Thin Breakfast Crepes

(150 g) unbleached all-purpose flour

tbsp sugar

tsp (2.5 ml) vanilla extract

In a bowl, combine the flour, sugar and salt. Whisk in the eggs, ½ cup (125 ml) of milk and the vanilla until smooth. Gradually add the remaining milk, stirring constantly. Whisk in the melted butter.

Heat a 9-inch (23 cm) non-stick skillet over medium heat. When the skillet is hot, brush with a little softened butter.

For each crepe, pour about 3 tbsp (45 ml) of batter in the centre of the skillet. Tilt the skillet to spread the batter evenly until it covers the bottom of the skillet. When the edge peels off easily and begins to brown, it's time to flip the crepe with a spatula. Continue cooking for 10 seconds, until cooked through, and remove from the skillet.

Place the cooked crepes on a plate as you go. Cover with aluminum foil to keep them from drying out and to keep them warm. Delicious with maple syrup or blueberry sauce.

I used Cup4Cup Gluten Free flour, and this turned out very well! I also used almond milk, and I added a little bit more than the recipe called, because the GF flour is a bit dry. I added a bit extra butter too for this reason. Overall this recipe was amazing! If you don’t substitute ingredients like me, you can follow this to a tee and it should turn out wonderfully.

For the last commenter, you didn't event follow the recipe, of course it's not going to work! Different flours don't behave and hydrate the same way as all-purpose flour. 

Nonetheless, this recipe is very good. Simple and delicious!

there is too much milk and not enough flour; which makes the texture too liquid and the crepe brakes when you flip it. The correct ratio is 3 eggs, 250 g of flours, 500 ml of milk.

Heat oven to 220C/200C fan/gas 7. Use 1 tbsp of the oil to lightly grease a large, shallow roasting tin. Scatter the chips over two-thirds of the tin and line the sausages up on the other third. Cook for 20 mins, then toss the chips around, turn the sausages and return to the oven 10 mins more until the chips are golden and the sausages browned. Push everything together to make room in the tin, then lay the bacon rashers in the space and return to the oven for 10-15 mins or until the bacon fat is crisp and sizzling.

Five mins before the bacon is ready, heat the remaining 1 tbsp of oil in a frying pan and fry the eggs however you like them. Heat the beans in a saucepan or in a microwave.

Split the baps so they are still hinged at one edge. Butter and sauce as you like, split each sausage lengthways and, building from the bottom up, layer the chips, sausage, bacon and egg. Present the bap open for extra sauce and to keep the yolk intact. Serve small pots of beans on the side for dipping and spooning over.

Green Shakshuka

(760 g) leeks, thinly sliced

2 cloves, chopped

½ tsp (7.5 ml) lemon juice

½ tsp (7.5 ml) water

In a large non-stick skillet over medium-low heat, soften the leeks in the oil without browning until tender, about 10 minutes. Add the garlic and cumin. Cook for 1 minute while stirring.

Add the broth and let reduce by half. Add the spinach and three-quarters of the herbs. Season with salt and pepper. Cook while stirring just until the spinach has wilted, about 2 minutes.

Using a spoon, make 4 to 8 wells in the vegetable mixture. Break an egg into each well. Cover and let simmer gently for 7 to 8 minutes or until the egg whites are set but the yolks are still runny. Season the eggs with salt.

Meanwhile, in a small bowl, combine the harissa, lemon juice and water. Just before serving, top the eggs with the harissa mixture, to taste. Sprinkle with the remaining herbs and the green onion. Serve with grilled bread and the remaining harissa mixture, if desired.

Grease a 9x13-inch casserole pan with some oil or butter and arrange chopped bread evenly in the pan.

Spread the bell peppers, ham, and cheese evenly over the bread.

In a large mixing bowl, add eggs, milk, mustard, green onions, garlic powder, salt, and pepper. Whisk well until evenly combined.

Pour the egg custard mixture evenly over the bread. Use a spatula to press down gently to ensure that all the bread pieces are soaked with the egg custard.

Cover the casserole pan with plastic cling wrap and set aside for at least 20 minutes. You can also store it in the fridge overnight until ready to bake, for an easy make ahead breakfast.

Bake for 55 to 60 minutes until golden brown on the edges and the egg mixture is completely set (or a knife inserted near the center comes out clean).

No need to travel to Sweden on Midsummer to enjoy this traditional dish.  You can enjoy Västerbottenostpaj (Cheese Pie), in the comfort of your home.  Creamy, nutty, delicious, and so easy to prepare!

Swedish Cheese Pie

butter, chilled (about 1/2 cup)

flour

tbsp water, cold

ml cream (about 3/4 cups & 2 tbsp)

Combine the flour, chilled butter, and 1 tbsp of cold water in a food processor.  Mix until they&#039;re barely combined, do not over mix.  You can also do this manually.

Form a disc with the dough and wrap it in plastic.  Place the disc in the refrigerator for 30 minutes.

Take the dough out of the refrigerator.  Using a rolling pin, flatten the dough and place it in an 8-inch pie form.  

Trim the sides and place the pie form in the freezer for 30 minutes.

While the dough is still in the freezer, preheat the oven to 220°C (425 °F).

Make holes in the dough by pricking it randomly with a fork.  

Place dough in the oven for 12 to 15 minutes.  

Set aside to cool.

For the Pastry Dough:

Adjust oven temperature to 200°C (375°F).

In a large bowl, combine cheese, pepper, eggs, and cream.  Use a whisk to mix evenly.

Pour cheese mixture into the prebaked pastry.

Place pie form in the oven for 40 to 45 minutes, or until the mixture has solidified.

Take cheese pie out of the oven and set aside for at least 20 minutes.

Garnish with chopped chives and serve.

Combine all ingredients in a blender and blend until smooth. Refrigerate 1-2 hours.

Heat non-stick skillet or non-stick crepe pan over medium-high heat and brush with butter or spray with cooking spray. Pour or ladle about ¼ cup of the batter into the pan, tilting to coat the surface of the pan with the batter.

Cook 2-3 minutes, or until the bottom of the crepe lifts easily off the bottom of the pan, then flip the crepe and cook on the other side until golden brown and edges are slightly crispy.
