Cheese Quesadilla

flour tortillas

shredded cheese ((Oaxaca, Chihuahua, Mozzarella, or Monterey Jack are best))

salt, (to taste)

sour cream (or Mexican crema)

guacamole

pico de gallo (or your favorite chunky salsa)

Heat a large nonstick skillet or comal over low-medium heat. Heat the tortillas slightly, flipping them over every 10 seconds, until they’re easily foldable and pliable.

Evenly divide the cheese and sprinkle it onto one half of each tortilla. Generously season with salt.

Fold the tortillas over the cheese to create a half-moon shape.

Cook the quesadillas for 1-2 minutes, or until one side of the quesadilla is golden-brown. You may have to press down lightly on the tops of the quesadillas with a spatula to prevent the tortillas from opening up.

Flip over and cook for another 1-2 minutes, until golden-brown and the cheese has fully melted.

Serve immediately as is, or cut them in half and serve with sour cream, pico and your favorite salsa.

Easy Quesadilla Recipe

flour tortillas (per 1 serving*)

cheddar cheese

shredded Colby jack cheese**

pico de gallo (aka fresh salsa)

salt

Place half the shredded cheese, pico de gallo, and 1 pinch salt in half of a tortilla, along with any other filling items (be careful not to overstuff). Fold it over to make a half circle. Repeat with the other tortilla. 

Heat a stainless steel or cast iron skillet over medium high heat. Add a drizzle of olive oil to lightly coat the pan. Cook for 1 to 2 minutes per side until browned and crisp, pressing gently with a spatula while cooking. 

Slice into 4 or 6 wedges and serve immediately with dipping sauces. 

Most of the items are Mexican. Show me a more elaborate, but fast dinner with meats ... chicken, beef, pork chops, etc.

Fast, but not 5 minutes and others - not that fast.

It takes time to make scrambled eggs. The recipe doesn't count prep time at all. Crack each egg, add milk, mix together. Cook, then turn. Add the sauce. Cook and  turn again.

Peel the onion, take away the outer pieces, cut onion slices or pieces.

Wash the cilantro, dry it, chop it - oh, I think you just left it whole.

I am past 5 minutes by now. At least, one person is over 5. You need several people, each doing different things.

Great basic recipe.  We sautéed onion, garlic, green peppers and spinach.  Then mixed with black beans.  Super easy and flexible.  Add some cilantro, sliced avocado and also.  Spanish rice on the side.  Yum!

These simple and healthy Black Bean Quesadillas are an easy dinner everyone loves. Flour tortillas filled with cheese, black beans, corn, onion, bell pepper and spices. 

Black Bean and Corn Quesadillas

olive oil

garlic (, minced)

onion (, chopped)

bell pepper (any color, chopped)

can black beans

corn ((canned

salsa

brown sugar

cumin

chili powder

shredded cheese ((monterrey jack, colby jack, or cheddar))

sour cream (,

Add olive oil to a large skillet over medium high heat.&nbsp;

Add the onion and bell pepper and saute for 1-2 minutes.&nbsp;

Add garlic and saute for 30 seconds. Add black beans, corn, salsa, brown sugar, cumin and chili powder and stir to combine.&nbsp;

Reduce heat. Taste and adjust seasonings, if desired.

Heat another large skillet. Place one tortilla in the skillet. Add a sprinkle of cheese, followed by a heaping scoop of black bean and corn filling and spread into an even layer. 

Top with another sprinkle of cheese. Add a tortilla on top and cook until the bottom tortilla is golden. 

Use a large spatula to carefully flip the tortilla to the other side. Cook until cheese is melted and bottom tortilla is golden brown.&nbsp;

Serve with sour cream and salsa.

These are absolutely delicious!!! I must admit I used a combination of taco cheese and cheddar jack. I love them with salsa and sour cream on every bite. Great to keep the filling for quick and easy leftover meals. I’ve been eating them at some point in my day for the past 3 days and I’m not tired of them! Yummy!!

Very good recipe, for those using cheddar however I would advise mixing it with mozzarella as all cheddar produced a bit too sharp a flavour for me.

Corned Beef on Rye Quesadilla Recipe

purple and green cabbage

mayonnaise

apple cider vinegar

sugar

caraway seeds

Dijon mustard

Swiss cheese

Make the coleslaw: In a medium bowl, stir together the cabbage, 2 tablespoons mayonnaise, apple cider vinegar, sugar, and caraway seeds. Set aside.

In a small bowl, stir together the remaining ½ cup mayonnaise and Dijon mustard.

Preheat a griddle or two large skillets over medium heat.

Place the tortillas on the griddle or skillet. Place ¼ cup of cheese on half of each tortilla. (You may need to do this in batches, depending on the size of your griddle.)

Top with ¼ of the corned beef and ¼ of the coleslaw per tortilla.

Top with the remaining cheese, dividing it evenly among the tortillas.

Fold each tortilla over to make a half moon. Cook until the underside is lightly browned, about 2 minutes.

Flip and continue cooking until the bottom is lightly browned and the cheese is melted, about 2 minutes more.

Remove from the griddle and cut the quesadillas as desired. Serve with the Dijon/mayo dipping sauce.
