Kosher salt

tbsp. red wine vinegar

tbsp. parsley

romaine hearts, chopped

c. grape or cherry tomatoes, halved

avocados, sliced

Made this tonight for dinner. My kids said that it was BEST salad they ever tasted and asked to have it every night. After reading the other reviews, I tried to find red onions; however, my store was out of them. Instead, I used onion crisps. It was perfect as it added a little crunch to the salad.

Easy Chicken Salad

Breasts

tsp Garlic

Cup Pecans Chopped

Cup Cranberries

Celery

Bunch Green Onions

Cup Poppy Seed Dressing

Salt and Pepper to Taste

Place chicken breasts in Instant Pot. Salt and Pepper chicken.  Add Garlic.  Add 1 cup water or broth.  Set to Manual for 18 minutes.  Allow 10 minute Natural Release and then quick release.  Remove from Instant Pot and place in Refrigerator to cool.

Wash and cut Celery and set aside.  Dice Green Onions and set aside.

Cube cold cooked chicken and place in medium size bowl.  Add celery, green onions, cranberries and chopped pecans.  Toss to combine.

Add Poppy Seed dressing and stir to combine.  Add salt and pepper to taste.

Store in Refrigerator.

Serve with crackers or on bread.

Chicken Fajita Salad

chicken breast

smoked paprika

garlic powder

cumin

dry cilantro

grape seed oil

green leaf lettuce, chopped

yellow pepper, juilienned

red pepper, julienned

pickled red onion

cherry tomatoes, halved

red wine vinegar

lime juice

red pepper flakes

In a small bowl, add smoked paprika, garlic powder, ground cumin, dry cilantro, sea salt, chipotle chili powder and black pepper. Mix to combine.

Season both sides of the chicken breast with spice mixture. Set aside.

Heat large skillet to medium high heat. Add 1 tablespoon of grape seed oil to the pan and then add julienned peppers. Saute until slightly browned, about 4-5 minutes.

Remove from the pan and then add 1 tablespoon of grape seed oil and then immediately add the seasoned chicken breast. Sear both sides for 6-7 minutes, or until the chicken is no longer pink. Remove from the pan and let rest. Slice when the chicken has cooled down.

For the dressing: add garlic clove, fresh cilantro, red wine vinegar, lime juice, 1/4 teaspoon smoked paprika, red pepper flakes, salt and pepper to a small food processor or blender. Blend until the cilantro is finely chopped. Then add olive oil to the food processor and blend until the dressing combines.

To assemble the salad add green leaf lettuce to a large bowl (or four individual bowls), top with sliced chicken breast, sautéed peppers, pickled onions, cherry tomatoes and sliced avocado. Serve with chimichurri dressing on the side.

I made mine with red apple, apple cider vinegar and kewpie Mayo! It was very delicious thank you for this recipe!

Summer Cobb Salad

Prepare the dressing

Place the oil, lime zest and juice, garlic, honey, cream, ½ teaspoon salt and ¼ teaspoon ground pepper into an empty jar. Tighten the lid and shake vigorously until creamy and smooth. Chill in the refrigerator until you are ready to serve.


Heat the grill pan

Preheat the grill pan on a medium-high heat.


Season and oil the chicken

Rub olive oil, salt and pepper into the chicken until coated evenly. 


Grill

Place the chicken on the grill pan and cook for 5 minutes on each side. Remove from the grill pan and allow to rest for 5 minutes before chopping it into bite-sized pieces.


Assemble the salad

Start by spreading the romaine over a large platter or salad bowl. Arrange the rest of the toppings in lines on the lettuce bed so it resembles a rainbow.
