CREAMY HARISSA BEANS ON TOAST

Saute the onion in olive oil for 5-7 minutes so it starts to become caramelised. Add the garlic and tomato paste and cook for another minute.

Add the can of beans along with their liquid and use that to deglaze the pan. Stir through the harissa, oregano and cream and let simmer for another 5-10 minutes (depending on how much time you have).

While the beans are simmering, toast your bread.

Stir through the fresh lemon and serve topped with basil.

Marry Me Butter Beans (With Creamy Tuscan Sauce)

Tbsp unsalted butter (28 g)

garlic (minced)

½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika

¼ tsp ground black pepper

sun-dried tomatoes (roughly chopped)

vegetable broth* (120 to 236 mL)

spinach

heavy cream (can sub half-and-half, 236 mL)

parmesan (50 g)

Flavor Base: Heat 2 Tbsp unsalted butter, 4 cloves garlic, ½  tsp each salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ tsp ground black pepper in a large saute pan or pot over medium heat. Cook for about 2 minutes, until garlic is fragrant.

Fillings: Stir in ½ cup sun-dried tomatoes, ½ to 1 cup vegetable broth*, and 2 15-oz cans butter beans. Continue cooking on medium, uncovered, for 5 minutes.

Finish: Remove from heat. Stir in 1 cup chopped fresh spinach until wilted, then stir in 1 cup heavy cream, ½ cup grated parmesan, and 2 Tbsp chopped fresh basil. Serve warm with crusty bread, over rice, or with pasta.

I sautéed in onions and substituted coconut milk, it was amazing &amp; super easy to make! Paired with rice made with veggie broth &amp; coconut milk  .

My husband and I love this recipe. I seldom have fresh basil so dried it is. I add an additional can of beans and more broth. I rinse the beans to cut the salt down (can’t find low sodium) because of high blood pressure.

These Cacio e Pepe Butter Beans are a dreamy one pot meal made with parmesan, black pepper, and buttery white beans, gives the classic creamy pasta dish a protein boost and dairy-free twist! Vegan &amp; Gluten-Free.

Cacio e Pepe Butter Beans

butter beans (2 cans or 3 cups cooked beans)

butter oil

nutritional yeast (optional)

black pepper (coarse grind)

chicken broth (or sub water)

Bloom the Pepper: Warm 1 tablespoon of butter or oil in a large pan over medium heat. Add the ground pepper and nutritional yeast (if using) and swirl it around; sauté for 45 to 60 seconds, until the pepper is fragrant.

Simmer: Add the beans and broth and mix well. Bring the mixture to a simmer over medium heat and cook for 7 to 9 minutes, stirring occasionally, until the liquid has reduced by about half.

Sauce: Reduce the heat to low and add in the grated parmesan. Gently fold the cheese into the beans until it has melted and the sauce has thickened (this should take around 1 to 2 minutes). If the sauce is too thick for your liking, thin it out with warm water in 2 tablespoon increments.

Serve: Season with additional salt and pepper to taste and serve warm and as desired. Store leftovers in an airtight refrigerator for up to 5 days. The sauce will thicken up after it sits in the fridge, so I recommend thinning it out with a splash of water when you reheat any leftovers in the microwave or on the stove.

Add the cherry tomatoes to a pan with a drizzle of olive oil and a pinch of salt. Set it over a medium-high heat and cook for about 5 mins until starting to soften and burst open. Add a splash of water if they’re catching on the bottom of the pan. 

Mince the garlic and add it to the tomatoes in the pan along with the tomato paste, ¾ of the harissa and the smoked paprika.

Add the tinned butterbeans and ½ their liquid to the pan then stir in the vegan cream cheese. Bring the mixture to a boil then turn down the heat and simmer for 5-10 mins until the beans have softened and the broth has thickened (it should be creamy).

Meanwhile, toast the bread and finely chop the herbs.

Ladle the beans into bowls or meal-prep boxes. Drizzle over the tahini and some remaining harissa. Finish with the chopped herbs and flaked almonds. It will keep in the fridge for 3 days.

With all the flavours, I was looking forward to this but it just tasted meh to me. Maybe because it’s not cooked for very long, the flavours just don’t permeate the dish.

Tuscan Marry Me Butter Beans

oz canned butter beans (drained and rinsed (two (15-ounce) cans))

Parmesan cheese (freshly grated, plus more for serving)

Heat the oil from the sun-dried tomato jar and butter in a large skillet over medium heat. Once the butter is melted, add the onion and cook until softened, about 3-4 minutes.

Add the minced garlic. Cook for 30 seconds, until fragrant. Stir in the tomato paste and cook for another minute, stirring constantly, allowing it to darken slightly.

Add the sun-dried tomatoes, oregano, basil, red pepper flakes, salt, and black pepper. Cook for another minute.

Pour in the chicken broth and butter beans. Bring to a simmer.

Reduce the heat to low and let it simmer for 5-7 minutes.

Using the back of a spoon, gently mash about ½ cup of the beans, against the side of the  skillet. Alternatively, you can remove a scoop of beans, mash them in a small bowl, and then return them to the skillet. Stir the mashed beans into the sauce to help thicken it.

Add the spinach. Cook, stirring occasionally, just until the spinach is wilted, about 2-3 minutes.

Remove the skillet from the heat. Immediately stir in the heavy cream and Parmesan cheese. Stir continuously until the cheese is melted and the cream is fully incorporated into the sauce.

Taste and adjust seasoning with more salt and black pepper if needed.

Serve immediately, garnished with extra Parmesan cheese and fresh basil.

We've just had this, it was delicious, however we used vegetable stock cubes, as the chicken broth in a vegetarian dish confused me!

We made this tonight and it was delicious!  I used Cannellini beans.  I added in a chopped carrot that was looking 'rough' and a bit of smoked paprika.  This will stay in our rotation for veggie Monday :)
