1. Heat 1 tablespoon olive oil in a medium size pot over high heat. When the oil shimmers, add the chicken and season with salt and pepper. Cook until seared on both sides, about 3 minutes per side. Add the poblano pepper and cook 3-4 minutes or until just charred.&nbsp;2. Reduce the heat to medium. Add the tomatoes, 1/2 cup water, the chipotle peppers, chili powder, oregano, cumin, salt and pepper. Stir to combine and then simmer 15-20 minutes, or until the chicken is cooked through and shreds easily. Shred the chicken in the pot. Remove from the heat and stir in the cilantro.&nbsp;3. Preheat the oven to 450 degrees F.&nbsp;4. On a baking sheet, rub the tortillas with the remaining 1 tablespoon olive oil. Lay 4 tortillas flat and then layer evenly with cheese, rice, and chicken. Add the top tortilla. Transfer to the oven and cook for 5-8 minutes, then flip and cook another 5 minutes more, or until the cheese has melted and the tortillas are crisp.&nbsp;5. Meanwhile stir together the yogurt and lime zest. Season to taste with salt.6. Serve the quesadillas topped with diced mango, jalapeños, fresh cilantro, and drizzled with yogurt. EAT!

This is the best chicken quesadilla recipe you&#39;ll ever try. Made with chicken, peppers and a secret ingredient - chicken quesadillas are a delicious, healthy, quick &amp; easy dinner recipe that is ready in under 30 minutes!

Best Chicken Quesadilla Recipe

lb chicken breast (diced)

green pepper (diced)

corn

½ TBS taco seasoning

½ tsp garlic salt (plus more to taste)

15 oz can mandarin oranges, drained (reseve the juice)

orange juice

Tortillas

In a small dish, mix together taco seasoning and garlic salt. Set aside.

Heat 1 TBS olive oil in a skillet over medium/high heat for about 1 minute.

Add chicken and cook until one side begins to turn slightly brown (about 4-5 minutes).

Add green pepper and corn. Cook until peppers become slightly soft and chicken is cooked through.

Evenly sprinkle seasoning/salt mixture over your chicken/veggies. Stir until evenly coated.

Cook until the chicken and veggies become slightly browned.

Add 1-2 TBS of the reserved mandarin orange juice and cook until all the liquid is absorbed.

Remove pan from heat and gently mix in the mandarin oranges, slightly breaking them up as you stir. Set mixture aside.

Making the filling:

Preheat a griddle to about 325 degrees F or cook over medium-low heat in a skillet.

Place a tortilla on the griddle and sprinkle about ¼ cup cheddar cheese evenly on the tortilla.

Add about ¼ to ½ cup of chicken mixture (depending on the size of your tortilla).

Top with another ¼ cup of cheese and a second tortilla.

Cook until the bottom tortilla is browned, then flip and cook until the second side is brown and cheese is melted.

Repeat with remaining tortillas and cheese until you have used all the filling!

Easy Chicken Quesadillas (Fajita Style)

Cook Chicken

Preheat a skillet with oil on medium heat. Add in chicken and taco seasoning. Cook for 4 minutes.

Add Veggies

Add in bell pepper and onion, cook for another 5 minutes or until chicken and veggies gain color. Set aside.

Build Quesadilla

On a clean skillet, add a bit of butter and place a tortilla on top. On half of the tortilla add cheese, the chicken mixture, and cover with more cheese. Fold the tortilla over to close.

Turn Quesadilla

Once the tortilla is golden, flip it over and cook for a few more minutes until that side is golden also. Make sure the cheese has melted. Repeat the same steps with the rest of quesadillas.

Preheat the oven to 400 degrees and grease a rimmed baking sheet.

Shred cheese and set aside (room temperature cheese will melt better and smoother).

Heat oil in a skillet over medium. Whisk in flour and cook for 30 seconds, stirring constantly. Slowly whisk in stock and cook for 1-2 minutes until thickened, stirring frequently.

Remove from heat; stir in spices, hot sauce, salt, pepper, chicken, and cheese.

Divide mixture evenly over half of each of the tortillas. Fold tortillas in half and place on baking sheet. Bake for about 8-10 minutes until golden and melty.

Cut each quesadilla into three wedges and serve with the lettuce, avocado, sour cream, and salsa.

These chicken quesadillas are quick and easy to make with shredded chicken, cheese and delicious Mexican-inspired flavors.

Easy Chicken Quesadillas

red onion

red bell pepper (chopped)

chicken (loosely packed; from about 2 chicken breasts)

taco seasoning (or more to taste)

Heat oil in large skillet over medium heat. Add red onion and cook until fully softened, about 3 minutes. Stir in green onion and bell pepper and cook for 1-2 more minutes.

