This crispy breaded cauliflower is salty, tangy, sweet, and spicy all at once! It's 100% plant based and 100% delicious.

Crispy Breaded Cauliflower

cauliflower (about 2 pounds whole)

panko breadcrumbs (use gluten free panko as necessary)

cornmeal

cumin

smoked paprika

garlic powder

turmeric

salt

refined coconut oil

peanut butter

maple syrup

soy sauce (or tamari or coconut aminos)

hot sauce

Chop the cauliflower into large florets. Place them in a large bowl.

In a small bowl, mix together the panko, cornmeal, cumin, smoked paprika, garlic powder, turmeric, and kosher salt.

In a small saucepan over medium heat, whisk together the coconut oil, peanut butter, maple syrup, soy sauce, and hot sauce until fully combined and slightly darkened, 1 to 2 minutes. Pour the sauce onto the cauliflower and stir several times until the cauliflower is well coated.

Pour about 1/3 of the dry mixture into the bowl with the cauliflower and mix. Repeat twice to stir in the remaining dry mixture to coat all of the cauliflower. Then remove the breaded cauliflower from the bowl with your hands and place it onto a parchment lined baking sheet. About 1/2 of the crumbs will remain in the bowl; you can discard these.

Bake the cauliflower for 30 minutes total, flipping the cauliflower with a spatula at the 15 minute mark. Serve immediately. If serving as an appetizer, you could add a drizzle of Yum Yum sauce or another sauce. Or, kids love them with ketchup! (If you have leftovers, you can store them refrigerated and then reheat them in a 350F oven on a parchment lined baking sheet for about 10 minutes, flipping once.)

Prep:

Prep: Preheat oven to 425°F. Line a baking sheet with parchment paper.

Prep the dredges:

Prep the dredges: In a shallow plate beat the eggs and add paprika, salt, pepper and half of the oregano. Whisk so that it&#39;s well combined. In another shallow plate combine the breadcrumbs together with the rest of the oregano and additional salt and pepper if required.

Dredge:

Dredge: Dip each cauliflower floret in the egg mixture, making sure it&#39;s fully coated, then in the breadcrumb mixture and place on the prepared baking sheet. Continue until finished with all the florets.

Bake:

Bake: for 30-40 minutes or until golden brown.

Serve:

Serve: Serve with ranch dressing or your favorite dipping sauce.

Air Fryer Cauliflower Wings Recipe

all purpose flour (or use gluten free flour)

Start by making the batter for the cauliflower. In a large mixing bowl, add flour, cornstarch, salt, garlic powder, olive oil and just enough milk to make a thick, yet runny batter. Batter should be thinner than pancake batter, and thick enough to coat the back of a spoon.

Add in the cauliflower pieces and mix well, to coat the cauliflower in the batter.

Then transfer each cauliflower to a plate with panko breadcrumbs. Dredge the pieces to coat evenly in the breadcrumbs.

Optional step - After dredging, place them on a rack to let the excess batter drip off.

Preheat your air fryer at 390 F for 5 minutes.

Then take out the air fryer basket and place the breaded cauliflower in a single layer. Do not crowd the basket, else the cauliflower will not crisp up properly.

Air fry at 390 F for 20 minutes. At the 10 minute mark, take out the basket and flip the cauliflower so that they air fry evenly. Continue to air fry.

Optional step - At the 15-minute mark, I like to take out the basket and brush the cauliflower pieces with some olive oil to make them brown evenly.

Once the air frying cycle is over, transfer the air-fried cauliflower bites into a large mixing bowl.

To make the crispy air fried cauliflower

Mix together the hot sauce, melted butter, honey in a bowl and pour this mixture over the breaded cauliflower. Toss the bowl, coating the cauliflower nicely with the sauce.

Your air fryer buffalo cauliflower wings are now ready. Serve them with a side of homemade ranch dressing.

So I made these but the coating did not stick onto the cauliflower..how the heck do you guys get it to stay on. I did pat it on with my hands and it would not stick. The crumbs just clumped up.
So I ended just putting little piles of crumb on each cauliflower floret. It tasted good but I know this was not what the recipe intended. 
Any ideas on getting the crumb to stay on.And yes, I did remember put it in egg first.

OMG! These were delicious! Dipped them in Sweet Baby Ray's Creamy Buffalo sauce! My husband couldn't stop eating them!!
