Brazilian cheese bread, or pão de queijo as we call them in Portuguese, are a true gift to the universe! This typical Brazilian snack is lightly crunchy on the outside, soft and chewy on the inside, and has a cheese flavor just hugs your mouth. This Brazilian cheese bread recipe is easy to make and yields about 30, so you can make a stash for now, and freeze the rest for later.

Parmesan cheese

Queso Fresco, crumbled

full fat milk

vegetable oil, (plus 1 Tbsp for oiling your hands)

eggs

lb tapioca flour (also known as tapioca starch)

tsp kosher salt

Preheat oven to 350F.

Add the tapioca flour and the salt to a large bowl, whisk to combine and set aside.

In a medium bowl, combine the cheeses and the eggs and set aside.

Add the milk and the oil to a small saucepan and bring to a simmer on stove top over medium heat.

When the liquid simmers, remove the pan from heat, and immediately pour the hot liquid into the tapioca mixture and using a wooden spoon, stir to combine - the mixture will not be homogeneous, it&#039;ll be gummy and clumpy. See step by step images above for reference.

Wait 5-10 minutes until the tapioca mixture is cool to touch, and only then add the cheese and egg mixture to the tapioca mixture. Mix with a wooden spoon, or your hands to combine. Now you should have a homogeneous mixture and it should come together as a ball. You&#039;ll still see some white tapioca specks in the dough - don&#039;t worry, that&#039;s totally normal!

Prepare the Dough:

Oil your hands, then scoop a Tbsp to 2Tbsp size portions, roll them into balls, and arrange them in a baking sheet approximately 2&quot; apart from one another. *For freezing instructions see section below!

Bake until golden brown, approximately 30-35 minutes.

Roll the Little Balls:

To freeze your Brazilian cheese bread for later, follow all steps up until rolling the little balls and placing them the baking sheet. Then, just place the baking sheet in the freezer for 15 minutes for the balls to set (just enough for them to hold their shape).

When the balls are set, you can place them in a freezer safe ziplock bag and freeze for up to 3-4 months.

To bake them, no thawing needed! Just preheat the oven to 350F, then arrange the little frozen balls in a baking sheet about 2&quot; apart from one another and bake until golden brown - approximately 40-45 minutes.

Blue Cheese Dip:

mayonnaise

blue cheese (crumbles)

Worcestershire sauce

Mix the chicken, hot sauce, pepper, Cheddar cheese and green onions together in a bowl.

Form the mixture into 1-inch balls with a scoop.

Place the formed balls on a parchment paper lined cookie tray and chill in the refrigerator.

Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).

Place flour, eggs, and bread crumbs in 3 separate bowls.

Roll each ball in the flour, then the egg, and then the bread crumbs.

Fry the breaded balls in the hot oil until slightly browned, about 1-2 minutes per batch.

Remove to a paper towel lined plate to drain the excess oil.

To make blue cheese dip: combine mayonnaise, blue cheese, hot sauce, Worcestershire sauce, salt, lemon juice, and garlic in a large bowl. Adjust the seasoning if necessary.

Serve with blue cheese dip.

Cheese Balls | Easy Potato Cheese Ball Recipe

Boil potatoes in a steamer or pressure cooker or an electric cooker. Boil the potatoes till they are completely cooked. You can even steam the potatoes in an Instant Pot for 7 to 8 minutes.

When the potatoes become warm, peel them and mash very well in a mixing bowl. Allow the potatoes to come at room temperature before you add the remaining ingredients.

Grate 60 grams cheese and keep aside. In cup measurement, the amount is ½ cup tightly packed grated cheese. 

You can use either cheddar cheese or processed cheese. If using amul processed cheese, then use 3 cubes.

Preparation

To the mashed potatoes, add black pepper, crushed or black pepper powder, cumin powder, a pinch of garam masala (optional) and chopped coriander leaves or parsley leaves.

Add gram flour (besan). You can also add all purpose flour or cornstarch (corn flour).

Mix very well.

Then add the grated cheese and two pinches of black salt. Add salt accordingly as cheese already has salt. You can even add rock salt or regular salt instead of black salt.

Mix the cheese with the rest of the potato mixture very well. Check the taste and add more salt or crushed black pepper if required.

Make small balls from the mixture and make one tiny ball to test while frying.

Making cheese ball mixture

Heat oil for deep frying in a kadai or pan.

When the oil becomes hot, add the tiny cheese ball. The temperature of oil can be from 180 to 190 degrees celsius.

The oil has to be hot, otherwise the cheese balls may break.

When the tiny cheese ball, does not break, then you can easily fry the other balls. If it breaks, then you have to add 1 to 2 tablespoons gram flour or chickpea flour to the mixture again. Keep the same temperature while frying by increasing or decreasing the heat.

