An easy recipe for deep fried cheese curds for anyone not fortunate enough to live in or near Wisconsin. These crispy little bites are legendary in America’s Dairyland!

vegetable oil (or corn oil,

all-purpose flour

milk

beer (preferably dark,

eggs (beaten)

salt

cheese curds (separated)

Ranch dressing (for serving, optional)

In a large saucepan or deep fryer, heat oil to 375 degrees.

In a large bowl, whisk together flour, milk, beer, eggs, and seasoned salt. The batter will be light and thin.

Working with 6 or 8 cheese curds at a time, add to batter, toss to coat, and remove with a wire strainer. Shake them to remove excess batter.

Drop the curds into the hot oil one at a time and fry until golden brown, about 2 to 3 minutes. Drain on paper towels and serve immediately with ranch dressing if desired.

Pulled Pork Poutine with BBQ Gravy

Wash the potatoes and cut into french fry sized sticks.

In a small pot or saucepan whisk together the gravy and bbq sauce. Warm the bbq gravy on medium heat.

Heat the pulled pork in a cast iron skillet on medium heat. Stir often. The pork will start to brown in some spots and crisp up a little bit.

Heat oil in a deep fryer to 350F. Add the potato sticks, in batches, to the hot oil. Fry until the french fries are cooked through and crispy on the outside. Drain and toss with a little salt.

Make the poutine by stacking some french fries on a plate. Spoon some pulled pork on the fries and top with cheese curds. Pour some gravy on top and serve immediately.

Cheese Curds...the BEST thing to ever happen to cheese.  These ooey-gooey bite-sized appetizers will literally fly out of the bowl. 

Cheese Curds

(187.5 g) all-purpose flour

baking soda

garlic salt

egg, (room temperature)

canola oil, (or more depending on the size of your pan)

Heat oil.

Heat oil to 375 °F.  Use a thermometer to continually monitor the heat of the oil.

Whisk together batter.

Whisk together buttermilk, flour, baking soda, garlic, salt, and egg until smooth.

Coat cheese curds.

Cook cheese curds in oil.

One at a time, add the batter covered cheese curds into the oil.  Cook for several seconds, until golden brown and then remove and drain on a paper towel.  Repeat with remaining cheese curds.

You can make Culver&#39;s Fried Cheese Curds just like they do with this copycat recipe. 

Culver's Fried Cheese Curds

Combine flour and salt in a shallow bowl. Stir so the salt is incorporated evenly.

Break eggs into a second shallow bowl with 1 tablespoon of milk. Beat the eggs.

Place breadcrumbs into a third bowl.

Coat the curds first with flour, then the egg, and finally the bread crumbs. It is very important to coat the cheese curds evenly and thoroughly.

Place coated curds on a wire rack resting in a rimmed baking sheet. Freeze the cheese curds for 30 to 60 minutes.

Set up another wire rack on a baking sheet or line a plate with paper towels.

Pour enough oil into a large skillet or a pot to reach about 2 inches of oil.

Heat the oil over medium-high heat. Use a thermometer to make sure the temperature is 375 degrees.

Fry a few curds at a time, carefully drop a few in at a time. Do not crowd the skillet.

Fry for about 1 minute, turning them once. Cook until they are golden brown.

Remove the fried cheese curds with a slotted spoon and place them on a clean wire rack over a baking sheet to drain.

Enjoy immediately.

This vegan poutine is easy to make and delicious. Made with vegan cheese curds and simple mushroom gravy, it&#39;s perfect comfort food!

Easiest Vegan Poutine

pack medium firm tofu

tbsp tapioca starch

yeast

lemon juice

Sea salt

tbsp dairy-free milk, unsweetened (I like soy)

3½ tbsp unflavoured oil

lb yellow or russet potatoes (3-4 medium potatoes)

butter

cremini mushrooms

1½ tbsp miso paste

tbsp tamari or soy sauce

onion powder

flour flour

vegetable stock

Add tofu, tapioca starch, nutritional yeast, lemon juice, 1 tsp salt, milk and 2 tbsp unflavoured oil to a blender.

Blend on medium for about 15 seconds until mixture is smooth and ingredients are completely combined.

Transfer to a small saucepan, and cook on low temperature (stirring regularly) for 10-12 minutes, until &#39;cheese&#39; is smooth and stretchy. The mixture will become lumpy at first and may stick to the pan a bit but that&#39;s ok - just keep stirring until it becomes smooth!

