This healthy chicken Waldorf salad uses grilled chicken and a light dressing that blends mayo with Greek yogurt! Great for sandwiches, wraps and salads.

Chicken Waldorf Salad

chicken breast

apple,

celery,

red onion

Tablespoons chopped walnuts (toasted, if you’d like)

mayonnaise

plain Greek yogurt

lemon juice

mustard

sea salt and black pepper,

fresh thyme, for garnish (optional)

Grill chicken

See notes in post above for how to grill the chicken if you haven&#8217;t done so already. Let cool, chop chicken into chunks and measure out two cups.

Mix together

Add chicken, diced apple, celery, onion and walnuts in a large bowl. In a small bowl whisk together the mayonnaise, yogurt, lemon juice and mustard until combined.

Toss with dressing

Add dressing to the bowl with the chicken mixture and toss until everything is well combined. Top with fresh thyme, if using.

Serve

Serve salad as is, in a wrap, sandwich or as a topping for salad.

Store

Store leftovers in an airtight container for 3-5 days in the refrigerator. Unfortunately chicken salad doesn&#8217;t freeze well so if you meal prep this salad plan to eat it within 3-5 days of making!

Tried this one today! It was sooo good, thank you for the recipe. I also added romaine lettuce just for more crunch and this salad is already one of my favorites!

The salad is absolutely a must to try! I didn't use mayo, because I usually do not have it at home, just tried more yougurt and mustard - and  the taste is still amazing. The thyme idea is great (I never tried it in the salads and it turned out nice). Thanks!

This is a delicious salad. I made it with grilled apple cider vinegar chicken breasts. This was very good by itself and also in a wrap with mixed greens.

Chicken breast, apples, grapes, pecans and celery in a creamy dressing. It's a perfect combination of flavors and textures. I served this over a bed of baby arugula and baby spinach, but this is also wonderful on a whole grain roll or in a healthy low carb wrap.

oz 1 breast poached chicken breast (recipe follows)

chicken broth

apple

grapes

celery (chopped)

tbsp 0% Greek yogurt (I like Stonyfield)

Kosher salt and pepper

pecans

baby greens

To poach chicken breast: Cover chicken breast in broth in a small pot, add water if it doesn't cover the chicken.

Add salt and pepper, a piece of celery and it's leaves (you could add herbs like parsley, garlic, onion, or whatever you want) and bring to a boil.

Reduce to a simmer and cook 5 minutes.

Remove from heat, cover tight and let it sit for 15-20 minutes or until thickest part of the breast registers 160 degrees. Chicken will be cooked through.

Drain, let it cool and cut into small cubes.

Combine mayo, yogurt, salt, pepper and mix well.

Add chicken, grapes, apples, celery, and let it chill in the refrigerator until you are ready to eat it.

Mix in pecans right before serving.

Serve over baby greens.

This Waldorf Chicken Salad is full of fresh grapes, apples, pecans, and celery, for a goodie-filled healthy lunch!

Waldorf Chicken Salad

tbsp lemon juice

tsp dijon mustard

tsp kosher salt

tsp black pepper

chicken breasts ((1.5lbs if cooking from raw)*)

red grapes (halved)

celery

In a large bowl, whisk to combine the mayonnaise, lemon juice, dijon mustard, salt, and pepper.

Chop the chicken breasts into small, bite-sized cubes, and add it to the dressing.

Add the grapes, apples, celery, and pecans, and toss well to combine.

Taste the chicken salad and make any seasoning adjustments according to your tastes. Sometimes I add a bit more black pepper or another squeeze of lemon juice.

Ideally, let the chicken salad chill in the fridge for at least one hour before serving, but the chicken salad is now ready to enjoy!

So good ! Who can wait an hour to eat this.
Only change was I added a little green onion.

Omigosh I love this.  A lot like the Waldorf salad mom made.
