Chili Relleno Casserole

((7 ounce) whole green chilies, drained)

Monterey Jack cheese (, divided)

cheddar cheese (, divided)

Preheat oven to 350 degrees F. Lightly coat a 3-quart baking dish with nonstick spray.

In a medium bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper, until thoroughly combined.

Open up each chili and clean out any seeds; place half of them on the bottom of the baking dish, laying them flat. Sprinkle 1 cup of the jack cheese and 1/2 cup of the cheddar on top. Repeat layers once. Pour egg mixture over the top.

Place in the oven and bake for 45 minutes until puffed up in the center and golden around the edges.

Let stand and cool for 5-10 minutes before cutting. Slice into squares and serve with salsa and sour cream, if desired. Enjoy!

Fresh Chile Relleno Casserole

 Serve this cheesy Chile Relleno Casserole from Pioneer Woman for breakfast, dinner, or whenever you are craving something cheesy, spicy, and full of Mexican flavors. You can use either roasted poblano peppers or canned green chiles.

Start by preheating your oven to 350 degrees F.

Wash and pat the peppers dry. Arrange the rack on the highest level, and place the pan under the broiler. Turn the broiler temperature to 500 degrees Fahrenheit.

Broil the peppers for about 5-7 minutes or until the skin has blackened, then turn the peppers and broil until the other side is blackened. Continue cooking until all sides of the peppers are blackened.

Remove the peppers from the oven and place them in a ziplock bag or paper sack. Steam the peppers for about five minutes to soften the skin.

Remove one chili from the bag at a time and peel off the skin. Slice the chili down the middle and scoop out the seeds and stem.

Roast Poblano Peppers:

If using poblano peppers, follow the directions for roasting. Put a piece or two of cheese in the middle of each poblano pepper and roll it up.

Place chilis in a 9 x 13-inch pan or a 2-quart casserole dish.

Whisk the eggs and milk together in a mixing bowl. Mix the flour, baking powder, salt, and pepper together before adding the eggs.

Stir the eggs gently with the flour and pour over the chilis.

Sprinkle the cheese over the eggs and peppers.

Place the casserole in the oven and bake for 20 minutes.

Remove your Pioneer Woman Chile Relleno Casserole and serve immediately.

Make The Casserole:

This Chile Relleno Casserole is made with roasted, cheese-stuffed poblano peppers covered in a fluffy egg batter, topped with more cheese, then baked until light, crispy, gooey, and perfectly golden.

Chile Relleno Casserole with Fresh Poblanos

poblano peppers (washed and dried)

canola oil (or other neutral tasting oil)

Preheat the oven to 425°F, and line a baking sheet with aluminum foil. Place the peppers on the baking sheet and drizzle with oil. Rub the oil evenly over peppers then transfer the pan to the oven.

Cook the poblanos for 25 to 30 minutes, turning occasionally. The skins should blister and blacken.

While the peppers roast, make the filling. In a medium bowl or measuring cup, whisk together the eggs and milk. Add the flour, baking powder, and salt. Set aside.

Remove the peppers from the oven, and reduce the oven to 350°F. Allow the peppers to cool until they’re easy to handle, then peel away the skins and discard. Cut off the stems and tops, and remove the seeds and membranes.

Place a 1 ounce piece of cheese into each poblano. Lay the poblanos in a single layer in an 11x7-inch or 9x13-inch baking dish. Pour the egg mixture over the peppers. Top with remaining 4 ounces of shredded Monterey jack cheese.

Bake for 30 minutes or until the top is golden brown and the center is set. Remove from the oven and serve with sour cream or salsa if desired.

I found this recipe yesterday and I couldn't wait to try it. I usually make my Chile Rellenos the old fashioned way and I honestly didn't think these would be as good, and I don't usually write reviews but these were so easy to make and they were absolutely delicious!!! Thanks for your recipe!

For gluten free, what gf flour would be the best to use?

I’ve made this a few times and love it. I used half cornmeal and half flour. I’ve also chopped the poblanos when serving it at a party to make sure everyone gets some pepper.

These were amazing! I used a 1to 1 gluten free flour blend and probably added a little more seasoning.. (talking to you cumin) my only “problem” is I’ve been craving it and can’t find poblano peppers. Guess I”ll be growing some next year🌶️

I would add more salt. Adding 3/4 tsp of garlic powder helped. I think it may have been too bland if I had not done that.  But, it is really good!

I made, and loved, this recipe.  Firstly, the poblanos are so tasty!  I would not want to use another pepper.  The cheesy-eggy part was so yummy.  Of course, I do love chiles rellenos!  Making this recipe at home brings all of the flavor when one doesn't feel like finding a restaurant that has them.

Hatch chile relleno casserole with two different cheese and plenty of Hatch Green Chile. This Baked Chile Rellenos recipe is super easy.   We use canned chiles which makes it easy  for the perfect side dish or a meatless main dish.

Hatch Chile Relleno Casserole

green chiles

cheddar cheese (grated)

Monterrey Jack cheese (grated)

eggs (separated)

Tablespoon Flour

Preheat your oven to 350° F and grate both cheeses if not already grated and set aside.  Spray a 9 x 13 baking dish with non stick cooking spray. 

Seed the hatch green chiles, split them open and lay ½ of them in the bottom of the baking dish.

Add the grated cheddar cheese on top of the green chiles.  It may seem like too much but trust me, it’s perfect. 

Layer remaining Hatch green chiles on top of the cheddar adjusting so that there are not empty spots. 

Top the hatch green chiles with the pound of grated Jack cheese and even it out in the casserole dish.

Separate egg whites from the yolks with an egg separator and set the egg yolks aside. 

Beat the egg whites with a mixer in a separate bowl until stiff and then set aside.

Add the flour and milk to the egg yolks and mix well.   Gently fold the whipped egg whites into the egg yolk, flour, milk mixture.  

Gently pour the mixture over top of the Hatch chile relleno casserole and spread it out evenly. 

Cover your casserole dish with aluminum foil and place in preheated oven.   Bake the casserole for one hour, covered, uncover and bake 5-10 minutes longer to brown. 

Remove from oven and allow it to rest for at least 10 minutes before serving.

I’m not sure where you get your poblanos but the ones I grow in my garden on sometimes so hot you couldn’t even eat them like that.

That was so good!  Now this is the only way we will make Chile Rellenos.
