Tomato Confit is an easy and delicious way to bring fresh summer cherry tomatoes to a variety of dishes. Don&#039;t let the cooking time deter you; most of the process is hands off. Makes about 3 cups of confit.

Cherry Tomato Confit

cherry tomatoes ((a mix of red, yellow, and orange, if desired))

garlic

lemon zest

extra virgin olive oil ((plus additional, if needed))

Preheat oven to 250 degrees F. Place cherry tomatoes and garlic cloves in a single layer in a 3-quart baking dish (13 x 9) or gratin. Sprinkle with lemon zest.

Pour olive oil into the dish, coming about halfway up the sides of the tomatoes. Season the tomatoes with salt and pepper, and add the herbs to the baking dish. (I like to nestle them between the tomatoes.)

Bake, uncovered, for 1-1/2 to 2 hours (cooking time will depend on the size of the cherry tomatoes). When the tomatoes are ready, the tomatoes will be soft, the skins will look wrinkled and will just be starting to burst in areas. Don&#039;t cook the tomatoes until they&#039;ve fully bursted; they should be soft, but not falling apart.

Cool tomatoes in the pan at room temperature, then place in airtight jars. Pour enough of the cooking oil over the tomatoes to submerge by 1/4 to 1/2 inch. Store, refrigerated for up to 5 days. This recipe is not suitable for freezing or canning.

Roasted Cherry Tomato Tart with Herbed Ricotta

puff pastry (from a 17.3-ounce package, thawed)

cherry tomatoes (approximately 3 cups)

Preheat oven to 425 degrees.

Unfold puff pastry onto a large piece of parchment paper. Roll the pastry out another 1/2-inch to 1-inch. (Correct to a square as needed).

Using a straight edge, score the pastry approximately 1/2-inch to 1-inch from the edge, being careful to not cut all the way through. Brush the crust with the beaten egg.

Bake for 18-22 minutes or until golden brown. Let cool.

Place cherry tomatoes on a baking sheet. Drizzle with olive oil and salt and black pepper, to taste. Roast for 12-15 minutes or until beginning to soften and burst.

Meanwhile, combine ricotta cheese, scallions, parsley, basil and lemon zest. Carefully spread over the baked crust.

Top with the cherry tomatoes and sprinkle with the thinly sliced (chiffonade) basil.

Drizzle with good quality balsamic vinegar and cut into 4 pieces. Serve immediately.

Take half of the cherry tomatoes and slice them in half.

Dice the remaining cherry tomatoes by cutting them into 4-8 pieces depending on size.

In a large ziploc bag, combine chicken breasts with olive oil, Italian seasoning, salt, pepper and 2 tablespoons balsamic vinegar. Press air out of the bag and seal tightly. Press the seasoning around the chicken to coat. Let it marinate for at least 15 minutes, up to overnight in the fridge. Remove the pan from the oven and add mozzarella balls evenly over the chicken. Return the pan to the oven and continue baking for another 10-15 minutes until the melted cheese turns golden brown. The internal temperature for the chicken should also reach 165F as read on a meat thermometer.

Meanwhile, make the balsamic glaze by adding the remaining balsamic vinegar to a small saucepan. Let it simmer for over low heat until thickened and reduced by half (about 5-7 minutes), stirring occasionally.

Allow the baked chicken to rest for 10 minutes. Then, drizzle the balsamic reduction on top. Garnish with basil and serve warm.