Add the remaining potato cheese balls.

With a slotted spoon, turn over when the balls get to become golden.

Fry them till they are evenly golden all over and crisp.

Once fried well, place them on kitchen paper towels to remove excess oil

Serve hot with tomato ketchup or coriander chutney or mint chutney or any dip of your choice. For best taste serve them hot as soon as they are prepared.

Cheese Balls are an easy-to-prepare, tasty snack made with potatoes and cheese. Making cheese balls can be a challenge as they often break in the oil, but this fail-proof recipe will give you the perfect cheese ball every time.

These cheesy little carrot and cheddar bites are the perfect finger food for a vegetarian party buffet - or just a mid-afternoon snack!

Carrot and Cheddar Bites

g bread ((~ 2 medium slices))

100 g cheddar cheese, (grated (~ 1 cup when grated))

tsp smoked paprika

Salt

Black pepper

Use a food processor to blitz the bread into breadcrumbs (or just crumble it finely if you don't have a food processor).

Add the breadcrumbs to a mixing bowl, along with the grated carrot and grated cheese. Mix to combine.

Add the remaining ingredients (apart from the oil), and mix thoroughly.

Use clean hands to shape the mixture into balls - I ended up with 15 balls in total. Place them on a well oiled baking tray, and bake at 190°C (Gas Mark 5 / 375°F) for around 30 minutes, or until crispy and slightly browned.

These 4-ingredient fried cheese balls are melty on the inside and crispy on the outside. Easy to make and incredibly tasty!

Vegan Fried Goat Cheese Balls

raw cashews

capsules vegan probiotics

tsp salt

water

1 and 1/2 tsp psyllium husk powder (optional)

breadcrumbs

neutral oil

Soak overnight. Add the cashews to a large bowl and cover with cold water. Let the cashews soak overnight or for at least 8 hours.

Drain. Rinse the soaked cashews and drain them well using a colander.

Blend. Transfer the soaked cashews to a blender or food processor and add 1/4 cup of water. Blend on high speed, scraping down the sides from time to time until it forms a very thick and smooth cream. This step might take up to 3 minutes.

Add the salt and cultures. Open the probiotic capsules and add the powder to the blender. Add the salt and process for another 15-20 seconds.

Make the cream cheese

Transfer to a bowl. Once your cashew cream is smooth, transfer it to a clean glass bowl and cover it with plastic wrap touching the top of the cream (this will prevent it from forming a skin on top.)

Let it ferment. Allow the cashew cream to ferment for about 24 hours at room temperature in a dark place. After one day, taste the cream to see if it’s sharp enough for your taste. If it’s tangy enough, transfer it to the refrigerator for another day. This step will help firm up the cream, making it easier to handle later. Note: it may take up to 48 hours for the cashew cream to culture, depending on the temperature of your home.

Add the psyllium husk (Optional). Dilute 1 and 1/2 teaspoon of psyllium husk powder in 2 tablespoons of water. Next, transfer the psyllium gel to a food processor and add the fermented cashew cream. Process for 10-15 seconds or until fully combined.

Let it ferment

Set up your workstation. Place the breadcrumbs inside a deep plate and line a baking sheet with parchment paper. Remove the cashew cream cheese from the refrigerator.

Coat with breadcrumbs. Scoop out about 1/4 cup of the cashew cream cheese and form a ball using slightly wet hands (to prevent the cream from sticking to your hands). Transfer the ball to the plate containing the breadcrumbs and roll it to coat it completely. Transfer the cheese ball to the prepared baking sheet.

Repeat. Repeat with the remaining cashew cream cheese.

Coat with breadcrumbs

Heat the oil. Heat about 3 inches of oil to 350°F (175°C) in a deep pot. Set a large plate topped with some kitchen paper towels on the side.

Deep-fry. Using a spoon, place a few cheese balls into the oil. Work in small batches (3-4 at a time). Fry the cheese balls for about 1 minute or until golden brown. Use a slotted spoon to remove the balls from the oil and transfer them to a plate lined with kitchen paper towels to remove the excess oil. Repeat with the remaining cheese balls.

Let cool. Allow the cheese balls to cool for a few minutes before serving.

These fried cheese balls can be stored in the refrigerator for up to 4 days. Remember that since they contain cultures, their flavor will get sharper over time.

Hi! While I’m waiting fir my Camembert to age (omg omg today the fluffy mold started showing up properly, I’m so psyched!), I decided to try this recipe!

Quick question, since I wanted to start fermenting tonight, is there a substitute for soaking the cashews overnight? Boiling them? Or would that interfere with the consistency / fermentation process?
