Buttermilk Fried Chicken

chicken

In a large pot combine water, salt, honey, lemon, garlic, parsley, thyme and bay leaves.

Boil brine for 1 minute, stirring to dissolve the salt.

Remove from the heat and cool completely before using. The brine can be refrigerated for up to 3 days.

Chicken Brine

Cut each chicken into 10 pieces each: 2 legs, 2 thighs, 4 boneless breast quarters, 2 wings.

Add the chicken to the pot of cooled brine or pour into a re-sealable plastic bag large enough to hold the chicken pieces. Refrigerate for 12 hours, no longer or the chicken may become too salty.

Remove the chicken from the brine. Discard the brine and rinse under cold water, removing any herbs or spices sticking to the skin.

Pat chicken dry with paper towels. Let rest at room temperature for 1 ½ hours, or until it comes to about room temperature.

Add oil to a large pot (about 4.5-quart size). The oil should fill the pot with at least 2-inches of oil, add more if needed. No matter what size pot you have the oil should not come more than one-third of the way up the sides.

Set a cooling rack over a baking sheet. Line a second baking sheet with parchment paper.

Chicken

In a large bowl combine flour, garlic powder, onion powder, paprika, cayenne, salt, and pepper.

Pour the buttermilk into a separate bowl and season with 1 teaspoon salt and ½ teaspoon pepper.

Set up a dipping station: The chicken pieces, one bowl of coating, the bowl of buttermilk, and the parchment-lined baking sheet.

Just before frying, dip the chicken into the coating, turning to coat and patting off the excess.

Dip chicken into the buttermilk, allowing the excess to run back into the bowl.

Dip the chicken back into the coating. Transfer to the parchment-lined pan.

Repeat with the remaining pieces of chicken.

Coating and Dredging

Heat oil to 320°F (160ºF).

Carefully lower the thighs into the hot oil. Adjust the heat as necessary to return the oil to the proper temperature. Fry and move the chicken around as needed until the skin is deep golden brown, cooked through, and very crisp, about 8 to 12 minutes.

Transfer the cooked thighs to the cooling rack, skin-side-up and let rest while you fry the remaining pieces. Sprinkle with fine sea salt if desired.

Bring oil back to 320ºF (160ºC), add the drumsticks, cook until golden brown, about 7 to 9 minutes. Transfer to the wire rack.

Turn up the heat and increase oil temperature to 340°F (171ºC).

Carefully lower the breasts into the hot oil. Fry until golden brown, cooked through, and crisp, about 6 to 8 minutes. Transfer to the wire rack.

Cook the wings until golden brown, about 5 to 7 minutes. Transfer to the rack and turn off the heat.

Arrange the chicken on a serving platter. Add some herb sprigs.

Frying

3 lb whole chicken (cut up)

Peanut oil

Place chicken pieces into a bowl and cover with buttermilk. Refrigerate for at least 3 hours or overnight. May cut super large breast pieces in half to allow for more even cooking, if needed.

Fill a deep fryer, deep medium-large pot or dutch oven halfway with oil. Do not overfill. Heat the oil to 350°F.

In a shallow dish or plate, sift together the flour, salt, pepper, garlic powder, onion powder, paprika and cayenne.&nbsp;&nbsp;

In a separate dish whisk together eggs with salt and pepper.&nbsp;

Remove the chicken from the buttermilk shaking off the excess. Dip into flour, then into egg wash then into flour again. Have nearby a pan, arrange breaded pieces on pan.&nbsp;

Gently lower pieces into the hot oil a few pieces at a time skin side down. Maintain temperature while cooking to around 325-350°F.

Cook in batches beginning with the dark meat being careful not to overcrowd the pot.&nbsp;Cook dark meat for about 10-12 minutes on each side and white meat pieces for 8-10 minutes on each side or until juices run clear.

Remove to paper towels or an oven safe baking rack to drain. Cover and keep warm until serving.

In a medium bowl, combine buttermilk, Sriracha, salt, pepper, and garlic powder. Add chicken thighs and marinate overnight, or at least for 4 hours.

Prepare the flour mixture by whisking together flour, cornstarch, paprika, salt, pepper, garlic powder, and cayenne powder in a shallow bowl.

Add 2 tbsp of the marinade into the mixture and mix through with a fork. Working with one piece at a time, dredge the chicken with the flour mixture, making sure it is completely coated.

