The Ultimate Strawberry Filling for Cakes Tarts and Desserts

Place strawberries in a saucepan with the sugar,  lemon juice, and salt.

Divide the water into two - pour half with the fruit and combine the other half into the cornstarch/cornflour.

Heat the fruit on low to medium until sugar is dissolved shaking the pan to cook evenly.

Add the well-mixed cornstarch mixture into the bubbling fruit.

Continue to cook on low - the mixture will thicken and looks glossy.

The color will change from an opaque light red to a translucent&nbsp;deep strawberry red color.

When thick enough to coat the back of a wooden spoon or spatula it&#039;s ready.

Check consistency - for a cake filling you can make a bit more thicker.&nbsp;Personally, I prefer one consistency for all. Thick and not too runny.

At this point, you can strain the filling by simply pouring it thru a sieve. Or leave it fruity and chunky just as I have here.

Remove from heat - Pour into a mason jar.&nbsp;Let cool completely.

Make your own rich chocolate ganache to use for toppings, frostings or fillings, as a truffle base, or for the best hot chocolate ever!

Quick and easy Chocolate Ganache

chocolate (chopped)

heavy cream

unsalted butter (optional, see Recipe Notes)

½ tsp pure vanilla extract (or another flavoring, optional, see Recipe Notes)

Use a serrated knife to chop the chocolate into small pieces. Put the chocolate in a heat-proof bowl (with butter, if using) and set aside.

Warm the cream in a heavy-bottomed saucepan to just simmering (small bubbles...NOT boiling).

Pour the cream onto the chocolate, cover and let sit for about 2 to 3 minutes, then start stirring. At first it will look grainy, but keep stirring until the mixture is smooth. Add any flavorings (if using) and stir again.

The ganache is ready to use as a drizzled frosting after cooling slightly, or as a filling when chilled and solid.

For a ganache frosting, allow the ganache to cool to room temperature. Use an immersion blender or a hand mixer to whip the ganache until it&#039;s thick, yet spreadable and lightened in color, about 4 to 5 minutes.

In a saucepan, over medium heat, add the blueberries, sugar, lemon juice, and half the water (1/4 cup). Cook on low to medium heat until all the sugar has dissolved. Use a vegetable masher to mash some of the fruit. Pro tip - Mashing will add a nice thicker consistency to the topping but make sure to leave some blueberries whole.

Combine the remaining water with cornstarch.  Add it to the blueberries. Continue to cook on low heat until the filling is thick and glossy.  When thick enough to coat the back of a wooden spoon or spatula it&#039;s ready.Pro tip - Cornstarch can settle to the bottom of the water. So, you must stir it just before adding it to the saucepan.

Remove and pour into a mason jar. Let cool completely or use as directed in your recipe. Pro tip - The filling will thicken as it cools so keep that in mind when you take it off the heat.

Blueberry Filling for Cakes, Pies, Tart, Dessert, Pastry

This quick and easy lemon curd recipe is sweet, bright and tangy all in one. It&#039;s the perfect ingredient to add to toast, fill cakes or cupcakes, add to waffles, or mix into whipped cream. This foolproof lemon curd uses full eggs to produce a thicker curd and a far less eggy taste. 

Easy Lemon Curd Recipe

eggs

sugar ((100 grams))

lemon zest

lemon juice (freshly squeezed)

unsalted butter (room temperature (85 grams))

Zest about two lemons until you have 3 tablespoons of zest.

Cut and juice the lemons until there is 1/3 cup of lemon juice - remove any seeds.

Cut the butter into tablespoon pieces and place a fine mesh sieve on top of a bowl.

Add the eggs, sugar, lemon juice and lemon zest to a medium saucepan over medium low to medium heat.

Whisk constantly until the curd thickens considerably and it just starts to bubble, about 5 minutes.

Transfer the curd to the fine mesh sieve and pass it through into the bowl using a rubber spatula or wooden spoon. Scrape the underside of the sieve to remove all curd.

Adding one tablespoon of butter at a time, whisk it in completely to combine before adding the next tablespoon of butter.

Cover the lemon curd with plastic wrap, placing the wrap directly onto the curd to prevent a skin from forming.

Chill for 1-2 hours before using or eating. Re-whisk before using.

Copycat Costco Vanilla Mousse

In a large bowl with a whisk attachment, whip cream cheese and powdered sugar until smooth and lump free, about 2 to 3 minutes.

Add in heavy cream, instant pudding, and vanilla, mixing to combine. Scrape the sides and bottom of the bowl to ensure nothing is sticking to the bowl.

Raise speed to medium-high and whip until the mixture thickens, about 2 to 3 minutes.

Cover the surface of the mixture with plastic wrap and refrigerate until ready to use.

This Mascarpone Cream is an eggless, creamy topping for any dessert that can be made in 15 minutes or less!!

Mascarpone Cream Recipe

(250 milliliters)whipping cream (full fat)

(250 grams) mascarpone

(10 milliliters)vanilla extract

Whisk the cream and powdered sugar until soft peaks form

In a small bowl, gently mix together the mascarpone cheese and vanilla.

Add mascarpone to softly whipped cream and continue to whisk until the mixture thickens and firm peaks form. Be careful not to over beat or the mixture could split.

Use immediately or refrigerate until needed.

Absolutely decadent, I could bath in this stuff!

This worked out great as a pancake topping and was easy to make with a stand mixer.

This was delicious! Added this to make a panettone cake with orange segments in each layer. Thank you so much! Worked perfectly.

This was amazing.  Followed the recipe to the letter--perfect frosting for olive oil cake.  Delicious!  A keeper, for sure.
