Wonderful golden chicken lentil soup made with creamy light coconut milk, turmeric, ginger, garlic, and cumin. Perfectly flavored and packs a protein punch. This soup will be your new favorite!

Golden Coconut Chicken Lentil Soup

olive oil

garlic,

white onion,

carrots,

ginger

turmeric

cumin

cayenne pepper

chicken broth

(15 oz) can light coconut milk

brown lentils,

chicken breast* (about 3/4 pound)

salt, plus more to taste

black pepper

For garnish: fresh chopped cilantro

Add olive oil to a large pot and place over medium high heat. Once oil is hot, add in garlic, onion and carrots; saute for 5 minutes, stirring occasionally. Then stir in ginger, turmeric, cumin and cayenne pepper.&nbsp;

Allow spices to cook with the carrots and onions for 30 seconds then add in chicken broth, coconut milk, lentils, shredded chicken, salt and black pepper.

Bring soup to a boil, then reduce heat to low and simmer uncovered for 30-45 minutes until lentils are cooked and soup thickens. Taste and adjust seasonings as necessary.&nbsp;

Pour into bowls, or individual containers for meal prep. Soup is wonderful when garnished with cilantro. Serves 4.

Chicken and Lentil Soup

lentils

oz 3 boneless skinless chicken thighs, all fat trimmed

water

tbsp chicken Better than Bouillon

onion

scallions

cilantro

garlic

tomato

garlic powder

tsp cumin

oregano

tsp ground annato (or Spanish paprika, or even Sazon)

salt (to taste)

In a large pot combine lentils, chicken, water and chicken bullion.

Bring to a boil, covered over medium-low heat until chicken is cooked, about 20 minutes.

Remove the chicken and shred, return to the pot

Meanwhile, in a chopper or by hand, mince the onions, scallions, cilantro, garlic, and tomato.

Add to the lentils with garlic powder, cumin, oregano and annato and cook, covered until the lentils are soft, about 25 more minutes, adding more water as needed if too thick.

Adjust salt to taste as needed.

This chicken lentil soup is full of fiber from the lentils &amp; protein from the chicken. It will keep you full for hours while also warming up your entire soul!

Sauté

Preheat a heavy pot with oil. Add the chopped onions and carrots and sauté them until they soften and the onions turn translucent.

Add Ingredients

Add in the chicken, lentils, bay leaves, cumin, salt, and pepper.

Boil &amp; Simmer

Add in the water and bring it to a boil. Drop the heat down low and simmer the soup for 40 minutes (note: you may need to add more water during the simmering process depending on how thick you like your soup).

Finalize

Add the dill and remove it from heat. Enjoy!

This Chicken Lentil Soup is ultra-comforting and easy to make in one pot. Ready in under 45 minutes, every spoonful is packed with hearty lentils, diced chicken, warm spices, and vegetables.

Heat olive oil in a dutch oven or heavy bottomed pot over medium heat, then add the onions, carrots and celery and sauté for 6 minutes, or until soft. Then, add the garlic, salt, smoked paprika, and cumin and sauté for 1 minute.

Pour in the lentils, along with the diced chicken, diced tomatoes, and broth. Bring the soup to a boil, then reduce heat to a simmer and simmer until the lentils are cooked, about 25 minutes.

Last, stir in the spinach until wilted, then add salt and pepper to taste. Enjoy!

Loved it the first time and added curry!! Made it again and added the curry, some chopped roasted sweet potatoes and turnips. Fabulous!!!

Added a can of unsweetened coconut milk and a splash of apple cider vinegar at the end. amazingggg 10/10.

Just made this for dinner and it came out amazing. The only tweaks to add are cooking the celery, onion, and carrots for a bit longer. Could use 10 min instead of 6 in my opinion.

A richly spiced Moroccan-inspired soup, full of flavor, nutrients and soul-warming color.  Saffron, dried apricots and preserved lemon give this brothy Chicken Lentil Soup its depth. Easy to throw together, perfect for weeknight dinners.

Moroccan  Chicken Lentil Soup with Spinach, and Preserved Lemon

preserved lemon, minced

teaspoon honey

parsley

In a medium soup pot, sauté the onion and ginger in olive oil over medium heat, until soft and lightly caramelized, about 5 minutes.

Add cumin, cinnamon, turmeric, paprika, and cayenne, saute another minute.

Add chicken stock, lentils, salt, saffron, dried apricots, and chicken thighs.

Bring to a simmer and cover with lid vented for 30 minutes.

Carefully remove chicken and shred, pulling apart with 2 forks.  Return chicken to the soup pot.

Add the preserved lemon, honey, fresh spinach, and parsley, and serve!

I have made this soup twice now and everyone loves it! I do find it a little salty though (due to preserved lemons which are such a delicacy!) so  I make sure to use a low sodium broth and add very little salt. I will return to it again and again - love the spices and the dried apricots!

The soup is my new favorite soup. It’s such a warm blend of spices and earthy lentils, and the shredded chicken thighs give it a boost of texture and protein. I’m sharing with my adult children and sure it will become their new favorite too. Great work Feasting at Home, once again!
