons in total). The cabbage is light in color during the first stage of cooking but will darken as it continues to cook and caramelize.

Season to taste

My children love braised cabbage. I use it to make varenyky or piroshki, and serve as a side with sausages. I used my food processor to grate the cabbage finely, and dice the onions. I found it a bit salty so added more vinegar and sugar. I only needed 1/4 cup of oil and 2 tbsps each ketchup and tomato paste. My grandmother always braised her cabbage in the oven, so I made mine in my large Dutch oven, and baked for 1.5 hours at 350 degrees, stirring every half an hour.

I have finally found my favorite braised cabbage! It’s the yummiest ? my picky eaters loved it ! I did add few things like chicken , little bit of rice and couple bay leaves.
Thank you ?
