These Carne Asada Tacos are the perfect go-to dinner when you need to get delicious dinner on the table fast. They&#39;re seasoned with my awesome Fiesta Rub and kept nice and simple for an easy taco that the entire family will love.

Preheat the grill.

Preheat the grill. Preheat the grill. Preheat your gas or charcoal grill for High heat grilling (450-500 degrees F).

Season the steak.

Season the steak. Season all sides of the steak with avocado oil. Pat to evenly distribute. Next, season liberally on both sides with Fiesta Rub.

Marinate the steak.

Marinate the steak. Squeeze the lime juice over the steak and place it in a gallon-sized zip-top bag for at least 2 hours or overnight. If you are planning on grilling right away, skip this step.

Grill.

Grill. Grill the seasoned steak for 2-3 minutes per side. If you did not marinate the steak, squeeze the lime juice over the top of the steaks as they are on the grill. Remove the steak when it has reached an internal temperature of 130-135 degrees F (for medium-rare steak).

Rest and slice.

Rest and slice. Rest the steak for 10 minutes. While the steak is resting, prepare the toppings for the carne asada tacos. Chop the steak into bite-sized pieces.

Assemble the tacos.

Assemble the tacos. Place the tortillas on the grill for approximately 30 seconds per side. Remove the tortillas, and add your chopped steak and preferred toppings (I like lime juice, cilantro, diced onions, and queso fresco cheese).

Grill

Grill the carne asada until it's cooked to your preference. Slice it against the grain, then chop it into small pieces.

Mash and Garnish

Use a spoon to mash the avocado and spread a large spoonful or two onto each tortilla. Then, top the avocado with chopped carne asada, a sprinkle of cotija cheese, some diced onion and fresh cilantro. Squeeze fresh lime juice on top.

Carne asada tacos are delicious, flank steak tacos with a few simple ingredients and tons of flavor. Just add some avocado, onion, cotija cheese and cilantro to the grilled steak for authentic carne asada tacos, similar to the street tacos you'd find in Mexico.

Outdoor grilling: To grill the tacos, heat an outdoor grill for direct, medium-high heat. Oil the grill grates with a paper dipped in vegetable oil. Add the onion rings in a single layer and grill uncovered until charred in spots and tender, flipping halfway through, about 5 minutes total. Transfer to a clean cutting board. Oil the grates again. Add the steak and grill uncovered until browned, charred in spots, and the center registers 128ºF for medium rare or 135ºF for medium, flipping halfway through, 9 to 10 minutes total. Transfer to the cutting board.Storage: Leftover steak and onions can be refrigerated in an airtight container for up to 4 days.

Step 1

Prepare the following ingredients, adding each to the same 2-quart baking dish or large ziptop bag as it is completed: Using a vegetable peeler, remove the peel from 1 large orange and 2 medium limes. Juice the orange until you have 1/2 cup (juice the second orange if needed). Juice the limes until you have 1/4 cup. Finely grate 4 garlic cloves. Coarsely chop the stems from 1 bunch cilantro until you have 1/2 cup. Add 1/2 cup chipotle salsa and stir to combine.

Step 2

Slice 1 small red onion into thin rounds and add to the marinade. Add 1 1/2 pounds flank steak and turn to coat. If marinating in the baking dish, pile some of the marinade and onions on the top of the steak; cover the baking dish with plastic. If marinating in the bag, press out the excess air and seal the bag. Refrigerate for at least 1 and up to 4 hours, flipping the steak halfway through.

Step 3

Heat a cast iron grill pan or 12-inch skillet over medium-high heat for at least 5 minutes. Meanwhile, transfer the onion rings from the marinade to one side of a plate or baking sheet. Transfer the steak to the other half of the plate; discard the remaining marinade. Brush off any aromatics that are stuck on the steak and onions. Season both sides of the steak with 2 teaspoons kosher salt and 1 teaspoon black pepper. 

Step 4

Drizzle 2 tablespoons of the canola oil into the pan. Add the onions and cook, stirring occasionally, until charred and tender, about 5 minutes. Push the onions to one side of the pan and place the steak on the other. Cook undisturbed until the bottom of the steak is dark golden brown and charred in spots, about 4 minutes. Transfer to a clean cutting board browned-side down.

Step 5

Add the remaining 2 tablespoons canola oil to the pan. Return the steak to the pan browned-side up and sear undisturbed until desired doneness, an internal temperature of 128ºF for medium-rare, 4 to 5 minutes, or 135ºF for medium. Return to the cutting board and let rest about 10 minutes. Meanwhile, prepare the remaining ingredients.

Step 6

Pick fresh cilantro leaves until you have 1/4 cup. Warm 8 tortillas one at a time by holding them directly over a medium flame on a gas stove, or in a skillet over medium heat on an electric stove, flipping occasionally, until charred in spots and pliable. (Alternatively, wrap the stack of tortillas in a damp paper towel and microwave until warm, 20 to 25 seconds.) Stack together and wrap in a clean kitchen towel or aluminum foil to keep warm. 

Step 7

Cut the steak across the grain into 1/2-inch thick slices. Cut any long slices of steak crosswise to fit into the tortillas.

Step 8

To assemble a taco, spread 1 tablespoon crema or sour cream on a tortilla. Top with a few slices of steak, a few pieces of onion, 1 tablespoon pico de gallo or salsa fresca, 1 generous sprinkle of Cotija cheese, and some cilantro leaves.

corn tortillas, (warmed (or flour tortillas))

other optional toppings:

In a medium bowl, whisk together all of the ingredients except for the steak.

