Tamale Pie

This chicken tamale pie is a huge crowd pleaser and so easy to make! A corn cake bottom layer topped with shredded chicken, enchilada sauce, and cheese.

fat free milk

egg substitute

red pepper

(14 3/4 ounce) can cream-style corn

(8.5 ounce) box corn muffin mix (such as Jiffy)

(4 ounce) can chopped green chiles, drained

(10 ounce) can red enchilada sauce

chicken breast

cilantro and crumbled Cotija cheese

Preheat oven to 400°. Combine the first 7 ingredients (milk through green chiles), using just 1/2 tablespoon of the taco seasoning, in a large bowl, stirring just until moist. Pour mixture into a round pie plate (mine was glass) coated with cooking spray. Bake for 20-30 minutes.

While corn is baking, toss the chicken in the remaining 1 tablespoon taco seasoning. When corn is done &#8211; it will be just barely set and golden brown &#8211; pierce entire surface liberally with a fork (it might stick a little bit to the fork). Pour enchilada sauce over top. Top with chicken; sprinkle with cheese. Bake at 400° for 15 minutes or until cheese melts. Remove from oven; let stand 5 minutes. Cut into 8 pieces; top each serving with cilantro and Cotija cheese.

I've frozen this it turned out fine was just as good as when I made it.... I put it in small containers with one or two servings in each container I made it for my elderly grandparents they enjoyed it each time they had it.

Yep!  Just a few slight adjustments.  It's a keeper!

Loved this recipe....but I made my masa recipe for the base (you can also purchase pre-made masa in the frozen food section at grocery store).  It was delish and the family loved it.  Also, I now do not have to make the dozen of tamales at one time.  Thank you soooo much!!

Chicken Tamale Pie Recipe

cornbread mix (1 box (I recommend Jiffy))

taco seasoning (divided)

Mexican crema

cream-style corn (1 can)

unsalted butter (¼ stick, melted)

green chiles (1 can, drained)

enchilada sauce (1 can, divided)

chicken (chopped

shredded Mexican blend cheese (1 bag)

cilantro (for garnish)

Preheat

Preheat oven to 400°F and spray a 12-inch round glass pan or cast iron pan with nonstick spray. Set aside.

Combine

In a large bowl, combine the corn bread mix, 1 tablespoon of taco seasoning, Mexican crema, egg, cream style corn, melted butter, and green chiles.

Bake

Spread the cornbread mix in the prepared pan and bake for 30 minutes.

Poke

Remove the pan from the oven and use a wooden spoon handle to poke holes throughout the cornbread.

Pour

Pour half of the can of enchilada sauce over the cornbread.

Spread

In a bowl, combine the chicken and remaining taco seasoning and enchilada sauce. Spread over the cornbread. Top with cheese and place back in the oven.

Serve

I Have made this for many years. Very good, everyone loves it. Easy too make.
