Your family will love this easy one-skillet butter bean recipe, made with pizza cheese, baby spinach, tomato and garlic. 
I like to serve this one-skillet dinner with garlic bread or toasted baguette and arugula salad on the side.  

Skillet Butter Bean Recipe with Pizza Cheese &amp; Spinach 

olive oil

garlic cloves, minced

tomato paste

water

butter

baby spinach

bag grated Pizza cheese cheese

Fresh basil, oregano or thyme

Serve with garlic bread

Heat oven to 475 F

Heat olive oil over medium heat

Add garlic,

Add tomato paste

Cook for 1 minute more, stirring almost constantly so the garlic doesn’t burn. 

Add the water and bring to a boil

, stirring to blend the water in with the oil and tomato paste. 

Add the beans, spinach and HALF of the cheese

Top with the remaining cheese

Bake for about 10 minutes

until the cheese is completely melted and the tomato sauce is bubbly.

Snip fresh herbs

over the butter beans before serving with garlic bread, or your favorite toasted bread

I have never had butter beans but I will be making this being vegan and loving beans fabulous recipe and thank you so much for posting this!  I used to be a big pizza fan! but cant have that many carbs now.

At first glance of the photo you won't realize how healthy this is! Never would have thought to try these ingredients together, but it works so well!

What a great idea to cook beans in tomato sauce and cheese -- this might get my kids to eat more beans! :) Will have to try it soon!

This was really good! I loved it as it was, but my kids picked out the spinach. Served this with crusty garlic bread and a salad.

I've never had my bean recipes *not* come out dry! Am I doing something wrong??

Easy Canned Butter Beans

onion

garlic (minced)

butter beans (rinsed and drained)

vegetable broth

thyme

Coarse kosher salt and black pepper (to taste)

Paprika

In a medium pot, heat olive oil over medium heat.

Add the onion and cook 5 minutes, stirring frequently, until softened.

Add the garlic and cook, stirring, for 15 seconds.

Add the beans, vegetable broth, thyme, salt, and pepper, stir, and bring to a boil. Lower the heat to a simmer and let cook, stirring occasionally, until the liquid has reduced and the beans are hot, 15-20 minutes.

Serve warm, sprinkled with paprika.

This is the most perfect weeknight meal with burst toms and a creamy, dreamy butter bean smoosh.

Jammy Tomatoes & Creamy Butter Beans On Toast

Shallots

Limes

Cherry Tomatoes

Jar of Butterbeans (325 grams)

Greek Yoghurt

Garlic Clove

Tbsp Sumac

Slices of Sourdough Bread

Coriander

Peel and finely slice shallots, then add into a small bowl with the juice of a lime and a pinch of salt.

Place the cherry tomatoes into a baking dish with the sumac, 4 tbsp of olive oil and salt and pepper. Mix well and cook for 25 min until charred and blistered.

Meanwhile, drain the butter beans and add to a blender with the yoghurt and grated garlic. Whizz until smooth then season with salt and pepper. If it's looking a bit stiff, add a little of the butter bean water.

When ready to serve, halve and toast the sourdough before spreading with the butterbean purée. Top with the jammy tomatoes and shallots, then top with a grating of lime zest and some coriander.

Creamy Lemon Pepper Butter Beans Skillet

Tbsp unsalted butter (28 g)

lemon pepper seasoning

½ tsp each salt and mustard powder

Tbsp all-purpose flour

vegetable broth (236 mL)

butter beans (drained, 425 g cans)

heavy cream (236 mL)

Parmesan

Italian parsley

To serve: lemon slices, black pepper

Flavor base

Flavor Base: Melt 2 Tbsp unsalted butter in a large saucepan over medium heat. Add 2 cloves garlic (minced), 2 tsp lemon pepper seasoning, and ½ tsp each salt and mustard powder. Cook for 1 to 2 minutes, or until garlic is fragrant.

Simmer

Simmer: Stir in 2 Tbsp all-purpose flour until combined, then slowly drizzle in 1 cup vegetable broth. Bring to a gentle simmer until sauce thickens.

Stir

Stir in 2  15-oz cans butter beans (drained), cover, and let simmer for about 5 minutes.

Finish

Finish: Remove pan from the heat then stir in 1 cup heavy cream, and ½ cup freshly grated Parmesan (return to low heat for a few minutes if mixture isn&#39;t thick enough for your liking). Garnish with ¼ cup chopped Italian parsley, sliced lemons and freshly ground black pepper! (Sauce will continue to thicken as it cools.)

I never thought of lemon pepper except on tuna or pasta.  Very clever.

20-Minute Creamy Lemon Pepper Butter Beans

This butter bean recipe is a hearty, healthy meal packed with fiber and plant-based protein. It’s quick to make, full of flavor, and perfect for a cozy, nourishing dinner any night of the week.

Butter Bean Recipe

cherry tomatoes (halved (4 cups))

butter beans (15 oz / 400 g each can)

garlic (pressed

dried oregano (+ 1 teaspoon for the marinade)

water (or vegetable broth)

feta

honey (or maple syrup)

red pepper flakes (more

lemon

basil

salt (+ black pepper)

Marinate the Feta

Marinate the Feta: Cut 1 block feta cheese into chunky pieces and place them in a bowl. Add 1 tablespoon olive oil, 2 teaspoons honey, 1 teaspoon dried oregano, and ¼ teaspoon red pepper flakes. Toss gently to coat, then set aside to marinate.

Cook the Tomatoes

Cook the Tomatoes: Heat 2 tablespoons extra virgin olive oil in a large skillet over medium-high heat. Add 2 pints cherry tomatoes, ½ teaspoon salt, a few cracks of black pepper, 1 teaspoon dried oregano, and 2 cloves garlic. Cook for about 10 minutes, stirring occasionally, until the tomatoes are soft and saucy.

Add the Beans

Add the Beans: Stir in 2 cans butter beans (drained and rinsed) along with 1 cup water of water. Let it simmer for 5 to 8 minutes, until the beans are warm, tender, and creamy.

Finish and Serve

Finish and Serve: Spoon the marinated feta over the beans and tomatoes. Broil for 5 minutes until the feta is golden and slightly crisp, or serve straight from the skillet. Finish with the zest and juice of 1 lemon and 1 handful fresh basil. Delicious with crusty bread!

Loved this recipe!  I caramelized a sweet onion first and then followed the recipe as directed.  Will definitely keep in the regular rotation. A comforting/healthy meal that’s hard to beat!

I followed the recipe pretty exactly with the exception of oregano (not keen on it, plus I didn't have any in the cupboard). I also omited the 240ml of water/vegetable stock that's mentioned in the written recipe but which didn't apear to be used in the video.
So, to summarise: no oregano and no water or stock. Fabulous!!

Absolutely loved this recipe! The flavors were so rich and comforting, and it came together surprisingly quickly. The best part was the broiled feta on top as it got golden and melted just enough into the tomatoes and beans. It made the whole dish feel extra special. Served it with some warm sourdough and a side of greens. Will definitely be adding this to our regular dinner rotation!
