Air fryer cabbage steaks or quarters come out tender yet crispy on the edges with LOTS of flavor. If you love this vegetable, this is a new way to try it.

Air Fryer Cabbage

cabbage

tbsp butter (or olive oil

tsp Old Bay (for each cabbage steak piece)

onion powder (for each cabbage steak piece)

garlic salt (for each cabbage steak piece)

Pour 1/4 c water underneath your air fryer basket. Preheat air fryer to 360 degrees for 5 minutes.

Slice cabbage 3/4&quot; thick so you have a slice of it.

Place cabbage steak piece into preheated air fryer basket and top with 1 tbsp butter in the middle of each piece, or drizzle with 1 tbsp olive oil. Then sprinkle seasonings of choice (we use what is listed above) on top.

Close basket and set to 8 minutes.

Open basket, if you want edges crispier add 2 more minutes and check again. Enjoy immediately for best results.

Oven Roasted Cabbage Steaks

green cabbage

olive oil

salt

tsp black pepper

1/4-1/2 tsp crushed red pepper flakes (optional)

Tbsp chopped fresh Italian parsley

garlic (minced)

Parmesan cheese

Preheat oven to 400°F. Liberally spray a large baking sheet with cooking spray or brush with oil.

Trim stem of cabbage to level. Cut cabbage into 1 inch slices from top to bottom, around the core, leaving internal core intact. (You can cut out the core but, it helps the leaves stay together while slicing.)

In a small bowl mix together oil, salt, pepper, red pepper flakes, parsley and garlic. Mix well.

Brush liberally on all sides of cabbage steaks. Sprinkle tops with grated Parmesan cheese.

Bake for 20 minutes, rotate pan. Continue to roast another 15-20 minutes until golden, lightly charred and fork tender. You can broil for a few minutes to char further, if desired.

Serve immediately.

Preheat the oven to 400 degrees Fahrenheit.

Slice cabbage into 1-inch thick pieces and place on a sheet pan. Rub the cabbage pieces with oil. Sprinkle sides with garlic powder, smoked paprika, kosher salt, and black pepper.

Roast for 30 minutes. After 30 minutes, flip the cabbage steaks carefully. Continue roasting the steaks for an additional 10-15 minutes, until tender. Remove from the oven, serve, and enjoy.

Roasted cabbage steaks are one of my favorite ways to enjoy a head of cabbage. They can be served as a tasty side dish or a stand-alone meal with various toppings — a true meal prep ingredient!

Slice cabbage

Slice the cabbage. Preheat the oven to 400°F (200°C). Cut the bottom off the cabbage and stand it upright so that the flat end is on the cutting board. Cut the cabbage into 1-inch thick slices.

Arrange and season

Arrange on a baking sheet and season. Place the cabbage steaks in a single layer on a baking sheet. Brush the oil on both sides of the cabbage steaks and evenly sprinkle both sides with garlic powder, salt, and pepper.

Roast cabbage

Cook until tender. Roast the cabbage steaks for 40 to 45 minutes, rotating the pan halfway through, until the edges are crispy and the center is tender.

Cabbage Steaks with Bacon

Preheat oven to 400 degrees.

Stand the cabbage up root end on your cutting board. Cut into ½ inch thick slices, being careful to hold the leaves together. You can leave the core in, it will soften as it cooks.

Arrange the cabbage steaks on two cookie sheets. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 18 minutes, turn over, then roast for 18 additional minutes.

Meanwhile, fry the bacon and make your sauce.

Add the bacon pieces to a skillet set over medium heat. Cook until bacon is crisp and then remove with a slotted spoon to a paper towel lined plate.

Combine the creme fraiche, lemon juice, dijon mustard and garlic in a small bowl and stir to combine. Season with salt and pepper, to taste.

One the cabbage steaks are cooked, drizzle them with the creme fraiche sauce and sprinkle them with the bacon. Serve immediately.

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Remove any loose outer leaves from the cabbage, then use a sharp knife to slice off the bottom of the core to create a flat base. Stand the cabbage upright on a cutting board. Slice the cabbage vertically into 1-inch-thick steaks. Arrange in a single layer on the prepared baking sheet.

In a small bowl, stir together the olive oil, garlic powder, and salt. Brush half onto the cabbage steaks. Carefully flip, then brush with the remaining oil.

Roast for 30 to 40 minutes, rotating the baking sheet halfway, or until the cabbage steaks are well browned and tender in the middle. Season to taste with salt and pepper.

Roasted Cabbage Steaks with Mustard Vinaigrette

red wine vinegar

Dijon Mustard

honey (or

water (or more if needed)

Salt and black pepper (to taste)

Preheat oven to 375 degrees.&nbsp;Slice cabbage into four or five thick "steaks."&nbsp;Drizzle with half the olive oil, season to taste with salt and black pepper and place on a nonstick baking sheet or one that is line with nonstick aluminum foil.&nbsp;Roast for 15 to 20 minutes or until lightly browned.

Meanwhile, whisk together remaining olive oil, red wine vinegar, coarse-grain mustard, Dijon mustard, honey, water, garlic and salt and black pepper, to taste.

To serve, drizzle over cabbage steaks.

Really great flavor and just what I was looking to add to my roasted cabbage. I applied heavy olive oil to the cabbage because my steaks were rather thick, so I didn’t add much to the dressing. Turned out great.

For more crispy cabbage, brown the steaks in oil in an iron skillet, on both sides. Then put on the flat pan and continue roasting.

Good flavor, but not as infused as I  like.  With the second batch, after baking 10 min then flipping the cabbage I painted the sauce on and baked until done. I left out the water to make a thick sauce. I have never figured out how to roast cabbage to be caramelized. Crispy. and tender, but not burnt on the edges.

I made this for dinner tonight. It was easy, quick, and delicious! The mustard dressing gives a tangy, exotic edge to the dish. I will definitely make again and again.

This is an excellent, easy recipe to elevate cabbage, a vegetable that lots of people don’t eat, to a new level.  This recipe is “dinner guest” worthy!

The idea is good, but the dressing is a little too sharp for my taste and the acid exceeds the usual proportions for salad dressing.  I would cut both the vinegar and the mustard in half.   Taste and add more if desired.

I love cabbage, especially fried, and this sounded good - wow, it was really good! The next day I fixed beef steak and hash browns along with some of the leftover cabbage and on a whim tried the vinaigrette with that, too, and everything tasted wonderful. I enjoyed the cabbage, but the mustard vinaigrette is the real find in this recipe! Will definitely make it often.