In a small bowl, prepare the sauce by mixing together Sriracha and mayonnaise.

Heat the oil in a deep pan until it reaches 350˚F (180˚C). Fry the chicken for about 3-4 minutes on each side, or until cooked through and golden brown. The thickest part of the chicken should register 165˚F (75˚C).

Generously spread the Sriracha mayo on the toasted brioche buns, and top with sliced pickles, lettuce, and tomato. Serve immediately and enjoy!

/ 500 milliliters Buttermilk

In a bowl, combine the wet mix with your chicken, ensuring it&#039;s fully coated by the marinade. Cover and allow to marinate in the fridge for an absolute minimum of 4 hours, but the longer the better (up to 24hours). Remove at least 30mins before you intend to use it to bring to room temp (important - frying cold chicken causes it to seize up and go chewy).

Meanwhile, combine all of your dry mix. I find this easiest in a small tray, but you can also use a shallow bowl. Dip a piece of your chicken into the mix and fully coat. Really make sure you get the mix in every part of the chicken, this will give you those &#039;flaky&#039; parts which make the chicken extra crispy. The more craggy/flaky the chicken is the crunchier it&#039;ll be. Place on a wire rack and repeat with the remaining chicken.

Heat up enough oil to comfortably cover the depth of your largest piece of chicken. Drop a piece of mixture in, if it slowly sizzles to the top you&#039;re good to go. You want the oil to be approx 175C/350F - 180C/356F. The temp will drop when the chicken hits the oil, and that&#039;s okay, just try to maintain a heat of around 320F/160C. A medium heat should obtain this.

In batches of 3 (4 max) gently place your chicken in the oil, making sure you add the same cuts at the same time so they cook at an even rate (thighs, drums, wings). Deep fry for 6-8mins on each side or until deep golden and white through the centre (see notes). Don&#039;t move the chicken for the first couple of mins, you need the batter to attach to the chicken. Timings will depend on the size of the chicken pieces, how many there are and heat retention, so just be vigilant. Bring heat back to 175C/350F - 180C/356F between each batch.

Place each piece on a wire rack with paper towels underneath when finished and sprinkle with salt to draw out the last bit of moisture and bring out the seasoning. The chicken should be piping hot with the juices running clear. In all circumstances the chicken internal temp 165F/75C (take into consideration it continues cooking slightly once out the oil).

Toss the chicken, buttermilk and 1 teaspoon salt in a bowl. Cover and refrigerate, 1 hour.

Heat 1 inch of vegetable oil in a large deep skillet (or in a deep fryer) over medium-high heat until a deep-fry thermometer registers 360.

Mix the flour and spices in a shallow bowl. Remove one tender from the buttermilk, shake off the excess and roll in the flour mixture. Shake off the excess flour and lay on a plate. Repeat the process until all pieces of chicken are double coated. Place in chicken into the hot oil and fry, turning occasionally, until golden brown and cooked through, about 15 minutes (adjust the heat as needed). Drain on paper towels.

In a large bowl combine 1 tbsp salt, 2 tsp garlic powder, 1 tsp onion powder, 2 tsp paprika, and 1/2 tsp black pepper. Stir in the buttermilk, egg, and pickle juice.

Place the chicken in the buttermilk brine and let it marinate for a minimum of 30 minutes.

Heat the oil in a cast-iron skillet. The oil temperature should be about 350 degrees F.

In a large brown paper bag or freezer bag, combine the flour, cornstarch, 1 tbsp plus 1 tsp of salt, 2 tsp garlic powder, 1 tsp onion powder, 2 tsp paprika, and 1/2 tsp black pepper. Mix well.

Add 3-4 pieces of chicken at a time to the bag and mix well. Shake the bag! Make sure to discard any excess buttermilk before adding the chicken to the flour mixture. Make sure to coat the chicken very well on both sides!

Add the chicken to the frying pan, about 3-4 pieces at a time, shaking off any excess flour, don&#39;t overcrowd the skillet. Cook the chicken for 10 minutes on each side or until it reaches 165 degrees F.

Place the chicken in a bowl, add the buttermilk and a good pinch of salt and pepper and mix well.

Cover with cling film and chill for at least 30 minutes, or overnight. Bring back to room temperature before cooking.

