Oh my my! A mascarpone/ricotta filled brioche bread soaked in a ricotta custard. Garnished with mini chocolate chips! 

Cannoli French Toast Bake

brioche bread

eggs

sugar

milk

ricotta cheese

tsp vanilla extract

tsp kosher salt

mini chocolate chips

mascarpone cheese

whole milk ricotta cheese

In a large mixing bowl Whisk together milk, eggs, ricotta, sugar, salt and vanilla.

In another bowl add all the ingredients for the cannoli. Mix until smooth and creamy!

Take one slice of bread and spread 2 tablespoons of the cannoli mixture. Place another slice or brioche on top. Cut into four. Arrange facing up in a buttered baking dish.

Pour custard over the bread. Cover and refrigerate overnight! This will help the custard really soak into the bread.

Remove cover from the baking dish. Top with mini chocolate chips. Bake for 30-35 minutes or until it is golden brown. Dust with powdered sugar!

Recipe:

1 loaf sliced brioche bread
4 eggs
1/4 cup granulated sugar
1 cup whole milk
1/4 cup ricotta cheese
1 tsp vanilla extract
1/2 tsp kosher salt
1 cup mini chocolate chips

8 oz mascarpone cheese
1.5 cups whole milk ricotta cheese
1 cup powdered sugar
1 tsp vanilla extract

Creamy bread pudding made with leftover brioche bread.

Brioche bread pudding

(1lb/450 grams) brioche loaf

(1080 grams) milk

(100 grams) sugar

cinnamon

vanilla extract

fine sea salt

butter (for greasing the form)

Preheat the oven to 350°F / 180°C / Gas Mark 4 (if you have a convection/fan oven, reduce the temperature by about 20° or follow the manufacturer&#039;s instructions).

Grease a 9x13-inch (23x33cm) oval baking dish with butter.

Cut the brioche into roughly 1-inch (3cm) cubes and add to the baking dish.

In a large bowl, whisk (or mix with an electric mixer) all the other ingredients: milk, sugar, cinnamon, vanilla, salt.

Pour the custard into the baking dish. Move the bread cubes to ensure they are coated with the custard (milk-egg mixture) on all sides, press them in slightly. The mixture should cover almost all brioche cubes but the tips of the cubes should be above the milk mixture (they will crisp up nicely).

Bake the pudding for about 40 minutes or until the pudding is golden and crispy on top and custard is set and not jiggly (you can measure the temperature of the bake to make sure it&#039;s baked through, it should be 160°F/71°C in the center of the pudding).

Vanilla Cream Sauce (, for serving)

Heat oven to 350 degrees F. In a large bowl add half and half, butter, vanilla, sugar and salt. Microwave for about 1 minute, just until butter has melted.

Add the beaten eggs and cinnamon to the milk mixture and whisk well to combine.

Add the bread to the bowl and stir to coat. Pour the mixture into a greased baking dish large enough to fit the mixture (any shallow casserole dish; I used a 8x11’’ pan).
