You'll no longer need take out after making this one point healthy gyro from home. It's made from boneless, skinless chicken tenders and flavored with classic gyro seasonings and homemade zero point tzatziki sauce.

Greek Chicken Gyros

lbs boneless (, skinless chicken breasts)

extra virgin olive oil

lemon juice

Tbsp plain Greek yogurt

Tbsp red wine vinegar

red onion

garlic

oregano

thyme

coriander

Salt and black pepper (, to taste)

cucumber

salt (,

plain Greek yogurt ((I used fat free))

garlic (, finely minced)

Tbsp extra virgin olive oil

tsp red wine vinegar

parsley

black pepper

Diced Roma tomatoes

In a mixing bowl, whisk together olive oil, lemon juice, Greek yogurt, red wine vinegar, chopped red onion, garlic, oregano, thyme, coriander and season with salt and freshly ground black pepper to taste.

Place chicken in a gallon ziploc bag, pour marinade over chicken, seal bag while pressing out excess air and transfer to refrigerator to marinate 2 - 4 hours. Remove chicken during the last 30 minutes of marinating to rest at room temperature before grilling (leave in marinade).

Brush grill grates lightly with oil and preheat grill over moderately high heat. Once hot, add chicken and grill until cooked through (internal temperature should register 165 degrees F on an instant read thermometer), rotating once halfway through cooking.

Remove from grill transfer to plate and brush chicken lightly with olive oil then cover with foil and allow to rest 10 minutes. Dice into strips.

To make Greek chicken:

Place diced cucumber in a mesh strainer or colander and sprinkle with salt, toss to evenly coat then allow to rest 30 minutes at room temperature.

Rinse cucumbers and place over several layers of paper towels. Squeeze some of the liquid from cucumbers (almost as if wringing moisture from a cloth). Place cucumbers in food processor and pulse to chop to desired size.

Add in Greek yogurt, garlic, lemon juice, olive oil, red wine vinegar, parsley, and dill and season with salt and pepper to taste.

Pulse to blend (or if you want it chunky you can simply stir the other ingredients in using a bowl and spoon so the cucumbers are chopped up more). Store in refrigerator in an airtight container up to 3 days.

To make tzatziki:

Layer chicken in a row along center of pita, top with lettuce, tomatoes, cucumbers, Kalamata olives, red onion, feta, cilantro and tzatziki sauce. Wrap and serve.

Gyros with Greek Chicken, Tzatziki and Homemade Greek Pita Flatbread - These are loaded with fresh and exciting flavors. Bland doesn't exist in this wrap, which is one of my favorite things about it.

Gyros with Greek Chicken & Tzatziki

It's basically a chicken gyro on a bed of lettuce, baby kale and basil, but with the addition of Caesar dressing (but not the scary kind!). I even made fresh pitas, for you know, scooping and such.

Greek Chicken Gyro Caesar Salad.

chicken breast (about 4 small breast)

olive oil

balsamic vinegar

smoked paprika or paprika

garlic (minced

salt + 1 teaspoon pepper

anchovies (optional)

garlic (minced)

worcestershire sauce

dijon mustard

feta (crumbled)

salt + pepper (to taste)

romain lettuce (chopped)

baby kale (chopped)

basil

cherry tomatoes + green olives

oven fries

eggs

pine nuts (crumbled feta

In a medium size bowl or glass measuring cup combine the lemon juice, olive oil, balsamic vinegar, smoked paprika, dill, oregano, garlic, salt and pepper. Add the chicken to a gallon size ziplock bag and pour the marinade over the chicken, toss well, making sure the chicken is completely coated in the seasonings. Place in the fridge for at least 1 hour or overnight.

Meanwhile, make the dressing (this is also when I make the fries and boil my eggs). Add all the ingredients for the dressing to a blender or food processor and blend until smooth and creamy. Taste and adjust seasonings.

When ready to cook the chicken, preheat the grill or a grill pan to high heat. Grill the chicken for about 4-5 minutes per side or until cooked through. Remove from the heat and allow to rest while you prepare the salad.

