Homemade garlic bread is a tried and true versatile bread recipe that pairs with many classic - from pasta to bruschetta toasts to dips for parties. Bread Machine Garlic Bread

water (approximately 120°F)

Add the ingredients in the order listed to the bread maker pan. Select the basic/white bread setting, choose the 1.5 lb loaf size and your prefered crust color. Measure out 1 cup of milk. In a separate small bowl, measure out 3 cups flour.

Make flour paste by whisking 3 tablespoons of the flour you just measured out and half of the milk (1/2 cup) together in a medium microwave-safe bowl. Cook on HIGH in the microwave for 1 minute, whisking every 30 seconds. Cook an additional 15-30 seconds, if necessary until the mixture is as thick as pudding.

Add egg, heavy cream or egg yolk, sugar, salt, 4 tablespoons of softened butter, remaining flour, and yeast to the pan and select the dough cycle. Press &quot;Start.&quot;

Check the dough at least twice by lifting the lid to take a peek. Do this right after the machine starts to see if the paddles are correctly engaged and the dough is starting to form a ball.Recheck the consistency of the dough again 15 minutes into the DOUGH cycle.If your dough is too wet, add flour one tablespoon at a time. The dough should stick to the side, then pull away cleanly.Conversely, if the dough is too dry, add one tablespoon of liquid at a time until the dough looks just right. When the DOUGH cycle finishes, check to see if the dough has risen to double its original size. If so, remove it to a floured surface. If not, allow the dough to remain in the machine until it is double, then remove and proceed with the next step.

Dough:

Remove it from the bread pan, push down gently and divide dough in half. On a generously floured surface, roll each half into a rectangle size about 13 x 10 inches.

Spread each rectangle with approximately 2 tablespoons of softened butter or heavy cream.

Shaping the rolls:

Mix brown sugar, cinnamon, and cloves.

Distribute half of this mixture over first rectangle and half over the second. Sprinkle about 1/4 c. chopped, toasted, pecans over the brown-sugar/cinnamon layer.

Roll up dough the long way. Slice into 8 equal pieces. Place cut side down into greased 8-inch pan or glass dish.

Cover and let rise until almost double in a warm, moist place.

About 15 minutes before rolls will be ready to bake, preheat oven to 375 degrees.

Bake rolls for about 20 minutes or until golden brown.

Filling:

Ice with 2 cups confectioners sugar mixed with 1-ounce cream cheese and 2 tablespoons coffee. You may need more or less liquid depending on how thick you like your icing.

How to make sure your dough is the right consistency when using a bread machine and how to fix it.

Always Do This When Using A Bread Machine

Because ciabatta starts life as a very slack and sticky dough, the bread machine is a useful tool to mix and knead the dough. Make the biga by adding the first three ingredients listed below to your bread machine at least 12 hours ahead of time. This is a sort of "starter" that will contribute flavor and a hole-y texture to your bread.

Bread Machine Ciabatta Recipe

unbleached all-purpose flour (120 grams)

milk (57 gr)

salt (9 gr)

unbleached all-purpose flour (240 grams)

bread machine yeast (1.5 gr)

Combine yeast, water, and flour in the bread machine pan. (Use another container if you don't want to tie up your bread machine that long.) Select the dough cycle and turn on for about 5 minutes to mix the ingredients. Use a small spatula to scrape excess flour from the corners into the wet flour mixture. Turn off or unplug the machine and let sit for 12-24 hours.

If not using the biga within 24 hours, place the foamy mixture into the refrigerator. The flavor will only get better--up to 3-4 days. Allow the biga to come to room temperature before proceeding to the next step.

Mixing the Biga

In the order listed, add the water, milk, salt, flour, and yeast to the biga in your bread machine.

Select the DOUGH cycle and push start. After 15-20 minutes, open the lid and check the dough. The dough should start to look shiny but will still be sticky. The dough will wind around the paddle(s). (See video.) If the dough is not sticking to the sides at all, add water 1 tablespoon at a time. If the dough looks more like a thick pancake batter, add extra flour 1 tablespoon at a time. If you have weighed your flour correctly, hopefully, no adjustments will be necessary.

When kneading stops, remove the pan from the machine. Do not let the DOUGH cycle finish as you normally would.

Lightly spray a 3-quart square or rectangular container. Use a brush or your hand to coat the inside of the container..

Use a greased spatula to remove the sticky dough from the bread machine pan into a well-greased plastic container. Oil all surfaces of the dough by flipping the dough over with the spatula.

Cover and allow the dough to rise at room temperature. Don't try to rush it. Let the dough rise until double. This make take an hour or longer if the room is cold.

Using a greased spatula, slip it underneath the dough in the corners and lift each corner and each side up and to the middle. This is better seen on the video. Be careful not to squash any bubbles.  Cover and let sit for 30 minutes.

