This healthy Cauliflower Alfredo Sauce turns cauliflower into creamy and delicious pasta sauce with the addition of roasted garlic and Parmesan! Use nutritional yeast in place of cheese for a vegan option.

Cauliflower Alfredo Sauce

cauliflower head (4 cups of florets)

garlic

broth

Parmesan cheese ((see note))

salt and pepper (to taste)

Cut cauliflower into florets. Place in a large pot and fill with water or broth or an equal mix of both. Cook the cauliflower until tender.

Remove from water and place on a large baking sheet. Let cool slightly before blending.

Place cauliflower, roasted garlic cloves, half of a cup of the cooking water or broth and cheese in a blender. Blend until smooth. Add more liquid if your sauce is too thick to your likings.

Taste the sauce and add salt and pepper to taste.

Use the sauce right away or pour into a jar. Cover and refrigerate until ready to use.

Healthy Roasted Garlic Cauliflower Alfredo Sauce Recipe

Healthy chicken broccoli pasta recipe with smooth creamy cauliflower alfredo sauce. Packed with fiber, vegetables and protein making a great one dish meal.

Pasta with Cauliflower Alfredo Sauce

vegetable broth

cauliflower florets (1-inch pieces)

olive oil (divided)

garlic (minced)

kosher salt (plus

black pepper (plus more for seasoning)

whole milk (or nondairy milk)

Parmesan cheese (freshly grated)

chicken breast (pounded to ½-inch thickness)

paprika (to season chicken)

pasta (about 2 ½ cups)

broccoli florets

Bring the vegetable broth to a boil in a large pot. Add the cauliflower and reduce to a simmer. Cook covered, until fork tender, about 7 to 10 minutes.

Use a slotted spoon to transfer the cauliflower pieces to the blender. Add 1 cup cauliflower cooking liquid.

Heat a large pan over medium-low heat. Add 2 tablespoons olive oil, once hot add minced garlic. Sauté until the garlic is soft and fragrant but not browned, 2 to 3 minutes. Transfer garlic and oil to blender. Save pan to cook the chicken.

Add 1 teaspoon salt, ¼ teaspoon pepper, and milk to blender. Blend on high for 30 seconds until the sauce is very smooth, adding more liquid or milk depending desired thickness.

Add Parmesan cheese and puree until smooth, 30 seconds. Adjust seasonings and add more cheese if desired.

Cauliflower Sauce

Season both sides of chicken breasts with salt, pepper, and paprika.

Heat a large pan over medium-high heat. Add 2 tablespoons olive oil, once hot add the chicken. Cook for 5 minutes, flip and cook 3 to 5 minutes until cooked through and internal temperature reaches 160-165°F. Transfer to a cutting board. Cut into ½-inch cubes and set aside.

Cook pasta according to manufacturer&#039;s directions. Remove shells once cooked and transfer to a large pan with high sides. Do not discard water!

Cook broccoli in boiling pasta water for 1-2 minutes, until bright green and tender, drain.

Add about 2 cups of the cauliflower sauce to the pasta, stir to combine. Add more sauce as desired. Top with diced chicken, broccoli and parmesan cheese.

Cauliflower Alfredo Sauce with Chicken & Pasta

Creamy, savory, and full of so much flavor, you&#39;ll love this Healthy Chicken Alfredo recipe made with cauliflower sauce! It&#39;s so delicious, you&#39;d never even guess that it&#39;s a healthy recipe. And it&#39;s a great way to sneak in extra veggies! Make this pasta recipe in about 35-40 minutes for a comforting dinner idea that the entire family will love.

Healthy Chicken Alfredo (Cauliflower Sauce)

chicken broth

cauliflower florets (about 1 medium head)

oregano

basil

thyme

salt

pepper

shallot,

Tablespoons butter

chicken breasts (about 2 large,)

avocado oil (or any cooking oil)

milk (regular

parmesan cheese

whole wheat fettuccine

Boil Broth

Bring the chicken broth to a boil in a pot or dutch oven over medium-high heat.

Cook Cauliflower

Add in the cauliflower florets and let simmer (covered) for 9-10 minutes, or until  fork-tender.

Let Cool

Mix Seasoning

Mix the oregano, basil, thyme, salt, and pepper together in a small bowl. Set aside.

Sauté Shallot &amp; Garlic

While the cauliflower is cooling, sauté the shallot and garlic with 2 Tablespoons of butter in a large skillet or sauté pan for about 2-3 minutes.

Place Cauliflower, Shallot, &amp; Garlic in Blender

Place the cooked cauliflower, broth, cooked shallot, and cooked garlic in a blender.

Add Seasoning

Blend

Make the Cauliflower Sauce

Coat Chicken With Seasoning

Coat the chicken breasts in the remaining seasoning on both sides.

Cook Chicken

Using the same sauté pan that was used earlier, heat the avocado oil over medium-high heat and cook the chicken for about 7-8 minutes on each side (or until fully cooked). Remove the chicken and set aside.

Cook the Chicken

Cook Pasta

While the chicken is cooking, use the same pot from earlier to cook the pasta according to directions. Drain and set aside.

Cook the Pasta

Melt Butter in Pan

Add the remaining 1 Tablespoon of butter to the pan and melt over medium heat.

Add Cauliflower Sauce

Pour the cauliflower mixture into the pan and whisk.

Add Milk &amp; Cook

Slowly add in the milk and cook for 2-3 minutes (or until sauce begins to reduce slightly).

Add Parmesan

Remove from heat and add in the parmesan. Continue to whisk until the sauce thickens and has a fairly smooth texture.

Add Pasta

Add in the cooked pasta and stir to coat evenly.

Add Chicken

Top with sliced, cooked chicken (or cube the chicken and mix it in).

Deliciously creamy vegan cauliflower Alfredo pasta sauce - ready in minutes and full of delicious plant goodness!

Vegan Cauliflower Alfredo Sauce

cauliflower

brown onion (chopped)

garlic cloves

tsp sea salt

tsp black pepper

yeast

vegetable bouillon cube

100 ml drained pasta water

70 ml plant milk

tsp smoked paprika powder

tbsp sweet white miso paste

tbsp refined coconut oil (deodorised)

Prepare your pasta according to packaging instructions. In the meantime, cook the onion and garlic in a little oil until translucent.

Cauliflower

Cut the cauliflower into florets and steam them until softened. You can use the stem too in this recipe.

Blending

Transfer cauliflower, onion and garlic to a blender with the remainder of the ingredients. Blend until smooth.

Serving

Transfer the sauce to a medium size saucepan to heat through, combine with your pasta, season to taste with salt &amp; pepper and serve hot.
