Don't Skip Breakfast! Try this easy breakfast scramble recipe for a wholesome meal. One skillet egg scramble with Italian sausage, tomatoes, kale, and spinach.

Breakfast Scramble with Italian Sausage

eggs

milk

salt

black pepper

olive oil

sausages

cherry tomatoes (halved)

baby spinach leaves (firmly packed)

baby kale leaves (firmly packed)

basil leaves (fresh, chopped)

parmesan cheese (grated, more for garnish)

In a bowl, whisk together the eggs, milk, salt, and pepper. Continue whisking until the eggs are nice and frothy. Set aside.

In a large skillet over medium heat, warm the olive oil.

Add the sausages and brown 1 minute on each side.

Add the tomato and cook, stirring, about 1 minute.

Reduce the heat to medium-low, add the egg mixture and cook without stirring, until the eggs just begin to set, about 1 minute.

Using a heatproof rubber spatula, gently push the eggs around letting any uncooked egg run onto the bottom of the pan.

When the eggs are about half-cooked, after 1 to 2 minutes more, add the spinach, kale, half of the chopped basil, and cheese.

Stir gently to combine and continue cooking until the eggs are completely set but are still moist, about 1 minute more.

Serve the scramble in 4 portions, top with basil and more cheese if desired.

Beef Fajita Breakfast Scramble

1½ lb skirt steak or flank steak

green bell pepper, red

onion,

tbsp vegetable oil, (divided)

sharp cheddar cheese, (shredded)

tsp cumin

tsp garlic salt

tsp chili powder

½ tsp black pepper

½ tsp red crushed peppers

lime juice

Add cumin, garlic salt, chili powder, pepper and red crushed peppers into a large sealable baggie. Seal, shake to combine and then add lime juice. Shake to mix.

Place skirt steak into baggie, seal, shake and then place into the fridge for 4 hours or overnight.

For The Marinade

Heat cast iron skillet, or large frying pan, over high heat. Add two tablespoons of oil to pan and then add peppers and onions.

Sauté until tender but still crisp. Remove from skillet and place in large bowl and set aside.

Add remaining two tablespoons of oil into pan and heat over medium high heat.

Remove steak from baggie and place in hot skillet.

Cook 5-6 minutes on each side for medium. Remove from skillet and place on cutting board.

Remove from steak skillet and place on cutting board. Cut against the grain and then cut into bite size pieces.

Place steak into large bowl with peppers, stir and set aside.

Add whisked eggs to skillet. Cook until desired doneness.

Next, add steak and peppers to scrambled eggs, mix to combine.

Top with cheese, let melt and then enjoy!

Cooking The Fajitas

This one skillet Loaded Breakfast Scramble has heaps of spinach, eggs and sausage to give you the best flavors and nutrients the morning has to offer!  Sun dried tomatoes and paprika sets this recipe aside from the rest!

Loaded Breakfast Scramble

Aidells Chicken and Apple sausages (sliced to 1/2 inch pieces)

spinach (rough chopped)

bell pepper (chopped

TBS sun dried tomatoes (chopped)

tsp salt

cracked pepper

tsp red pepper flakes ((optional))

Heat a cast iron pan over medium heat.  Toss in just a pinch of oil if it needs it.  Add the sausage to the pan and sear on each side for 3-5 minutes.

In a medium sized bowl, crack the eggs and discard the shells.  Add the milk, salt, pepper, red pepper flakes, sun dried tomatoes, spinach and bell pepper.  Whisk well to combine.

Remove the sausage from the pan and place to the side.  Pour the egg mixture into the pan, and begin to break up to egg with a spatula.  Continue cooking and pushing the egg around the pan until there is there is no more runny and under cooked egg left.

Add the sausage back to the pan, top with arugula, and serve!  Mangia!
