shredded cheddar (reserve a few pinches to sprinkle on top of the breakfast cups)

In a mixing bowl whisk the eggs with salt and pepper.

Add kale and cheddar to the eggs.

Use a spoon and mix together the ingredients.

Spray a muffin tin with nonstick cooking spray.

Spoon mixture equally into 6 muffin cavities.

Sprinkle extra shredded cheese on top of the cups if desired.

Bake for 15 minutes at 400 F.

Baked Kale and Cheddar Breakfast Cups

Breakfast Cups are crispy tater tots that are smashed and topped with cheese, bacon, and filled with an egg mixture, all baked in a muffin tin.

Breakfast Cups

tater tots, (seasoned)

eggs, (room temperature)

yellow onion, (finely diced)

black pepper

cheddar cheese, (shredded, divided)

parsley, (minced (for garnish))

Preheat oven. Spray muffin tin with cooking spray.

Preheat oven to 350°F and lightly spray a muffin tin with nonstick cooking spray.

Place tater tots in each muffin cup.

Bake.

Bake 15-20 (or until slightly crispy); they will continue to cook in a later step.

Remove from the oven; press and form tater tots to muffin tin.

Remove the tater tots from the oven and use a glass or the round edge of a spoon to press and form the tater tots into the base and up the sides of the muffin cups.

Top with shredded cheese and bacon.

Top each with ½-1 tablespoon of shredded cheese.

Top with about 1 tablespoon crumbled bacon.

Whisk together egg mixture.

In a medium bowl combine eggs, onion, salt, and pepper.  Whisk to combine.

Pour egg mixture into each cup.

Evenly distribute the egg mixture into each muffin cup, filling each about ⅔ full.

Bake 15-20 minutes, or until cooked through and no longer jiggly in the center.

Puff Pastry Breakfast Cups

Preheat oven to 400° and grease a muffin tin. Set aside. Thaw puff pastry sheet using instructions on box.

Cook the strips of bacon in a pan over medium heat until fully cooked and crispy. Remove from pan to a paper towel-lined plate. Once cool, crumble into bits.

Once the puff pastry sheet is thawed, unfold and roll it a few times with a rolling pin to flatten and spread it out just a bit. If you don&#039;t have a rolling pin, just skip that step. Cut the pastry puff dough into 9 equal squares (a pizza cutter makes this super easy). Place each puff pastry square into the muffin tin, gently pressing the dough into the bottom and stretching up the sides. Gently poke a few holes in the bottom with a fork, being careful not to go all the way through the dough.

Fill the cups with equal amounts of cheese and bacon.

In a large measuring cup or bowl, whisk together the eggs, milk, salt, and pepper. Pour this overtop the bacon and cheese inside the puff pastry. Fill them about halfway up at first and then go back around to top them off with whatever egg you have left.

Bake in the oven for 15-20 minutes, until golden brown and eggs no longer jiggle. Remove from the oven and allow the cups to cool for 5-10 minutes before removing. The easiest way to get them out of the pan is to gently run a butter knife around the outside of the egg cup and they should loosen up and pop out. Top with fresh parsley if you&#039;d like and enjoy!
