Chicken Parmesan Casserole Recipe

(28 ounces) of marinara sauce (or make your own)

Parmesan cheese

mozzarella cheese

Panko bread

olive oil

parsley

salt and pepper,

Grease an 8&#215;8 inch casserole dish with cooking spray.

Layer the fully-cooked chicken in the bottom. Dump in the marinara sauce and mix with the chicken. Next, top with both cheeses until all the chicken is covered.

In a small bowl, mix the breadcrumbs, olive oil, fresh herbs and a pinch of salt and pepper together.

Sprinkle the seasoned breadcrumbs over the top. (Freezing instructions begin here.)

Bake for about 20-25 minutes or until golden on top and bubbling on the sides.

Make It Now:

Made this tonight using gluten free bread crumbs and we all loved it.  It was simple enough to just throw it all together with our pre-cooked chicken and bake.

I'm always looking for new recipes to freeze. We had this last night and it was delicious! The breadcrumbs took it over the top! It was super easy to make and I could easily hide some veggies in there. Thank you for the recipe!

After reading all the fantastic comments about this recipe, I had high hopes.  I made it exactly as recipe stated.  My husband said there is way too much chicken in it and I couldn't eat much of it.  I'm not sure where all the awesome comments came from, but we didn't like this at all.

Looks so good but I am confused by the pan size.  In the directions it says  8x8 but that last photo of the dish complete it clearly looks like 9x13 pan  Can you please clarify?  Thanks!!

Classic chicken parmesan is better than this casserole, imo. It's definitely a recipe that requires noodles. Untimely everyone was satisfied with dinner, I think I may sneak some veggies in next time I make it.

I absolutely love this recipe! What I cannot remember is do you have to cover this with aluminum foil when it bakes?  We are cooking from fresh, not frozen.  It is been so long since I have made it I cannot remember. I substitute crushed pork rinds for the breadcrumbs to bring the carb count down even further since we are on a low-carb diet at our home.

I added par cook spaghetti noodles mixed with a half a jar of sauce on the bottom layer, another jar and a half of sauce on top of the chicken with some extra seasonings to taste. I topped the casserole with Panko breadcrumbs mixed with a little butter, Italian seasoning, and grated Parmesan. I added the breadcrumb mixture of the last 5 to 10 minutes of cooking. Everyone love this meal!

I made this recipe, and it tastes great. I made a shortcut by using already cooked oven roasted diced chicken breast found in the freezer section. And decided to make it a full meal by adding the rice in the bottom, was going make it pasta, but was already making rice for another casserole.

Soupy. I not only couldn’t find the exact size of marinara sauce at the store but I followed the instructions carefully, even though they were vague. How infuriating. I can’t afford to waste food, time, money, or energy.

Chicken Parmesan Casserole

Baked Chicken Parmesan Casserole has chicken, pasta, tomato sauce and a crisp panko crumb topping to make a delicious Italian inspired dish you will love!

rotini (or penne)

marinara sauce (or pasta sauce, divided)

Italian seasoning

chicken (shredded

tomatoes

parsley (fresh)

butter (melted)

garlic powder

Preheat oven to 375°F.

Mix all topping ingredients together. Set aside.

Cook pasta al dente according to package directions. Toss with 2 cups pasta sauce, Italian seasoning, chicken, diced tomatoes and parsley.&nbsp;

Place in a 9x9 dish or 2QT casserole dish and top with remaining pasta sauce. Sprinkle with mozzarella cheese and topping mixture.

Baked 23-25 minutes or until golden and bubbly and topping is browned.

½ lbs. raw chicken breast, diced into bite-sized pieces

Preheat oven to 425 degrees F.&nbsp;Spray a 13-inch by 9-inch baking dish with cooking spray.

In the prepared baking dish (or in a separate large bowl), stir together uncooked pasta, marinara sauce, water, salt and raw chicken. Cover tightly with aluminum foil. You want to make sure that your dish is covered tightly so that none of the moisture escapes (the pasta needs to absorb the liquid as it cooks). Bake the covered dish for 30 minutes.

Uncover and give the pasta a good stir. At this point the pasta will still be firm and there will still be quite a bit of liquid in the dish. That's fine!

Spread mozzarella over the top and sprinkle with breadcrumbs and Parmesan cheese. Bake uncovered for 10-15 more minutes (or until cheese is melted, top is golden brown, pasta is tender, and chicken is cooked through).

Allow the pasta to rest for 5-10 minutes before garnishing with herbs and serving.

Preheat the oven to 350 degrees and lightly spray a 9x13 inch baking dish with cooking spray. Set aside.

Bring a pot of salted water to a boil. Cook the penne according to the package directions for al dente pasta.

Drain the pasta and add it to a large bowl.

Pour ¾ of the jar of marinara sauce on the pasta. Add the Italian seasoning, salt, pepper, and garlic powder. Stir together until everything is well incorporated.

Pour the pasta into the prepared baking dish.

Layer 1 cup of the mozzarella cheese on top of the pasta and spread evenly.

Add the cubed chicken on top of the mozzarella and spread evenly.

Spread the remaining ⅓ cup mozzarella cheese as well as the parmesan on top of the chicken.

Preheat oven to 450 degrees F.

Butterfly chicken breasts: Place one hand on top of the breast and carefully run a knife through the center of the meat to create two, even, thin breast halves.

Pat chicken dry and season well on both sides with salt and pepper.

Add eggs to a shallow bowl and beat well. Add breadcrumbs, parmesan and garlic powder to another shallow bowl and stir to combine.

Dip each piece of chicken into the egg mixture, and then press into breadcrumbs, coating on both sides.

Add oil to a large skillet over medium-high heat. Once hot, add breaded chicken and cook for about 2 minutes on each side, until golden, but not cooked through.

Spoon a thin layer of marinara sauce into a 9x13’’ baking pan, to cover the bottom of the pan. Place breaded chicken on top.

Add a spoonful of marinara sauce over the chicken, followed by a sprinkle of mozzarella and parmesan cheese.

Bake for 10-15 minutes or until cheese is melted and bubbly and chicken is cooked through (165 degrees F).

Garnish with fresh chopped basil. Serve over hot cooked spaghetti noodles, with extra sauce, if desired.
