This loaded cauliflower casserole is so easy to make. It's cheesy and has lots of bacon. You'll love making this recipe this fall!

Loaded Cauliflower Bake

cauliflower,

c. whole milk

cream cheese, softened

c. shredded cheddar, divided

This dish was delish!  I used almond flour instead of regular (daughter has gluten allergy) and almond milk instead of whole milk. I didn’t blanch the cauliflower but I did have to bake it about 50 minutes to absorb the liquid. It was worth the wait!

Made it keto and delicious.  Substituted flour with almond flour and milk with almond milk.  You could also use cornstarch instead of flour. Shredded my own cheese to cut the carbs from pre-shredded, packaged cheese. If you're craving macaroni and cheese, this is a great lower carb substitute. Measure your ingredients to get the nutritional values if needed. This recipe is versatile, so ignore the negative reviews and make it work for you!

Made this for the family and my hubby who doesn't eat veggies at it! I used cream instead of milk and almond flour. I agree this is barley enough for 4 people, none the less this will be a side for Thanksgiving.

Delicious! The only change I made was two less strips of bacon. I think this could become a staple "base" for my family. Love the idea of adding broccoli and chicken!

This was an amazing recipe my husband and I loved it only changes I did was added chicken and broccoli to the mix and it was so filling!! Will definitely be making this again!

Cauliflower Gratin is an easy side dish you're sure to love! This Cheesy Broccoli Cauliflower Recipe is absolutely delicious. Be sure to add Cauliflower Broccoli au Gratin to your holiday table!

Cheesy Broccoli and Cauliflower Gratin Recipe

whole wheat

butter (softened)

table salt

cauliflower (about 1½ pounds (**SEE NOTE))

broccoli (about 1 pound (**SEE NOTE))

unsalted butter

yellow onion (diced (about 2 tablespoons))

garlic (minced)

all-purpose flour

heavy cream

chicken broth

nutmeg

dry mustard

red pepper flakes

Parmesan cheese

Cheddar cheese

salt

Heat oven to 425°F and set the oven rack to middle position.

Spray a 2-quart (11x7) casserole dish with nonstick cooking spray.

Tear each slice of bread into 4 pieces.

Place the bread, butter, salt, pepper and herbs in a food processor fitted with the metal blade. Process until coarse crumbs form, about ten 1-second pulses. Set aside.

For the Bread Topping:

Trim the cauliflower and broccoli into ¾-inch florets. If using broccoli stalks, use only ½-inch of stalk next to the floret.

Fill a Dutch oven or stockpot 2/3rds full with water. Add 1-tablespoon salt and bring the water to a boil. Stir the boiling water and add the cauliflower and broccoli. Cook until the vegetables have a slight bite, 3-4 minutes and drain.

Heat a large skillet over medium heat. Add butter and cook just until foaming subsides.

Add onion and cook until softened and translucent, 2-3 minutes.

Add garlic and cook 30 seconds.

Sprinkle the flour over the onion/garlic mixture; stir and cook about 1 minute.

Reduce the heat to medium-low and whisk in the cream and broth (or wine). While stirring, bring to a boil.

Reduce heat to low and add nutmeg, salt, red pepper flakes, dry mustard, and black pepper. Cook (and stir) just until mixture has thickened a little.

Add both cheeses and stir until cheese is melted.

Remove from the heat and add the cauliflower and broccoli; stir gently to coat the vegetables

Transfer cauliflower/broccoli mixture to the prepared dish and sprinkle with the breadcrumb topping.

Bake at 425°F for 15-20 minutes or until the sauce bubbles around the edges and the top is golden brown. Serve immediately.

Keep dinner simple tonight with this quick and easy Cheesy Cauliflower! Blanched cauliflower is mixed with a homemade stovetop cheddar cheese sauce to create the most comforting, low carb, and kid-friendly side dish.

Bring a large pot of salted water to a boil. Add pieces of cauliflower, reduce heat to medium and boil for 8-12 minutes, or until a fork easily slides into the cauliflower.  Drain cauliflower.

In a large saucepan over medium heat melt butter with garlic. Stir in flour, salt and pepper and mix for 1 minute. Add milk in and whisk until smooth. Add shredded cheese and mix, until cheese is completely melted and creamy, about 3-4 minutes.

Add the cauliflower florets into cheese sauce and stir to fully coat them.  Cook for 3 more minutes.  Serve and enjoy this cheesy cauliflower!

This Oven Roasted Cauliflower Au Gratin recipe is a take on the classic potato side dish - perfect to serve on Thanksgiving or with a chicken or steak dinner

Roasted Cauliflower Au Gratin

olive oil

garlic powder

milk (room temperature)

Gruyere (divided)

panko bread crumbs

Preheat the oven to 425°F.

Place the cauliflower florets on a baking sheet. Drizzle with olive oil, then season with garlic powder, salt and pepper. Toss to coat, then roast in the oven for 20 minutes, turning at the halfway point.

Meanwhile, melt the butter in a small saucepan over low heat. Add the flour, stirring constantly with a whisk or wooden spoon until well blended. Slowly whisk in the warm milk and stir until the mixture thickens, about 3-5 minutes.

Remove from heat, season with nutmeg and mix in half the cheese.

Transfer the roasted cauliflower from a baking pan to an 8x11 casserole dish. Pour the sauce evenly on top. Then sprinkle with the remaining gruyere and panko breadcrumbs.

Low the oven temperature to 375°F and bake until the top is browned and bubbly, about 20-25 minutes.

Cauliflower Gratin Wide

This slow cooker cauliflower recipe is rich, creamy, and oh-so-cheesy. With a sprinkle of crispy chopped bacon, it&#39;s the ultimate keto side dish!

Slow Cooker Pepper Jack Cauliflower

cauliflower (cut into 1 inch florets)

cream cheese

whipping cream

tbsp butter

tsp pepper

Pepper Jack cheese (shredded)

bacon

Grease the inside of a 4 to 6 quart slow cooker.

Add the cauliflower, cream cheese, whipping cream, butter, salt, and pepper. Cook on low for 3 hours.

Add the Pepper Jack and stir to combine. Continue to cook another 30 minutes to an hour, until cauliflower is fork tender.

Add bacon crumbles and serve.

It’s so hard to choose because you have so many good recipes, but I think this might be my favorite of all!  Creamy cheesy goodness when you want comfort food - you can’t beat this recipe!

This is one of my savory faves from Carolyn. It is also a family favorite and the only way some of my crew will eat cauliflower. Always turns out perfectly!

I ran out of time so cooked it on high for 2 hours, added the cheese, then another half hour on high. It was absolutely delicious! Thanks for all the great recipes, Carolyn!

Made this today, for dinner. Delicious! It took longer than expected, 3 1/2 hrs cooking on high most of the 3.5 hrs. Disclaimer - I used the same Crock Pot model shown in the photo, But I cooked almost 2 lbs of cauliflower. It didn't burn, and the cauliflower was 'al dente' when I decided it was done. We will definitely be having this again soon! TY.

This was incredibly good. Did not get Pepper Jack cheese, but instead had a mature cheddar. I will make this again in a couple of days :)
