CREAMY HARISSA BEANS ON TOAST

olive oil

Saute the onion in olive oil for 5-7 minutes so it starts to become caramelised. Add the garlic and tomato paste and cook for another minute.

Add the can of beans along with their liquid and use that to deglaze the pan. Stir through the harissa, oregano and cream and let simmer for another 5-10 minutes (depending on how much time you have).

While the beans are simmering, toast your bread.

Stir through the fresh lemon and serve topped with basil.

Marry Me Butter Beans (With Creamy Tuscan Sauce)

Tbsp unsalted butter (28 g)

garlic (minced)

½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika

¼ tsp ground black pepper

sun-dried tomatoes (roughly chopped)

vegetable broth* (120 to 236 mL)

spinach

heavy cream (can sub half-and-half, 236 mL)

parmesan (50 g)

Flavor Base: Heat 2 Tbsp unsalted butter, 4 cloves garlic, ½  tsp each salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ tsp ground black pepper in a large saute pan or pot over medium heat. Cook for about 2 minutes, until garlic is fragrant.

Fillings: Stir in ½ cup sun-dried tomatoes, ½ to 1 cup vegetable broth*, and 2 15-oz cans butter beans. Continue cooking on medium, uncovered, for 5 minutes.

Finish: Remove from heat. Stir in 1 cup chopped fresh spinach until wilted, then stir in 1 cup heavy cream, ½ cup grated parmesan, and 2 Tbsp chopped fresh basil. Serve warm with crusty bread, over rice, or with pasta.

I sautéed in onions and substituted coconut milk, it was amazing &amp; super easy to make! Paired with rice made with veggie broth &amp; coconut milk  .

My husband and I love this recipe. I seldom have fresh basil so dried it is. I add an additional can of beans and more broth. I rinse the beans to cut the salt down (can’t find low sodium) because of high blood pressure.

These Cacio e Pepe Butter Beans are a dreamy one pot meal made with parmesan, black pepper, and buttery white beans, gives the classic creamy pasta dish a protein boost and dairy-free twist! Vegan &amp; Gluten-Free.

Cacio e Pepe Butter Beans

butter beans (2 cans or 3 cups cooked beans)

butter oil

nutritional yeast (optional)

black pepper (coarse grind)

chicken broth (or sub water)

cheese

parsley (for garnish (optional))

Bloom the Pepper: Warm 1 tablespoon of butter or oil in a large pan over medium heat. Add the ground pepper and nutritional yeast (if using) and swirl it around; sauté for 45 to 60 seconds, until the pepper is fragrant.

Simmer: Add the beans and broth and mix well. Bring the mixture to a simmer over medium heat and cook for 7 to 9 minutes, stirring occasionally, until the liquid has reduced by about half.

Sauce: Reduce the heat to low and add in the grated parmesan. Gently fold the cheese into the beans until it has melted and the sauce has thickened (this should take around 1 to 2 minutes). If the sauce is too thick for your liking, thin it out with warm water in 2 tablespoon increments.

Serve: Season with additional salt and pepper to taste and serve warm and as desired. Store leftovers in an airtight refrigerator for up to 5 days. The sauce will thicken up after it sits in the fridge, so I recommend thinning it out with a splash of water when you reheat any leftovers in the microwave or on the stove.
