Toss all the above ingredients with Caesar dressing right before serving. Serves 20-25.

This Caesar Pasta Salad is scrumptious and makes for an easy weeknight family meal. It has all the creamy goodness of a classic caesar salad, but more exciting with pasta and avocado.

Caesar Pasta Salad with Avocado

romaine lettuce ((or 2 small heads))

pasta

avocado

grape tomatoes (halved)

Grated parmesan cheese (to taste)

Caesar Dressing (or added to taste)

Cook pasta in salted water according to package instructions until al dente. Rinse in cold water and set aside to drain.

Rinse, chop and spin the romaine lettuce dry using a salad spinner. If you don't have a salad spinner, pat dry with a clean towel. The dressing will coat the salad much better if the lettuce isn't wet. Transfer lettuce to a large mixing bowl. Toss in the diced avocado and halved tomatoes.

Add the Caesar Dressing to really boost the flavor of this salad. Toss to evenly coat the lettuce. Add the dressing to taste. Sprinkle with parmesan and croutons.

Caesar Pasta Salad

penne (or other medium pasta)

chicken breasts

olive oil

seasoning to taste (cajun seasoning, salt & pepper, etc)

romaine lettuce (chopped)

croutons

parmesan cheese (shredded)

bacon (cooked and crumbled)

lemon wedges

mayonnaise

Greek yogurt (or sour cream)

lemon juice

garlic (minced)

anchovy paste

dijon mustard

Worcestershire sauce

salt & black pepper

Combine all dressing ingredients in a large bowl. Refrigerate.

Cook pasta al dente according to package directions. Run under cold water and drain well.

Season chicken breasts with olive oil and seasoning to taste. Grill over medium heat 4-5 minutes per side or until juices run clear. (165°F). Rest until cooled then chop or slice.

Combine all salad ingredients in a large bowl. Toss with desired amount of dressing.

Serve immediately.

Shrimp Caesar Pasta Salad

rotini pasta

lb shrimp (dried with paper towels)

sweet paprika

Italian seasoning

sea salt

lemon

romaine hearts (chopped)

Bring a large pot of salted water to a boil over high heat. Add the rotini and cook according to the package directions. Drain and rinse in cold water until completely cool.

Heat the oil in a frying pan over medium-high heat. Once it&#39;s hot, add the shrimp, paprika, Italian seasoning, and salt and stir well. Cook the shrimp for 2 minutes then remove the pan from the heat and squeeze the lemon juice over the top.

Add the cooked and cooled pasta, the cooked shrimp, romaine, cherry tomatoes, croutons, and parmesan to a large salad bowl. Pour the dressing over top and toss to coat.

Cups Caesar Dressing

Cup Shredded Parmesan Cheese

Cups Croutons (Divided)

2-3 Cups Cooked Shredded Chicken (OPTIONAL)

Cook the pasta according to package directions in a large pot of salted boiling water.

Drain the pasta and rinse under cold water for a couple of minutes until completely cool.

Add the cooled pasta to a large bowl and toss with the romaine, dressing, parmesan cheese, and half of the croutons as well as the chicken if using.

If desired, crush the other half of the croutons and sprinkle over the top of the salad.

*Croutons are best added no more than 1 hour before serving if you want them to stay crunchy.

Chicken Caesar Pasta Salad

avocado mayonnaise

Parmesan cheese (plus more for serving)

garlic cloves

capers

Dijon mustard

black pepper

fusilli pasta

sourdough (cubed)

Kosher salt (to taste)

romaine (chopped, about 4 cups)

Make the dressing. In a small blender or food processor, blend the mayonnaise, parmesan, garlic, capers, mustard, lemon zest, lemon juice and black pepper.

Cook the pasta. Bring a large pot of heavily salted water to a boil. Cook pasta according to package directions and drain.

Make the croutons. Preheat oven to 400°F.  On a baking sheet, toss cut sourdough bread with oil and kosher salt. Bake until golden brown, 15 minutes.

Assemble salad. In a large bowl, mix pasta, croutons, romaine lettuce, chicken, and dressing. Season to taste and serve immediately.
