Middle Eastern Salad Tacos with spiced chickpeas, hummus and a mound of lemony salad, topped with fresh herbs and scallions. Vegan &amp; sooooo Delicious!

Middle Eastern Salad Tacos

olive oil

chick peas,

sumac

cumin

salt

sesame seeds

arugula

tomato, diced

turkish cucumbers, diced

lemon juice

coriander

¼ teaspoon salt, more to taste

Heat oil in a medium skillet over medium heat. Add chickpeas and spices and salt. Warm through, stirring. During the last minute add the sesame seeds. Turn heat off.

Toss the salad ingredients together in a medium bowl. Lightly toast the tortillas until warm and pliable.

Assemble. Spread hummus or baba ganoush onto the warm tortilla. Top with warm chickpeas and a heaping mound of the salad. Sprinkle with herbs and scallions.

The Middle Eastern Salad Tacos are so easy to make and packed full of flavor. I ate as an easy quick lunch for a couple of days after making for dinner one night.  The tahini sauce is awesome.  I’m obsessed with all of the chick pea recipes here!

I made this a salad (no tortillas) and it was perfect. Light, but filling enough for dinner. Took me no time, maybe 15 minutes! The price is right too lol! Meat is so high these days...

I made this early last year and lost the recipe I printed. I printed another one tonight. It is literally my favorite taco. So bright and versatile. 
I only had lemon dill hummus on hand tonight so I used that and switched the tahini sauce for a vegan creamy dill dressing. The original is amazing of course but such a great idea to have in your rotation. I can't wait to try more recipes :)

Was all set to make the herby chick pea sandwich which we love, but then saw this, so changed path and made these. They are Wonderful! I didn't have cucumber, so I did  shredded carrots and chopped celery in the salad part with tomatoes etc, herbs parsley mint and a bit of purple basil -used hummus on this. Would love to try the other suggestions next time too. Great vegetarian option. Loved the Zaatar seasoning with this too. Thanks. A keeper!

These are a quick, healthy and tasty lunch option!

15 Minute Chickpea Tacos

Olive oil

chickpeas,

tsp cumin

paprika

tsp smoked paprika

tsp chili powder

granulated garlic

onion powder

Salt,

Corn tortillas

Optional taco toppings: avocado, salsa,

Start by rinsing and draining your chickpeas.  I like to pat them down with a kitchen towel to get rid of most of the moisture.  Heat a large skillet over medium heat and add a few tablespoons of olive oil.

Next, add your chickpeas to the hot oil and let cook until crispy and golden, 5-7 minutes.  I like to mix my spices up while the chickpeas are cooking.  Add all spices to a small bowl and mix until combined.  Pour over the chickpea and mix until all chickpeas are coated.

You may want to add a little extra olive oil at this point if it seems too dry.  Then, cook for just a few minutes until spices are nice and browned, but not burnt.

Assemble your tacos: Warm your tortilla and then add a few spoonfuls of the chickpea mixture.  Top with your favorite taco toppings and enjoy!

Easy and delicious plant-based tacos filled with spicy peanut chickpeas and a simple cabbage slaw.

Peanut Chickpea Tacos

coleslaw cabbage mix (about 3 ½ cups)

rice vinegar

tbsp sesame oil

green onions, thinly sliced

cilantro

salt and pepper

peanut butter (45 g)

maple syrup

Sriracha

tbsp tamari or soy sauce

garlic clove,

¼ tsp ground ginger

1-15 oz can chickpeas, drained and rinsed

tsp oil

red bell pepper, diced

shallot, peeled and thinly sliced (50 g)

peanuts

cilantro,

corn or flour tortillas

Make the Slaw

Add all of the slaw ingredients to a large bowl and mix to combine. Season with salt and pepper.

Make the Peanut Sauce: Add all of the peanut sauce ingredients to a small bowl and whisk until smooth. Slowly add warm water one tablespoon at a time, until a pourable sauce is achieved. 

Make the Chickpeas: 

Heat a large non-stick pan over medium-hight heat. Add 2 tsp oil or water then add the chickpeas, peppers and shallots. Season with salt and pepper.  Cook for 4-6 min, stirring occasionally, until veggies are tender and chickpeas are golden brown. 

Add Sauce

 Add the peanut sauce. Cook for 1-2 min, to warm through.

Serve

 If desired, warm tortillas in a pan before serving. To assemble tacos, divide peanut chickpeas between 6 tacos, then add some slaw on top.

Sprinkle peanuts and remaining cilantro over top. Drizzle with more sriracha or hot sauce, if desired.  Serve remaining slaw on the side.

These delicious, vegan chickpea tacos feature chickpeas in spicy peanut sauce paired with simple tangy slaw for a quick and easy meal.

Chickpea Tacos

These flavorful chickpea tacos are so easy to prepare, a great weeknight, lunch or Taco Tuesday meal, chickpea cooked with onion, garlic, and homemade taco seasonings. These homemade tacos are way better than eating out.

onion (finely chopped)

garlic (minced)

Cayenne pepper (or chili to taste)

coconut sugar (or cane sugar)

taco shells

salsa (homemade

recipe guacamole (*link to the recipe)

sour cream

onion

lettuce (chopped)

grape tomatoes (halved)

Heat oil in a large skillet over medium heat. Add onion and saute until soft about 3 minutes.

Stir in garlic, cumin, paprika, coriander, cayenne pepper, sugar and cook until fragrant about 1 minute. Add chickpeas and stir to coat, using the back of the spoon to mash some of the chickpeas for about 2 minutes.

If the chickpeas are too dry you may now add about 1 tablespoon or 2 of water to moisten. Season with salt to taste.

To assemble, place about 1/4 cup chickpeas in each taco shell, then layer with salsa, guacamole, and sour cream. Garnish with lettuce, tomato, spring onions.

I really enjoyed the chickpea filling.  It is so delicious. I cut the cayenne pepper amount in half for the taco seasoning for my sons.  They don't really like spicy food.  I also mashed the chickpeas a great deal.  They devoured their chickpea tacos.  We will definitely add this as a regular to our diet.  So flavorful!!