Repeat step 7. Again, let the dough rest for 30 minutes. This helps to ensure a holey texture

Mixing the Ciabatta dough

Empty dough by turning the container upside down onto a very liberally-floured (semolina flour and bread flour work well together if you have it) surface. (I use a silicone baking sheet since it's easy to throw into the dishwasher). The dough should be in the same general square or rectangular shape of the container it proofed in. DO NOT PUNCH THE DOUGH DOWN like you would normal bread dough.

Spray or coat a bench scraper (or large knife) with olive oil. Use it to divide the rectangle of dough in half longways.

Catch the long inner edges of each loaf with the oiled bench scraper and pull it up over the top about halfway and toward the outer edge. This leaves more room between each loaf. (This is quite challenging in the beginning, so don't expect perfection the first few times.)

Now catch the outer edge of each loaf (the one that looks like it's about to fall off the tray at this point) with the bench scraper. Again, pull it up over the loaf about halfway in the direction of the middle of the tray. (See the video.)

Straighten and clean up the shape with a bench knife. Use your well-greased or floured fingers (as if you were playing the piano) to dimple the surface of the dough.

Shaping the Ciabatta Dough

If you are using a silicone mat, transfer or pull the mat with the shaped loaves onto a rimless baking sheet. (See video)

If you are not using a silicone mat, use liberally-floured hands to carefully transfer the two cylinders of dough to a prepared cookie sheet. (To prepare the baking sheet, cover the sheet with parchment paper. Or grease and sprinkle with flour and/or semolina or cornmeal.)

Cover the loaves so the dough won't dry out and form a crust. You can also spray a large piece of plastic wrap with oil and cover the loaves with it.

Preheat oven to 450˚F.

Let loaves rest for about 30-45 minutes or until they get puffy.

Spritz loaves with water using a spray bottle. Bake at 450˚ F for 18-20 minutes. Spray loaves one or two more times during the first 5 minutes of baking. Do it quickly so your oven won't lose too much heat.

Loaves are done when the crust is golden brown and the internal temperature reaches 210˚F.

Allow loaves to cool on a cooling rack for at least an hour before slicing.

Cups Bread Flour (- 270 grams)

Cup Old Fashioned Oatmeal ((oat flakes) - 68 grams)

Cup Light Brown Sugar

Teaspoon Bread Machine Yeast (- 3 grams)

Cups Milk ((lukewarm) - 345 milliliters)

Cups Bread Flour (- 360 grams)

Bread machine settings – 1.5 or 2 pound loaf, light color and “basic” bread setting

Unplug the bread machine &amp; then remove the bread pan.

Add all ingredients starting with the milk into the bread machine “bucket” (loaf pan). Make sure the yeast is last and does not touch the milk or salt. Some people like to make a small &quot;divot&quot; on top of the flour in order to hold the yeast in one spot before the machine starts. 

Place the bread pan (with ingredients) back into the bread machine.

Plug in bread machine. Enter the correct settings (for either 1.5 lb or 2 lb loaf version) and press the &quot;start&quot; button.

Optional - After the bread machine has finished kneading and before the baking cycle commences, sprinkle some old fashioned oatmeal flakes on top of the bread dough.

In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread loaf (and 2:53 hours for a 1.5 lb bread loaf) at the light color &amp; basic bread settings. However, some machines can differ and you don’t want to be away from home when the bread machine “finished” alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.

Baking in Oven: Once the dough cycle is complete, remove from the dough from the bread pan. Punch down a few times and form into your desired shape. Set on a parchment-lined baking sheet and cover with a towel. Let rise in a warm place until doubled in size, about 45 minutes. Gently brush the top and sides with an egg wash and top with the remaining cheese. Bake at 350°F for 30-35 minutes, until it reaches an internal temperature of 190°F. When the dough cycle finishes, the dough should be doubled in size. If not, leave the dough in the bread machine a few more minutes until you can punch two fingers into the dough and it fills in gradually. If it doesn&#39;t fill in, it has risen too much. If the dough bounces right back and the dough fills in immediately, then it needs to proof (rise) a little bit longer. (This may happen if your kitchen is cold.)

Pull dough out of the machine and onto a floured surface. Lightly knead the dough to remove any large bubbles, and form it into one large ball. Divide in half, making 2 balls. Divide each of those balls into 8 equally-sized lumps.

Make a ball from each piece of dough by pulling the dough toward the bottom while turning the dough (see video) or use whatever method works best for you.

Arrange balls into 2 well-greased 8 or 9-inch round or square pans (non-stick is better) and cover with a tea towel or a cheap shower cap.  Place in a warm spot until almost doubled. (I put mine in the microwave where I have already boiled a cup of water for 5 minutes to make it warm and steamy.)

Heat your conventional oven to 350 °F (180˚C).

Bake in the oven until golden brown, usually about 12-15 minutes. Rotate to get even browning. The internal temperature should reach 190˚F (88˚C).

Within 5-10 minutes, dump baked rolls out of the pan and let cool on a rack or paper plate so they won’t get soggy from the steam they produce. Brush with melted butter if desired.
