This homemade granola recipe has buckwheat and is lightly sweetened with maple syrup. It's perfect for holiday food gifts! Vegan and refined sugar free.

Maple Buckwheat Homemade Granola (Refined Sugar Free)

fine sea salt

cinnamon

ground ginger or pumpkin spice

coconut oil

maple syrup or dark agave

vanilla extract

Optional additional mix-ins: 2/3 c dried fruit coconut

Preheat oven to 325F. Line a baking sheet with parchment paper. Set aside. 

In a large bowl combine oats, buckwheat, nuts and seeds.

In a small saucepan, combine maple syrup, oil, cinnamon, ginger and salt. Bring to a boil and hold at a steady boil for 2 minutes. Remove from heat and add vanilla extract.

Pour syrup mixture over oat mixture and mix well to evenly coat. Spread granola on the prepared baking sheet in an even layer.

Bake granola until browned and crispy, about 35 minutes (give or take), stirring thoroughly every 10 minutes. You will know it’s done when oats are slightly brown/toasted.

Let cool thoroughly (at least 30 minutes) before breaking into pieces. Store in airtight container at room temperature for 7 days.

Buckwheat is naturally gluten free, full of nutrients and keeps popping up in fashionable diets all over the place. But what exactly is it? How do you cook it? And does it actually taste nice?

How to cook buckwheat groats

160 g Buckwheat groats

Place the buckwheat groats in a medium to large saucepan (with enough room for the buckwheat and lots of water). Pour over plenty of boiling water from the kettle.

Bring to the boil over a high heat, then turn down the heat to medium-low and cook for 10-15 minutes, depending on your personal preferences. I recommend testing after 10 minutes and if it&#039;s not quite cooked enough for your tastes, cook it a little longer.

Drain the buckwheat in a sieve and serve.

Mediterranean Buckwheat Salad

water

red onion (diced)

cherry tomatoes

cucumber (chopped)

kalamata olives

yellow or orange bell pepper (seeded and chopped)

olive oil

lemon

tsp sea salt

oregano

feta cheese (optional)

parsley

In a saucepan, bring buckwheat and water to a boil

Turn heat to low, cover, and simmer about 20 minutes

Remove from heat and let stand covered, for 5 minutes. Fluff with a fork and allow to cool

Combine cooled groats with tomato, cucumber, olives, and bell pepper in a salad bowl

in a small bowl, whisk together olive oil, lemon juice, salt, and oregano

Pour dressing on the salad and toss to combine

Garnish with parsley and feta cheese, if using

These gluten-free buckwheat pancakes are made in a blender for a quick and easy breakfast!

Blender Buckwheat Pancakes

buckwheat groats,

oats

baking powder

salt

milk, almond milk

vanilla

Butter,

The night before; add buckwheat groats to a bowl with two cups of room temperature water and allow to soak on the counter overnight.

In the morning; using a colander, strain and rinse the buckwheat groats until the water runs clear. Discard any excess water.

Add strained buckwheat groats to the blender with rolled oats, baking powder, salt, cinnamon, milk, vanilla and egg. Blend on high until well combined.

Heat a griddle or pan to medium heat, add a knob of butter, and then pour 1/4 cup of batter onto the pan. Cook until the top bubbles and bubbles pop to form holes on the surface, then flip and cook until golden brown on both sides.

Continue until all of the batter has been used, you can keep cooked pancakes in the oven at 200°F to keep them warm while you finish all of the batter.

Serve immediately with strawberries, a dollop of yogurt and maple syrup, or toppings of your choice.

These buckwheat pancakes can also be stored in the fridge for up to 5 days or in the freezer in an airtight container or bag for up to 3 months.

Made these for the family, topped them with yogurt and banana and the kids loved them. Thank you!

These were pretty good! I may have either not used enough liquid, or used too much batter per pancake, as I didn't see any bubbles, so had to keep checking to know when to flip. But they were tasty, and I have a lot of groats, so will be making again! Thanks for the recipe!!

Buckwheat Breakfast Porridge (Vegan)

buckwheat groats ((soaked overnight))

coconut milk ((400 milliliters))

maple syrup

sea salt

mixed berries

orange juice

arrowroot powder

¼ tsp ground cardamom

tsp grated orange zest

pecans ((chopped))

Soak the buckwheat groats overnight, strain and rinse well until it&#39;s no longer slimy. Transfer to a blender with the water and pulse to break up the grains and transfer to a medium pot. Bring to high heat then reduce to a simmer, add the coconut milk, maple syrup and pinch of salt, stir to combine. Simmer on low heat until thickened and the grains are soft and the porridge is a creamy consistency, about 15 minutes.

Meanwhile, make the berry compote: add the frozen mixed berries and orange juice to a saucepan and bring to medium low heat and cook until the berries are softened and simmering. Stir in the vanilla and salt. Whisk in the arrowroot powder and cardamom and simmer for 2-3 more minutes until thickened, Finish by stirring in the grated orange zest and maple syrup.
