Candied Lemon Slices are super easy and a delicious way to decorate your favorite lemon foods.  These lemon slices are so good you may just eat them before they get a chance to be decoration!

Candied Lemon Slices

lemons (sliced thin)

Wash and dry the lemons. Using a very sharp knife, slice them as thin as possible, removing the seeds as you go. If you have a mandolin, this will get your slices very thin and even.

In a wide pot or deep, wide pan, add the water and the sugar. Stirring frequently, bring to a boil. Once all the sugar has dissolved, reduce heat to low and simmer. Add the lemon slices and keep the spread out in the simple syrup.

Simmer the lemon slices for about an hour, unil the rind and pith start to turn translucent. Once translucent, remove them from the syrup onto a parchment lined sheet pan

You can air dry the lemons for about 24-48 hours, flipping them over halfway through but they will still remain sticky to the touch. Another option is to set your oven as low as possible and let the lemons dry in the oven, which will result in less sticky candied lemons. Check them and flip  them frequently so they don’t burn. If they begin to get dark or turn brown, remove them from the oven. They will require a good 1-2 hours in the oven to fully dry.

Once finished, you can use your candied lemons as a garnish for desserts, or simply eat them plain. The syrup may be saved and used to flavor drinks, or discarded.

These candied lemon slices are incredibly EASY to make. They make the most beautiful edible garnish for desserts like cakes, pies, or cupcakes, AND can be eaten just like a piece of candy!

1. Wash your lemons well. Slice them as thin as possible. Consider using a sharp knife or . Set aside.

2. Combine water and sugar in a medium saucepan. Bring to a boil and cook just until the sugar is dissolved.

3. Add the lemon slices.

4. Simmer until the lemon slices are translucent, roughly 30 to 40 minutes.

5. Remove with a slotted spoon and place on parchment. Allow the lemons to cool and dry completely, overnight preferred.

How To Make Candied Lemon Slices

This simple 2-ingredient recipe shows the simplest method for making caramelized lemon using either an instant pot or rice cooker. With a bottle kept in your fridge, you can effortlessly whip up a refreshing iced caramel lemonade or a comforting hot sweet lemon tea in under a minute.

Wash the lemons thoroughly. Slice the lemons into ¼-inch thin slices. Remove any seeds from the slices. (The syrup may get a bitter taste if you don&#39;t remove lemon seeds.) Weigh the lemon slices, and prepare the same weight of raw cane sugar (or granulated sugar). For instance, if you get 500g of lemon slices after deseeding them, measure out 500g of sugar to cook with the lemons.

In either an instant pot or a rice cooker, arrange the lemon slices in layers, sprinkling each layer with sugar. Repeat the layering process until all the lemon slices and sugar are utilized. Do not add any water to the pot.

Place the lid on the pot. If using an instant pot, cook on low pressure for 40 minutes, then switch to the &quot;warm&quot; mode for an additional 2.5 hours. If using a rice cooker, choose the porridge mode (or regular rice mode if porridge mode is unavailable) and cook for 40 minutes, then switch to the &quot;warm&quot; mode for an additional 2.5 hours.

Following the cooking process, remove the lid from the pot and allow the lemon syrup to cool to room temperature. You can either use it immediately to prepare drinks or transfer it to a sanitized glass jar. Seal the jar tightly with a lid and refrigerate for up to 6 months.

To make a quick and refreshing lemonade, simply add a slice of caramelized lemon and 1 to 2 tablespoons of the syrup to a glass filled with ice. Then, fill the glass with sparkling water or still water. Alternatively, enhance your favorite iced or hot tea by incorporating the lemon slices and syrup for a delightful sweet and sour lemon tea experience. In a large saucepan over high heat add the sugar, water and lemon juice. Bring to a boil.

Add the lemon slices, then turn the heat to a simmer (medium-low). Simmer gently for 40 minutes, or until the slices are translucent and the liquid has reduced considerably.

Transfer the candied lemon slices to parchment paper and arrange in a single layer. Allow the lemon slices to dry overnight or at least 8 hours before enjoying or storing.

This is a smart way to use up a big bag of lemon from Costco. I now have tons of candied lemon in the freezer, ready to be added to tea or cakes.
