These quick and easy chickpea fritters are flavored with spices and pan fried in olive oil until puffed and crispy!

Chickpea Fritter Puffs

chickpea flour

tsp salt

tsp baking soda

tsp cumin

coriander

tsp yellow curry powder

garlic powder

onion powder

lemon juice

water

olive oil (for frying)

Whisk to combine the chickpea flour, salt, baking soda, cumin, coriander, curry powder, garlic powder, and onion powder.

Add the lemon juice and water, and stir to combine (it will be a thick, lumpy mixture). Let the mixture sit for 10 minutes to give the chickpea flour a chance to hydrate and get even thicker.

Heat up a nonstick skillet over medium high heat, and add enough olive oil to coat the bottom of the pan.

Use a cookie scoop to portion out small mounds of the chickpea mixture into the hot oil, then coat a spatula with oil and lightly press the tops to smush the mounds down into patties.

Let the patties cook for about 2 minutes on each side until they’re golden brown, and you’ll see them puff up considerably.

Drain them briefly on paper towels after frying and enjoy them while they’re hot!

You can serve them with a sprinkle of good quality salt or some tzatziki sauce. Enjoy!

Made this tonight. Everything was easy but I struggled to know when they were cooked through. Taste delicious.

I made everything but the tzatziki as I didn't have fresh dill. Delicious. added two additional eggs and 3 tbsp of flour as I had 2 19Oz cans of chick peas. I also added one small chopped onion and fresh cilantro instead of coriander spice. Also I fried the fritters till brown then transferred to the oven for 15 minutes at 400 because of the raw onion and egg. This is the tricky part as you want the mixture thoroughly cooked but not dried out. Also found it helpful to refrigerate the patties prior to frying so that they hold their form better.

Pour the chickpea flour into a saucepan, add the salt, and mix. Add the water little by little and mix it with a whisk until the mixture is lump-free.

Thicken the mixture over medium heat for a few minutes, stirring constantly with the whisk. It should form a sort of polenta that comes off the sides of the pot. The mixture must be compact and not liquid!

Transfer the mixture to a cutting board lined with parchment paper.

Spread with a knife to a thickness of 0.25 inches.

Let it cool at room temperature for about 20 minutes.

Lay a second sheet of parchment paper on the surface and roll out with a rolling pin without squeezing, but just to create a uniform surface.

Shape the edges so as not to waste dough and let it cool completely before cutting your squares. Use a square or rectangular cookie cutter. Circles are also good, or you can simply use a knife.

Fry in plenty of oil in a large pan for about 2 minutes without turning.

Drain on absorbent paper, sprinkle with salt, and if you prefer, squeeze a few drops of lemon juice over it.

In a medium bowl, combine the chickpeas, all purpose flour, parmesan cheese, fresh herbs, cumin, garlic powder, salt and pepper. Add two tablespoons of water and use a fork or masher to combine the ingredients until they are well blended.

Divide the mixture into 6 equal parts and form into thin patties.

In a large pan, heat the oil until it&#039;s shimmering. Then add the chickpea fritters and cook until browned and fully cooked through, about 2-4 minutes per side.

Place on a plate lined with a paper towel to absorb any excess oil, then serve with tahini sauce or any other sauce of choice.

Put the peas in a colander and run under the hot tap to defrost. Drain well, then put half into a food processor. Add the chickpeas, flour, garlic, cumin seeds, peanut butter or tahini, parsley, lemon zest and plenty of seasoning. Whizz the ingredients to a paste, adding a splash of water if it looks too crumbly. Using wet hands, shape the mixture into 8 patties, dust with flour, then place on a plate and chill for 10 mins, or longer if you have time. Boil the kettle.

Place the couscous in a large bowl, season, then pour over enough boiling water to just cover. Set aside for 5 mins.

Heat 2 tbsp oil in a large pan. Cook the falafels for 2-3 mins on each side, until crisp and golden – you may have to do this in batches, so keep them warm in a low oven while you do. Add the remaining oil, lemon juice, mint, tomatoes and peas to the couscous. Serve the salad and falafels with a dollop of yogurt.

Combine the chickpea mixture, vegetables, parsley, and spices together in a mixing bowl, and then form into four patties.

Heat the oil in large skillet over medium heat. Once hot, add the chickpea patties and cook for three minutes on each side or until golden brown.

Set the patties on a plate lined with a paper towel to absorb any excess oil.

Drain the chickpeas (I save the liquid to use as an egg replacer in baking). Rinse with cold water (this removes some of the sodium).

Add to a shallow dish with the flour, Parmesan, cumin, garlic powder, salt, and 2 tablespoons water.

Mash with a potato masher until very smooth and uniform, adding another 2-4 tablespoons of water as needed.

Form into round, flat patties using 1 tablespoon batter in each. Patties should be about ½ inch thick.

Add olive oil to a pan over medium heat and cook the fritters for 2-3 minutes on each side or until golden brown.

Place onto a paper towel to drain, if desired, and serve warm with desired dips.