Sir in chicken, taco seasoning and water. Cook for 2-3 minutes, then take off the heat.

To assemble quesadillas, sprinkle one half of a tortilla with 2 tablespoons of cheese. Top with ¼ of chicken mixture, then sprinkle with 2 more tablespoons of cheese. Fold over and lightly brush outside with olive oil.

Heat a griddle or large non-stick skillet just over medium heat (I heat my griddle to 390°F). Cook each quesadilla around 3 minutes per side, until browned on the outside and melty on the inside.

Cut quesadillas in half to serve.

Assemble the quesadillas.

In a small pan melt a little bit of the butter over medium heat, and add a tortilla. Top with a third of the cheese, a third of the chicken, mango slices, drizzle with BBQ sauce and add some cilantro.

Cook the quesadillas.

Cook until bottom is golden brown, lay another tortilla on top and carefully flip over and cook until bottom tortilla is golden brown.

Cut and serve.

Repeat with remaining ingredients. Cut the quesadillas in triangles and serve.

Cut up the chicken breasts into small, thin pieces and put inside a plastic gallon bag.

Pour in the orange juice, lime juice, and lemons juice with the chicken.

Put in the refrigerator and marinate for 2-3 hours.

Add a small amount of olive oil to a big pan on the stovetop over high heat. Add the chicken along with the marinating juices.

Cook the chicken until done about 8 minutes or so. Remove and let cool off to the side.  Shred the chicken when it has cooled off.

Chop up the cilantro and set aside.

Slice up the onions into small pieces and set aside.

Wipe out the pan you were using and add a little olive oil and butter to the pan over very low heat.

Add the onions and season with salt and smoked paprika.

Cook until onions are translucent and soft. Add the brown sugar and cook on low heat very slowly until they are caramelized.

Remove and set aside.

Clean out your pan completely and dry, or you can use a different clean pan.

Over a dry high heat, add one tortilla and add some cheese on the top.

Cook until the cheese starts to melt a bit.

Then add in some chicken, onions, and cilantro. Make sure to divide your ingredients to make 4 Quesadillas.

Add some more cheese over the top and then another tortilla to close it up.

Cook on each side until it is nice and browned and the cheese has melted.

Slice the tortilla into quarters.

These Chicken Quesadillas are filled with seasoned chicken, onions, peppers, and hot melted cheese. They&#039;re loaded with restaurant quality flavor. Don&#039;t forget the salsa and sour cream!

Chicken Quesadillas

chicken breast

avocado oil (can cub olive oil)

chicken broth (or dry white wine)

bell pepper

garlic (minced)

cilantro (roughly chopped)

lime juice

hot sauce

honey

(8-inch) flour tortillas (burrito size)

¾ cups Mexican blend cheese (see notes)

EACH: onion powder, garlic powder, cumin, paprika, dried oregano, chili powder

Combine the seasonings and set aside.

Slice the chicken in half to create 2 thinner slices. Cover with plastic wrap and use the textured side of a meat tenderizer to pound it ½ inch thick. Pat completely dry and rub each side with 2 teaspoons of the combined seasoning. Reserve the remaining seasoning for the vegetables.

Heat oil in a large nonstick skillet over medium-high heat. Add the chicken and sear for 4-5 minutes per side, until a golden crust has developed. Set aside and let rest for 5 minutes, then finely dice.

Add a splash of chicken broth or white wine over medium heat and use a silicone spatula to “clean” the bottom and sides of the skillet, this will add more flavor to the filling.

Increase heat to medium-high heat and add the diced onions and peppers. Soften for 2-3 minutes. Add the garlic, cilantro, lime juice, hot sauce, honey, and remaining seasoning and stir to combine and heat through for 2 minutes. Remove and set aside.

Turn the heat off and wipe the skillet clean. Brush a little melted butter over one side of each tortilla. (This will make the outside crispy and golden.)

Add a tortilla to the skillet, butter-side-down, over medium-low heat. Sprinkle a heaping ½ cup cheese evenly over the surface.

Sprinkle one-quarter of the chicken and vegetable filling on one half of the tortilla. Allow the cheese to melt and the bottom of the tortilla to turn golden brown. Once browned, fold it in half to make a half moon shape and press down gently with a spatula. Remove and set aside, repeat for all. Make slight adjustments to the heat (up/down) if/as needed throughout cooking.

Cut into each piece in half and serve with sour cream,  salsa, guacamole, and sour cream!

Made these for dinner tonight. Excellent flavor. I served with my homemade Pico de Gallo. Will definitely make again. Like that I can freeze filling for easy dinner another time.

Excellent taste and easy to make. I made a few adjustments..no cilantro  for us. But regardless they were delicious!