In a large bowl, toss together the lettuce, baby kale and basil. Add a little dressing and massage it into the salad. Add the tomatoes and olives. Divide the salad among plates or bowls. Slice the chicken and place on the salad. Add the fries, eggs, pine nuts and feta cheese. This wholesome chicken gyro is a flavor-intense lunch combining savory marinated chicken, crisp summer veggies fresh tzatziki on a warm fluffy pita.

Chicken Gyro Recipe

chicken breasts (cut into 1 inch pieces)

water

parsely (minced)

lemon

honey

oregano (crumbled)

tomatoes

onion

romaine lettuce

feta cheese (crumbled)

tzatziki sauce

In a large mixing bowl, stir the salt in water until completely dissolved. Place chicken in brine and refrigerate for 30 minutes.

Preheat oven to 350 degrees (to heat pita). Wrap the pita bread in aluminum foil and seal tightly.

Meanwhile, make the marinade; In a small mixing bowl, whisk together the oil, parsley, lemon zest, lemon juice, honey, oregano, and 1/2 teaspoon black pepper. Pour 1/4 cup into a large mixing bowl (large enough to accommodate cooked chicken later) and set aside.

Remove chicken from brine and pat dry with paper towels. In a large mixing bowl, toss the chicken pieces with the remaining marinade until evenly and well coated. Thread chicken onto skewers.

Place foil wrapped pita in oven and heat until warm, about 10-15 minutes or until warmed through.

Cook chicken skewers on grill or grill pan 5-7  minutes per side, or until chicken is cooked through and registers 160 degrees on an instant thermometer. Using a fork, push hot chicken off skewers and into the bowl with reserved marinade. Toss gently to evenly coat; cover with foil and let sit for 5 minutes.

Assemble the Gyros; Place a pita on a piece of parchment or foil, place a layer of chicken down the center, tzatziki sauce, and veggies. Serve immediately.

Grilled Chicken Gyro Sandwich

Place the chicken strips in a large bowl and sprinkle with the seasonings. Add minced garlic, olive oil, and lemon juice. Mix thoroughly to coat the chicken, then if time allows marinate it in the fridge for up to 1 hour.

Preheat a grill pan over medium-high heat. Grease the grill with a bit of oil, then add chicken and cook until grill marks appear and cooked through, about 8-10 minutes in total.

To make the grilled chicken:

While the chicken is cooking, prepare toppings.

Thinly slice the onion, tomatoes, and cucumbers. Microwave the pita bread for about 1 minute. For assembling, load up the pita bread with a spoonful of tzatziki sauce.

Add warm grilled chicken on top of the sauce. Add sliced onion, tomatoes, and cucumbers.

Garnish with fresh dill and serve immediately.

To prepare the gyros:

These Greek Chicken Gyros are meticulously seasoned and roasted to perfection. The chicken is marinated in a combination of savory, tangy and herbaceous flavours, stacked on a spit and slow-roasted until the exterior develops a slight caramelized char while the inside remains tender and succulent 🤤.

boneless skinless chicken thighs (1.3kg total)

honey Dijon mustard

garlic (or 3 very large ones)

lemon zest (two lemons zested)

dry oregano (to taste)

water (or stock (for the bottom of the pan))

Preheat the oven to 425F (220C).

In a bowl add the chicken, olive oil, honey Dijon mustard, garlic, salt, lemon zest, and oregano. Mix well. You can marinate for a minimum of one hour (even overnight for best results).

Once marinated, take the Vertical Gyro Spit Plate and thread the chicken thighs making sure to rotate each one opposite from the last.

Note: if you don’t have a Vertical Gyro Oven Plate, cut an onion in half, place it on a baking sheet lined with parchment (or foil) and position two wooden skewers vertically into the onion and voila, you made your own spit and don’t need to buy one!

Now, place the gyro in the oven and add 1 cup of water or stock to the base (which will create our sauce).

Tip: you can pierce a small piece of foil making sure to cover the top chicken thigh as it will start to burn first on the top as it bakes.

Bake for 75-90 minutes or until fully cooked. Mine took exactly 1.5 hours.

Take it out of the oven, let it rest and cut! You can enjoy this chicken gyro with loaded Greek fries, on pita with tzatziki, on a Greek Salad and so much more!
