Chicken and haloumi skewers with crispy oregano and lemon

chicken breast fillets,

lemon juice

sea salt and cracked black pepper

extra virgin olive oil

haloumi,

oregano

lemon

natural Greek-style (thick) yoghurt, to serve

The spice of red chillies is mellowed out by avocado salsa in this wonderful vegetarian canapé recipe.

Sweetcorn cakes with avocado salsa

plain flour

tsp baking powder

coriander,

sweetcorn kernels

red chillies, deseeded and finely chopped

vegetable oil

avocado,

onion

Juice of ½ lime

Place the flour in a food processor with the egg, baking powder, half the coriander and half the corn. Whizz briefly, then stir in half the chilli and the remaining corn. Heat the oil in a large, non-stick frying pan and drop in teaspoonfuls of the corn mixture. Fry for 1 minute each side, until golden, then drain on kitchen paper while you cook the rest.

Combine the avocado, remaining chilli and coriander, onion, lime juice and some seasoning together in a bowl.

Arrange the corn cakes on platters and top each with a scant teaspoonful of salsa. Garnish each one with a sprig of coriander and serve immediately.

These polenta, olive and sesame cubes make great little snacks or canapés. If you&#8217;re entertaining, you can prepare them well ahead of time.

Polenta, olive and sesame cubes with caramelised peppers

pitted black olives

pitted green olives stuffed with red pepper

fresh flatleaf parsley, leaves chopped

Parmesan, grated (or vegetarian alternative)

vegetable stock

quick-cook polenta

sesame seeds

caramelised peppers (try The Bay Tree from Waitrose)

Grease a 27.5 x 17.5cm tin with a little olive oil.Place the olives and parsley into a food processor and blitz until roughly chopped but not smooth. Spoon into a bowl, mix in the Parmesan and set aside.

In a large saucepan, bring the stock to the boil, whisk in the polenta and reduce the heat to low. Simmer, stirring, for 5 minutes until thick and less grainy. Remove from the heat, stir in the olive mixture and tip into the prepared tin. Set aside for 20 minutes to cool and set.

Turn the polenta slab out onto a board. Cut into 20 equal-sized pieces. Put the sesame seeds into a bowl and use to coat the polenta cubes all over. Place on a foil-lined baking tray and grill for 5 minutes, turning once until lightly golden. Serve warm or cold with caramelised peppers.

This tamarind duck and herb salad served on mini poppadums makes a classy canapé recipe &#8211; they are perfect for a cocktail party.

Tamarind duck on mini poppadums

tbsp palm sugar or molasses sugar

soy sauce

tamarind paste or lime juice

duck

beansprouts, trimmed of any brown bits

½ cucumber, peeled into thin ribbons

ginger,

green chilli, deseeded and finely chopped

mini

Combine the palm or molasses sugar, soy sauce and tamarind paste or lime juice in a small jug. Set aside.

Mix the remaining ingredients, except the poppadums, together in a bowl.

To serve, toss the dressing into the salad. Pile a teaspoonful onto each poppadum and serve immediately to prevent the poppadums from softening in the dressing.