Transfer to a bowl until ready to use.

For the Cheese Curds

Preheat oven to 400°F/205°C.

Slice potatoes into strips 1cm wide.

Place on baking trays and toss in remaining unflavoured oil. Sprinkle with sea salt to taste.

Bake in oven for 30 minutes, flipping fries over after 15 minutes.

For the Fries

While the fries are cooking, add vegan butter/olive oil, mushrooms, miso paste, soy sauce, onion powder, flour and broth to a blender. Blitz on high power for 15 seconds until smooth.

Transfer to a saucepan and heat until bubbling. Reduce heat to low and cook for 15 minutes - stirring frequently - until gravy has thickened. Taste and add salt if needed.

(If you&#39;re not a fan of mushrooms, don&#39;t despair! You can use this simple vegan gravy recipe instead.)

For the Gravy

Place fries in a large serving dish.

Dollop with small piles of cheese curds and pour over gravy. Decorate with sliced green onions if desired.

Enjoy immediately!

To Assemble

This easy homemade cream cheese recipe uses just three ingredients — whole milk, citric acid, and salt — to create a rich, creamy spread that&#039;s the perfect companion to any of my popular homemade bagel recipes.

How to Make Homemade Cream Cheese with Citric Acid

½ gallon whole milk ((1.9 liters))

Combine citric acid and water in a small bowl and stir to dissolve. Pour whole milk into non-reactive pot, with thermometer attached, over medium to medium high heat.

Continue stirring every few minutes until the milk reaches 185°F and lots of small bubbles form around the edge of the pot. This can take anywhere from 10-15 minutes, depending on your pot.

When the milk mixture reaches 185°F, stir in the citric acid and water mixture. The curds and whey will separate almost immediately. Remove the pot from the heat and let it stand for 5 minutes.

Meanwhile, set up your straining system. Line a large colander with a clean flour-sack dish cloth, and tuck the edges of the cloth through the handles of the colander or clip them in place. Put the colander over a large bowl or bucket to collect the whey — you&#39;ll need it later.

Slowly pour the milk into the towel-lined colander. If you have a smaller colander or smaller towel, you may need to pour in batches.

Gather the towel tight through each handle of the colander to create as much of a taught, bag-like shape as you can, with the towel suspended inside the colander. Use clips or knot the towel to hold it in place. Let the cheese strain for 25-30 minutes, gently scraping down the sides of the towel and stirring the curds in the towel about halfway through.

Transfer the strained cheese curds to a food processor along with the salt. Process on high speed in 20-30 second bursts for about 3 minutes total, pausing to scrape down the sides between each burst. If the cheese is looking gritty, add some of the reserved whey a ¼ teaspoon at a time to help the cream cheese smooth out.

Scoop the cream cheese into an air tight container. Refrigerate for at least 1 hour or until firm before use.

I really like this recipe. I had tried a different recipe and it was flat. No tang. Just smooth cheese. However,  this one tastes almost like real cream cheese! It's slightly different, but very enjoyable. I'll definitely be making this often.

When you say reduce the salt I want to think you mean the citric acid ? If it's to tang reduce citric acid or salt? If reduce citric acid by half what would be the equivalent for lemon/vinegar? I did 3 tbsp for 4 cups of milk so I'd imagine 3 tbsp of im making 8cups (half gallon)? Thanks for this. My kids didn't like that it was so plain so I looked this up. I added honey and cinnamon and it made the bland one better, no tang though... Hoping this gets that tang!

I had some leftover milk and I gave it a try. When I tasted it warm, it was tangier than regular store bought cream cheese, but after sitting in the refrigerator overnight, it mellowed considerably. I took your advice and cut the salt in half, because I didn’t use the same brand of kosher salt, it was definitely not too salty. I’m curious if you can bake with this the same way you bake with store bought cream cheese. It was delightful on my English muffin. I priced it out and it’s less expensive to make this than to buy cream cheese. I’ll make this again!

This recipe resulted in cream cheese with an impressively smooth texture. However, I found the flavor to be quite tart and saltier than I prefer. The taste of citric acid is prominent in the final product, and reminds me somewhat of Tajin, but with a milky quality and without the chili taste.

I'm hesitant to retry this because reducing the citric acid might affect the curdling process, which is essential for this recipe.

Those who enjoy tangier, more pronounced flavors in their cream cheese might appreciate it more than I did.
