Making a California Burrito isn’t hard, but it does require some planning ahead of time. This includes marinating the Carne Asada, cooking the french fries, making the salsa, and the Creamy Guacamole prior to assembly.

marinate meat

Begin by marinating the Carne Asada for a minimum of three hours.

Prepare Creamy Guacamole then cover and set aside until needed.

Cook diced Carne Asada in a hot cast iron until slightly charred and cooked through.

Slightly char an extra large tortilla over a flame, to soften.

add ingredients

Smear tortilla down the center with creamy guacamole and sour cream.

Add cooked Carne Asada, and hot fries in the middle of the burrito.

cheese

Add shredded Mexican cheese, salsa (or pico de gallo), diced onion and cilantro.

roll

Roll tightly into a burrito and microwave for a minute (to melt the cheese).

For the Marinade:

oregano

garlic (finely minced)

limes (or 6 key limes)

Outside Skirt Steak

burrito-sized tortillas

For the Filling:

Refried Beans

frozen French fries

Sour Cream

shredded cheese

In a sealable plastic bag, add all the ingredients for the marinade and the skirt steak.

Seal the plastic bag.

Mix well to coat the meat.

Marinate for a minimum of 4 hours.

Overnight is best.

Grill meat to desired doneness.

6-8 minutes on each side for medium-rare.

Let rest for 10 minutes before slicing.

Slice the meat as thinly as possible.

Bake french fries as per package instructions.

Warm up the tortillas.

To the center of the tortilla:

Add a layer of refried beans.

Top with a healthy portion of the sliced grilled meat, french fries, sour cream, guacamole, salsa, and cheese.

Roll up the burrito.

Slice in half.

Serve with extra salsa or guacamole.

A California Burrito is a real San Diego treat. Grilled carne asada with french fries and all the fixings wrapped inside. It is incredibly tasty and absolutely delicious.

This California Burrito Recipe is loaded with marinated and grilled steak, homemade guacamole, French fries, pico de gallo, and cheese.

California Burrito Recipe

Skirt Steaks

oz Light Beer

Limes (juiced)

Cilantro

Soy Sauce

tbsp Ground Cumin

Garlic Powder

tbsp Black Pepper

tsp Cayenne Powder

Large Avocados

Red Onions

⅛ tbsp Chopped Cilantro

Limes

Tortilla

French Fries

Pico De Gallo

Monterey Jack Cheese

Sour Cream (for garnish)

Begin adding all the ingredients for the marinade into a food safe bowl or bag. Mix together thoroughly, then add your steaks into the marinade. Place in the fridge and let marinate for at least 4 hours but ideally overnight.

Preheat your grill to high heat (around 400F) for direct cooking.

Pull your steaks out of the marinade and discard the excess marinade. Grill them over high heat for 2-2.5 minutes per side until 120F internal. Once done, pull the steaks off and let rest for 10 minutes.

While the steaks rest, mix together all the ingredients for your guacamole in a bowl and set to the side. Finally, toast your tortillas over the flames for about 30 seconds per side to warm them up.

When the steaks are done resting, slice it up against the grain and into small bite size pieces. Next, start building your burritos with a warm large tortilla and layers of guacamole, handful of chopped steak, pico de gallo, handful of fries and shredded cheese. Roll nice and tight and repeat until you have made as many burritos as you like. Add the burritos to the skillet/plancha over the fire to crispy for about 1 minute per side. Once done, pull off the burrito and serve hot.

Slice the burritos in half if you desire, serve with the sour cream on the side and enjoy!
