Chicken Penne Pasta Recipe

tsp minced garlic

chicken breasts (cubed)

tbsp all-purpose flour

chicken broth

half and half

tsp basil

parmesan cheese

garlic salt and pepper

Cook pasta according to packaged directions.

Melt butter in a medium sauce pan, add chicken and cook until cooked through.

Add garlic and cook for 1 minute over medium heat. Add flour and cook for an additional minute, stirring constantly.

Add milk and broth, stirring constantly. Cook until sauce boils and thickens.

Add parsley and parmesan cheese. Add desired salt and pepper. Continue stirring until cheese has melted. Serve immediately.

Pour sauce over pasta and serve.

Creamy Penne Pasta

Sun dried tomato chicken pasta is a 30 minute recipe for the best Italian comfort food! You’ll flip for this amazing chicken penne pasta!

Sun Dried Tomato Chicken Pasta

chicken breasts

extra virgin olive oil

sun-dried tomatoes

garlic (peeled and quartered)

mozzarella cheese

basil

salt (or adjust to taste)

black pepper (or adjust to taste)

heavy cream

Fill an 8 quart pot with water, cover the pot and bring to a boil over high heat. Add a small handful of salt to boiling water and cook pasta to al dente (about 7-9 minutes). Drain in a colander.

While pasta is cooking, heat a large skillet over medium high heat. Drizzle oil in the hot skillet and immediately add chicken. Season chicken with salt and pepper and cook 3-5 minutes on each side, or until cooked to an internal temperature of 163°F.

Remove chicken from the pan and set on a cutting board to cool. Once cool, cut chicken into bite sized pieces.

While the chicken is cooking, drain sun dried tomatoes, reserving about 2 tablespoons of the oil. Combine the contents of sun-dried tomatoes, reserved oil, and chopped garlic in a blender or food processor. Blend until the mixture is smooth, scraping the insides of the blender down as necessary.

Add sun dried tomato mixture to the skillet and cook for 30 seconds to 1 minute. Stir in heavy cream, then cook on medium-high heat until slightly boiling. Add in shredded mozzarella cheese and stir to melt.

Reduce heat to medium-low and simmer. Add in cooked chicken.

Add drained penne pasta to the skillet and stir until combined and the pasta is well coated. Continue to simmer for 2-3 minutes on low. Stir in fresh basil. Add additional salt and pepper to taste.

Garnish with additional fresh basil if desired. Serve warm, and enjoy!

Creamy Sun Dried Tomato Chicken Pasta

Season chicken with salt and pepper. Drizzle a large skillet with the olive oil over medium heat.

Add chicken and cook, stirring as needed, for 5-7 minutes until chicken is cooked through. Transfer to a plate and cover to keep warm.

Prepare the chicken

In the same skillet, melt butter over medium heat. Once melted stir in garlic for 1 minute until fragrant.

Stir in sun dried tomatoes and dried herbs (Italian seasoning or Herbs de Provence), and stir for 1 minute.

Stir in chicken broth, bring to a high simmer. Stir in heavy cream and parmesan for 3-4 minutes til cheese is melted and sauce is creamy. Season with salt and pepper to taste.

Make the sauce

Stir in chicken and cooked penne noodles. Top with additional parmesan, cracked black pepper, and fresh herbs if desired and serve.

Put it together

Just stir all of the raw ingredients together in a dish and this creamy chicken penne casserole is ready for the oven!

Dump-and-Bake Creamy Chicken Penne Pasta

Preheat oven to 425°F. Spray an 8-inch square baking dish with cooking spray and set aside.

In a large bowl, whisk together condensed soup, milk, chicken broth, salt, pepper, and garlic powder. Stir in onion, mushrooms, bell pepper, celery, raw chicken, uncooked pasta, and ½ cup cheese.

Transfer mixture to prepared baking dish. Cover tightly with foil and bake for 45 minutes.

Remove foil and give everything a stir in the dish. At this point, check to make sure that the pasta is al dente (tender, but with a firm bite). If it’s still too hard, cover again and return to the oven until the pasta is al dente. Once the pasta is al dente, sprinkle remaining ½ cup of cheese over top.

Return to the oven and bake, uncovered, for 5-10 more minutes, or until pasta is tender, chicken is cooked through, and cheese is melted.

This was a super easy pasta dish and we loved the finished product.  I will be certain to fix this again.

This is so good! Took about 10 minutes to put together. I added garlic, thyme, parsley and salt to mine but I add that to every chicken dish. I also substituted drained corn for the mushrooms because of an allergy.  All 4 of the men in my house had second helpings of that tells you anything. (I doubled the recipe)

This was the best!  Can see any veggie added.  Put frozen peas in mine.  Reminded me of pot pie.
