Chicken Salad Sandwich

chicken breasts

Boil the chicken breasts in pot of water with salt and pepper until tender - about 30 minutes

Remove from pot (keeping water in pot) and shred with two forks.

Add in diced celery, eggs, and pickle relish

In a separate bowl, mix mayo and miracle whip, sugar, dill and vinegar - forming a dressing.

Pour mixed dressing over chicken mixture.

Stir unill combined.

Add salt and pepper to taste.

Serve on toast or with crackers and a side of noodles.

In a small skillet, add pecans and toast on low-medium heat until fragrant and brown-ish, stirring often. Transfer to a cutting board, let cool a bit and chop coarsely.

In a medium bowl, add toasted pecans, chicken, celery, onion, parsley, yogurt, mayo, mustard, vinegar, salt and pepper. Stir gently to mix and adjust salt to taste if necessary.

Refrigerate for at least 2 hours as salad tastes best cold.

This easy chicken salad recipe uses simple everyday ingredients, comes together fast, and makes the most delicious sandwiches!

For sandwiches: 8 slices bread, lettuce, etc.

Prep all ingredients.

Add the mayo, mustard, lemon juice, parsley, and some salt &amp; pepper to a medium bowl. Stir until smooth.

Add in the chicken, celery, apple, and red onion. Stir together until combined. Give it a taste and adjust ingredients as needed (e.g. add more salt &amp; pepper).

Prepare the shredded chicken. Method 1: Add salt and pepper to the chicken breast, sear the chicken from one side in a pan over medium-high heat until it has browned, then flip it, add some water, cover the pan and let it cook for 5-10 minutes (depending on size). Method 2: Add water to a pot, bring it to a boil, add some salt and pepper, then add the chicken, reduce the heat, cover the pot and let the chicken simmer for approx. 20 minutes. When the chicken is cooked through, let it cool and shred it with a fork.

While the chicken cooks, prepare the sauce for the curry chicken salad. Simply add all remaining ingredients to a large bowl and mix.

Add the shredded chicken to the sauce and mix everything. Add more salt and pepper if needed.

This Curry Chicken Salad is super clean and SO delicious. Loaded with spiced chicken, golden raisins, pistachios, herbs, and Greek yogurt + olive oil as a stand-in for mayo.
