cheesy cauliflower

This loaded cauliflower casserole is so easy to make. It's cheesy and has lots of bacon. You'll love making this recipe this fall!

Loaded Cauliflower Bake

cauliflower,

butter

garlic,

tbsp. all-purpose flour

c. whole milk

cream cheese, softened

c. shredded cheddar, divided

Kosher salt

black pepper

bacon,

c. sliced green onions

This dish was delish! I used almond flour instead of regular (daughter has gluten allergy) and almond milk instead of whole milk. I didn’t blanch the cauliflower but I did have to bake it about 50 minutes to absorb the liquid. It was worth the wait!

Made it keto and delicious. Substituted flour with almond flour and milk with almond milk. You could also use cornstarch instead of flour. Shredded my own cheese to cut the carbs from pre-shredded, packaged cheese. If you're craving macaroni and cheese, this is a great lower carb substitute. Measure your ingredients to get the nutritional values if needed. This recipe is versatile, so ignore the negative reviews and make it work for you!

Made this for the family and my hubby who doesn't eat veggies at it! I used cream instead of milk and almond flour. I agree this is barley enough for 4 people, none the less this will be a side for Thanksgiving.

Delicious! The only change I made was two less strips of bacon. I think this could become a staple "base" for my family. Love the idea of adding broccoli and chicken!

This was an amazing recipe my husband and I loved it only changes I did was added chicken and broccoli to the mix and it was so filling!! Will definitely be making this again!

Recipe sounds delish and I’m gonna try it! My husband is diabetic but we are cognizant of carbs, sugar, etc. I love to live healthy and we are both major label readers. The comments on this post are annoying. Do your own research and stop complaining because you are given a wonderful FREE recipe. 🙄

Oh my heavens !!! This recipe is amazing.

Reviewers, stop asking for nutritional value! You can easily look it up yourself by researching each ingredient of the recipe. You have the internet! lol
Great recipe, btw!

Cheesy Broccoli and Cauliflower Gratin Recipe

whole wheat

butter (softened)

table salt

cauliflower (about 1½ pounds (**SEE NOTE))

broccoli (about 1 pound (**SEE NOTE))

unsalted butter

yellow onion (diced (about 2 tablespoons))

garlic (minced)

all-purpose flour

heavy cream

chicken broth

nutmeg

dry mustard

red pepper flakes

Parmesan cheese

Cheddar cheese

salt

Heat oven to 425°F and set the oven rack to middle position.

Spray a 2-quart (11x7) casserole dish with nonstick cooking spray.

Tear each slice of bread into 4 pieces.

Place the bread, butter, salt, pepper and herbs in a food processor fitted with the metal blade. Process until coarse crumbs form, about ten 1-second pulses. Set aside.

For the Bread Topping:

Trim the cauliflower and broccoli into ¾-inch florets. If using broccoli stalks, use only ½-inch of stalk next to the floret.

Fill a Dutch oven or stockpot 2/3rds full with water. Add 1-tablespoon salt and bring the water to a boil. Stir the boiling water and add the cauliflower and broccoli. Cook until the vegetables have a slight bite, 3-4 minutes and drain.

Heat a large skillet over medium heat. Add butter and cook just until foaming subsides.

Add onion and cook until softened and translucent, 2-3 minutes.

Add garlic and cook 30 seconds.

Sprinkle the flour over the onion/garlic mixture; stir and cook about 1 minute.

Reduce the heat to medium-low and whisk in the cream and broth (or wine). While stirring, bring to a boil.

Reduce heat to low and add nutmeg, salt, red pepper flakes, dry mustard, and black pepper. Cook (and stir) just until mixture has thickened a little.

Add both cheeses and stir until cheese is melted.

Remove from the heat and add the cauliflower and broccoli; stir gently to coat the vegetables

Transfer cauliflower/broccoli mixture to the prepared dish and sprinkle with the breadcrumb topping.

Bake at 425°F for 15-20 minutes or until the sauce bubbles around the edges and the top is golden brown. Serve immediately.

Enjoy!

It’s so hard to choose because you have so many good recipes, but I think this might be my favorite of all! Creamy cheesy goodness when you want comfort food - you can’t beat this recipe!

This is one of my savory faves from Carolyn. It is also a family favorite and the only way some of my crew will eat cauliflower. Always turns out perfectly!

I ran out of time so cooked it on high for 2 hours, added the cheese, then another half hour on high. It was absolutely delicious! Thanks for all the great recipes, Carolyn!

What happens when you love it so much that you almost eat the who thing by yourself? This is a keto meal for me!! lol.
thanks Carolyn
loooove your recipes!

Made this today, for dinner. Delicious! It took longer than expected, 3 1/2 hrs cooking on high most of the 3.5 hrs. Disclaimer - I used the same Crock Pot model shown in the photo, But I cooked almost 2 lbs of cauliflower. It didn't burn, and the cauliflower was 'al dente' when I decided it was done. We will definitely be having this again soon! TY.

This was incredibly good. Did not get Pepper Jack cheese, but instead had a mature cheddar. I will make this again in a couple of days :)

This is nothing short of amazingly delicious. The whole family really liked it. I will put this one in my fall rotation while the cauliflower is looking so good at the market. Thanks Carolyn!

YUMMYYYYYYY!!!! And so easy to make! Thanks

The ultimate family-friendly crowd-pleaser, this Whole Cheesy Cauliflower Bake recipe makes the ultimate side or could even be served alone as a vegetarian meal. The secret here is to microwave the cauliflower first to make it super soft on the inside. Then a gorgeous cheesy sauce is poured over, and the cauliflower is finished under the oven grill (broiler) until golden and crispy on the outside.

Whole Cheesy Cauliflower Bake

35 g plain (all-purpose) flour

625 ml full-cream (whole) milk

tsp chicken or vegetable stock powder (bouillon)

g cheddar

thyme

Microwave the cauliflower – Place the whole cauliflower in a microwave-safe dish with 60 ml (¼ cup) of water.

Microwave on high for 10–12 minutes. It should be easy enough to easily pierce with a fork when it’s done. If not, continue cooking at 2-minute intervals (the length of time it cooks depends on the strength of your microwave). It can take up to 20 minutes.

Preheat – Preheat the oven grill (broiler).

Make a roux for the sauce – Meanwhile, heat the butter in a small saucepan over low heat. Once it is melted, add the flour. Stir for 1 minute until a paste forms.

Add the milk – Slowly add the milk and stir using a whisk. Reduce the heat to the lowest setting. Continue stirring for 6–8 minutes until the sauce begins to thicken.

Finish the sauce – Once the sauce is nice and thick and coats the back of a spoon, stir through the stock powder and 125 g (1 cup) of the cheese.

Transfer to a baking dish – Place the cauliflower in an oven-safe dish, cover it with the sauce and sprinkle with the remaining 125 g (1 cup) of cheese.

Grill (broil) and serve – Grill for 8 minutes or until the cheese is melted and the cauliflower is golden. Keep an eye on it as it will brown quickly! Sprinkle with fresh thyme leaves and serve.

No one’s skipping their veggies with this delicious, grilled cheese sauce!!
