broccoli and pasta

A simple side dish which combines orzo, a rice shaped pasta with fresh broccoli, garlic and oil. A perfect side for fish or chicken or enjoy it as a main meal.

Broccoli and Orzo

orzo pasta

broccoli

garlic (smashed and finely chopped)

tsp extra virgin olive oil

salt and fresh pepper

Trim stems off broccoli, cut into small pieces and season with salt.

Steam covered with a little water until cooked, careful not to overcook. When broccoli is cooked, remove from pan and chop into smaller pieces.

Meanwhile, cook pasta in medium pot of salted water as directed for al dente.

Reserve about 1/2 cup liquid before draining.

Drain orzo in a colander and add the oil to the pot.

Saute garlic a few minutes until golden, add broccoli, season with salt and mix well.

Add orzo and stir to combine all. Add a little reserved liquid as needed so pasta isn't dry.

Serve with freshly grated cheese if desired (optional).

Creamy Broccoli Pasta

oz pasta ((e.g. tagliatelle

olive oil

broccoli ((frozen is fine too))

onion

garlic

vegetable broth

oz cream cheese

tsp honey

lemon juice

salt and pepper

tsp chili flakes

black olives ((pitted))

feta cheese ((crumbled))

sunflower seeds ((pan fried))

Bring water to a boil and cook the pasta according to the package instructions.

If you're using frozen broccoli, throw it in a pan right away with 3 tbsp of olive oil and cover with a lid - the broccoli thaws more quickly.

If using fresh, wash and cut the fresh broccoli into small florets. Next, peel and dice the onion; same with the cloves of garlic.

Heat up the olive oil in a pan, then add the broccoli, onion and garlic. On medium heat let everything simmer for 5 minutes.

Now it’s time to add the cream cheese.

Now slowly pour in the vegetable broth. NOTE: If you think the mixture is getting watery, stop pouring!

Once ready, drain the pasta in a sieve. Now add them to the broccoli cream mix. Cook on medium heat for another 5 minutes

Add salt, pepper and a few chili flakes to taste. To give it another kick, give a few splashes of lemon juice and a tsp of honey to the mix.

Penne Pasta with broccoli, tomato sauce, garlic, onion and oil cooked in one pan and topped with cheese for an easy healthy pasta recipe.

Broccoli and Penne Pasta Recipe

onion (finely chopped)

olive oil (extra virgin)

tomato sauce (low sodium)

stock

tbsp balsamic vinegar

tbsp rosemary (fresh

tsp thyme (dried)

tsp salt

tsp black pepper (ground)

hot pepper flakes

penne pasta (uncooked)

broccoli florets

3 oz Mozzarella cheese, shredded

parsley/basil (finely chopped)

Preheat large deep skillet on medium heat and add olive oil, onion and garlic. Saute until translucent, stirring occasionally.

Add tomato sauce, stock, balsamic vinegar, rosemary, thyme, salt, pepper and hot pepper flakes. Stir and bring to a boil.

Add pasta and stir again.

Bring to a boil, cover, reduce heat to low and cook for 15 minutes, stirring every 5 minutes.

Add broccoli, cover and cook for 3 minutes for crispy broccoli and 5 - 6 minutes for softer vegetables.

Turn off heat, add cheese and stir until melted.

Garnish with parsley or basil and serve hot.