Place the steak in a large baking dish or gallon size ziplock bag and pour the marinade on top. Turn the steak a few times until it&#039;s completely coated with the marinade and refrigerate for 2 to 4 hours. Do not marinate for longer than 8 hours because the meat will start to break down and get mushy due to the acidity in the marinade.

Remove steak from marinade and discard any excess marinade. Pat steak dry with paper towels and drizzle with a touch of olive oil, enough to coat each side. Season lightly with coarse salt and black pepper on both sides.

Preheat grill (or grill pan) to medium-high heat (400-450°F). Grill steaks with the lid closed for 4-8 minutes per side, depending on the thickness. Skirt steak will be closer to 4 minutes per side and flank steak will be closer to 6-8 minutes per side.

Remove steaks and allow to rest for 5 minutes. Slice into bite-sized chunks for easy eating in tacos.

For the carne asada marinade

Place a heaping spoonful or two of carne asada onto warm tortillas.

Top with diced onions, chopped cilantro, crumbled cotija cheese and a spritz of fresh lime juice.

Serve with more of your favorite toppings like guacamole, pico de gallo and salsa if desired.

Carne Asada Skirt Steak Tacos Recipe

Marinate

Place all marinade ingredients in a large gallon sized bag. Mix together.&nbsp;Add the steak to the marinade. Mix again. Seal tight, and place in a large bowl and place in the refrigerator for a minimum of 2 hours, we cap at 6 hours to maintain the beef flavor.

Prepare Grill

Heat grill nice and hot, and prepare for direct cooking. Target 450 to 500 degrees Fahrenheit over direct grilling.

Season

Remove the steak from the bag and pat dry (don&#39;t worry about removing pieces of the onion or garlic). Discard any extra marinade. Liberally season your steak on both sides with your dry rub. 

Place on grill for direct cooking. Grill approximately 3-4 minutes per side (this will depend on size of your steak). It&#39;s always best to check your temperature with a digital thermometer. We like 125 for rare, and also 135 for medium rare. *see notes Remove from heat. 

Slice against the grain, and serve as a filling for tacos or burritos.

Carne Asada -- Skirt Steak Tacos

Carne asada is soaked in a super flavorful marinade then perfectly grilled, chopped and added to tortillas with all your favorite toppings.

Corn tortillas

Monterey Jack or crumbled Queso Fresco

Pico de Gallo

Chopped cabbage or lettuce (, optional)

Lime wedges (, for juicing)

Hot sauce (, optional)

In a mixing bowl, stir together olive oil, lime juice, orange juice, apple cider vinegar, honey, red onion, cilantro, garlic, jalapeno, chili powder, cumin, paprika and season mixture with salt and pepper to taste. Place flank steak in a baking dish and pour marinade over steak. Cover with plastic wrap and allow to marinate in refrigerator 2 - 5 hours, rotating once halfway through marinating.

Brush a grill lightly with oil and heat grill to medium-high heat. Remove steak from refrigerator. Lift steak and allow excess marinade and bits to run off, season with salt and pepper to taste and transfer to grill. Cook about 5 minutes per side, or until desired doneness (could be more or less depending on how thick your steak is and if you like it medium rare or more well done).&nbsp;

Transfer to a plate or clean baking dish, cover with foil and allow to rest 5 minutes. Cut into thin strips and serve over warm tortilla shells along with desired toppings. Serve immediately.

Season steak on both sides with salt and pepper.

In a mixing bowl, stir together the marinade ingredients.&nbsp;

Place flank steak in a  bowl or large ziplock bag and pour marinade over steak. 

Seal/cover and refrigerate, allowing the steak to marinade for 2 - 5 hours. Remove steak from the refrigerator 20 minutes before grilling.

Heat grill to high and brush the grill grates lightly with oil. Lift steak from the bag of marinade, allowing excess marinade to drip off.&nbsp;

Place steak on the grill and cook for about 3-5 minutes per side, or until desired doneness (depending on whether you like yours medium rare or well done). 

Transfer steak to a cutting board, cover with aluminum foil and allow to rest 5 minutes. Cut the steak, against the grain, into very, very thin strips.

Warm corn tortillas on a hot dry skillet. Top with steak, pico de gallo, sliced avocado and hot sauce , if desired.

Carne Asada Fajitas

Begin by trimming any excess fat and silver skin from the skirt steak to ensure optimal flavor and texture.

Generously season the skirt steak with salt, pepper, and garlic, ensuring an even coating on all sides. 

Place the seasoned steak in the refrigerator for at least two hours to allow the flavors to fully penetrate the meat.

As the marinating process unfolds, prepare a grill and heat it to a temperature of 400°F-500°F for hot and fast grilling.

Once the grill is hot and ready, clean the grates and carefully place the skirt steak on the grill.

Flip the steak often during cooking to retain moisture and achieve a beautifully charred exterior on both sides.

Cook the steak to your desired level of doneness aiming for an internal temperature of 140°F for medium doneness.

Once cooked to perfection, remove the steak from the grill and let it rest for 5 minutes to allow the juices to redistribute.

After resting, slice the steak against the grain to ensure tenderness and maximum flavor.

Serve the slices of carne asada on corn tortillas (you can heat them on the grill!) accompanied by freshly prepared pico de gallo and creamy guacamole.
