Easy Cake Mix Cookies are a fun way to mix and match cake flavors to add-ins! My kids LOVE to make these!

Cake Mix Cookies

(18.25 – ounce) box cake mix

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.

In a large bowl mix together cake mix, eggs, and oil until smooth. Alternately you can do this step in the bowl of your stand mixer with the paddle attachment, mixing ingredients on low until combined.

Mix in desired add-ins until evenly incorporated.

Using a medium (2- tablespoon) cookie scoop portion the dough onto the prepared cookie sheet 2- inches apart. Bake for 9-10 minutes, or until lightly golden at the edges.

Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack.

These Funfetti Cake Batter Pancakes will make a birthday shine or give an ordinary day a special start. A cake mix gives it that well-loved cake batter flavor, but these still have a wonderful pancake texture. And don't forget the buttercream glaze on top!

Funfetti Pancakes from a Cake Mix

all-purpose flour

baking powder

Pillsbury Funfetti cake mix ((15.25 ounces))

canola oil

2% milk

sprinkles

butter

half & half cream

In a large bowl, combine the flour, baking powder, sugar, salt and cake mix. Set aside.&nbsp;

In another small bowl, mix together the oil, eggs and milk.&nbsp;

Add the wet ingredients into the dry ingredients and mix just until combined. Fold in the sprinkles. Batter will be thick. (If you'd like thinner pancakes, you can add a bit more milk.)

Heat a griddle to about 250-275 degrees Fahrenheit (low heat so the pancakes do not burn). Spray the griddle with cooking spray. 

Ladle the pancake batter onto the hot pan and cook the pancakes for about 1-2 minutes or until bubbles start forming in the batter. Flip the pancake and cook for an additional minute or until cooked through.

This recipes makes about 22 5" pancakes.

In a small bowl, stir together the powdered sugar, softened butter, cream and vanilla. This frosting will be at a spreadable consistency.

&nbsp;If you'd like to drizzle the frosting, microwave the frosting for about 10 seconds and stir, then drizzle over the pancakes.

This Chocolate Italian Love Cake starts with a boxed cake mix for an easy dessert recipe that only looks fancy!

Easy Chocolate Italian Love Cake

pure vanilla extract

frozen whipped topping, thawed ((such as Cool Whip))

Preheat oven to 350 degrees F and spray a 9x13 inch pan with nonstick spray.

In a large bowl, mix together cake batter according to package instructions.

Pour the cake batter into the prepared baking dish. Spread to fill the pan evenly. Set aside (do NOT bake yet).

Prepare the Cake Batter:

In another bowl, use an electric mixer to beat together ricotta cheese, eggs, sugar, and vanilla extract until smooth.

Carefully pour the cheese mixture evenly over the top of the cake batter. Spread to cover cake as best you can (the layers will switch during baking).

Bake the cake for 1 hour.

Remove from oven and allow to cool completely before frosting.

Prepare the Filling:

To make frosting, whisk together pudding mix and milk until combined and slightly thickened (about 1-2 minutes). Carefully fold the whipped topping into the pudding until combined.

Spread frosting on top of cooled cake. Cover and refrigerate at least 6 hours before serving.

Preheat oven to 350 degrees. Spray a 9x13&quot; baking pan with non-stick cooking spray and set aside.

In a large bowl, dump in all three boxes of dry mixes (the 1 cake mix and the 2 corn muffin mixes). Add in the ingredients called for on the back of the cake mix box (usually 3 eggs, water, and oil). Now add in the ingredients called for on the back of each corn muffin mix (usually 1/2 cup milk and 1 egg per box).

Mix all the ingredients together until completely combined (but try not to over-mix). Pour batter into prepared pan and bake for 28-33 minutes or until a toothpick stuck into the center of the cake mix comes out clean.

Pillsbury Moist Supreme Classic Yellow cake mix

box Jello Butterscotch Instant Pudding and Pie Filling

oil (I use Canola)

rum (you can use less (I used Bacardi Puerto Rican Rum))

walnuts (chopped or nuts of your choice)

Toll House butterscotch morsels

Bacardi Puerto Rican Rum

In a mixing bowl combine eggs, milk, and oil and mix well.  Add cake mix, pudding mix, and rum; continue mixing. Fold in walnuts and butterscotch chips.  Spray cake pan with cooking spray.  Cook in preheated 350 degree oven for 50 - 60 minutes until toothpick inserted in center comes out clean.  Cool for 15 minutes in pan before removing. Add Frosting.

Cake Instructions:

Combine butter and butterscotch morsels in a glass dish and microwave on high until melted.  Remove and stir in 1 1/2 cups of the frosting. Return to microwave and heat just to pouring consistency.  Remove and stir in rum.  Can add more of the frosting until you get the right consistency to pour over cake.  (If you have frosting left over, cover and put in fridge. Heat and serve over individual cake slices)

Frosting Instructions

Our one grocery store used to sell Butter Rum muffins, then we moved.  The new store sells them, but they are terrible.  I made these only I subbed butter for oil and baked in a muffin tin with sugar on top.  Fabulous!  Thank you for this recipe.

This has quickly become a family favorite. I now make this cake for almost every holiday. It’s easy and sooo good!