Once ready to cook, pour a 1.5cm depth of oil into a heavy-based sauté pan or hob-proof casserole dish.&nbsp;

Place over a medium heat until the oil reaches 170C (340F) or a cube of bread dropped into the oil sizzles and turns brown after 30 seconds.

Put the flour on a plate and mix with the spices and a pinch of salt and pepper.

Buttermilk Chicken Tenders are marinated in buttermilk, then battered and pan fried until golden brown. They're a crispy and crunchy treat!

Buttermilk Chicken Tenders

garlic salt

Italian seasoning

chicken tenders

all purpose flour

vegetable oil

mayonnaise (I use Duke's)

Tablespoon yellow mustard

Tablespoons honey

Mix up the marinade and pour it over chicken. Place in an airtight container in the refrigerator overnight, or use immediately if you're in a hurry.

Whisk the flour mixture together to make the batter.

Remove tenders from the marinade and dredge them in the flour mixture. Pat the flour down to make sure it sticks.

Place chicken on a plate or sheet pan while heating up the oil.

Heat oil to 350 degrees (medium temp) in a skillet.

Gradually add battered chicken fingers one at a time into the hot oil. 

Fry tenders on one side for 3 minutes. Flip and fry 3 more minutes. Flip one more time and fry until golden brown (about 3 minutes more).

Remove chicken tenders from oil and place on a rack over a sheet pan. Keep warm in a 170 degree oven until ready to serve.

To make honey mustard sauce, combine all ingredients together and mix well. Serve with chicken tenders.

Refrigerate leftovers in an air tight container for up to 3 days.

Place all the chicken brine ingredients in a pot and bring to a boil.

Boil the brine for 1 minute, until the salt dissolves, then chill it completely.  If you’re in a hurry, you can place the mixture in a bowl and set that in an ice bath. Otherwise, let it chill to room temperature, then place it in the fridge.

Once the mixture is chilled, place the chicken in the brine for 8 hours. Try not to go beyond 8 hours or the chicken will get too salty. 

Discard the brine and pat the chicken very dry with paper towels.  Let the chicken sit at room temperature for 1 hour while you prep the other ingredients.

Mix the flour with the garlic powder, onion powder, paprika, cayenne, salt, and pepper. Split this between two bowls. Place the buttermilk in a third bowl, and set it in between the two spiced flour bowls.

Using either a dedicated deep fryer or a heavy-bottomed pot at least 10&quot; wide and checking the temperature with a thermometer, add enough tallow to come a few inches up the pot. Preheat the temperature to 320F.

In the meantime, bread the drumsticks and thighs by dipping each piece into the flour mixture, shaking off the excess, then the buttermilk, shaking off the excess, then the flour mixture again. 

Fry the drumsticks and thighs for 10 minutes, until golden brown and 170F inside, then drain on paper towels.

Raise the fryer heat to 340F. Dip the wings and breasts into the flour, shake off the excess, then the buttermilk, shake off the excess, then the flour again. 

Fry the wings and breasts for 6 to 7 minutes, until golden brown and cooked to 160F, then drain on paper towels. Enjoy!

Air Fryer Buttermilk Fried Chicken Recipe - BEST EVER! (low FODMAP/dairy-free option)

Place your chicken into a large bowl and pour your buttermilk over the top, make sure the chicken is well coated. Allow to sit for as long as you can. 12 hours in the fridge would be great, but often I just leave mine for 15 minutes and it works really well.

In another bowl, mix together the flour, starch, herbs and spices and put to one side.

Turn on your air-fryer to preheat. I turn mine on to 190C.

Add a couple of tablespoons of the buttermilk to the coating and mix it through, it will just go a little clumpy.

Take each chicken piece, one at a time, out of the buttermilk and cover in the coating. Using your hands, compact the coating against the chicken as much as poss. Transfer onto a plate until the air-fryer is fully preheated.

Open your air-fryer and place your chicken into the basket - make sure they're not touching each other - this means you might to do your chicken in two batches. Generously spray your chicken with oil. Set the timer for 25 minutes and close the lid.

After about 15 minutes,  check on your chicken and turn it over so the other side can colour. Spray any light white, floury bits with a little more oil - these won't turn golden otherwise. Close the lid and allow to cook for a further 10 minutes.

Your chicken should now be golden, crispy and cooked through (you can double check with a cooking thermometer (about 75C is a safe internal temperature).

Repeat with the rest of your coated chicken.

Serve up your chicken with your choice of sides and enjoy!
