Make a light and easy, plant-based version of the classic Mexican dish Chiles Rellenos in this vegan recipe, which is still heavy on flavor.

Vegan Chile Rellenos Casserole

Poblano chiles

½ teaspoon extra virgin olive oil

½ cups shredded plant-based cheese, cheddar-style

cilantro

green onions, sliced

Slice chiles in half, and scoop out seeds. Place, cut side down, in a 9 x 13-inch baking dish, drizzle with ½ teaspoon extra virgin olive oil, and place on top rack. Broil for 5-10 minutes, until slightly blackened.

Remove from oven and let stand for a few minutes to cool slightly and sweat. With your fingers, peel away the skin and discard.

Place peeled, roasted chiles, cut side up, on the bottom of the baking dish.

While chiles are roasting, prepare Quinoa Filling: Heat 1 teaspoon olive oil in a large skillet or sauté pan. Add onion, zucchini, garlic, and bell pepper. Sauté for 8 minutes. Stir in cumin, chili powder, corn, cooked quinoa, and tomatoes. Cover, and sauté for an additional 5 minutes, until vegetables are tender.

Spread Quinoa Filling evenly on top of roasted green chiles.

Place in oven and bake for about 30 minutes, until cheese is melted and surface is slightly golden.

Remove from oven, sprinkle with cilantro and green onions and serve immediately.

Cheese Chile Relleno

fresh anaheim chiles (about 3 pounds)

queso Cotija or queso fresco

Roast or char the Anaheim chiles by either placing them on a tray under the broiler, directly on the grill, or directly over the open flame. I prefer to broil them because you can do more at one time, and it just seems faster and easier. Whatever method you choose, turn them every 2 to 3 minutes for a total of 6 to 9 minutes. They must seem charred and blistered on the outside, and the flesh must be cooked but not burnt.

Once charred and hot, place the chiles in a plastic bag, close it tightly, and let them sweat for at least 10 minutes. Lastly, under a thin stream of cold water, or using a bowl of water, remove the charred skin, which should come right off. Make a slit down one side of the chile and remove the cluster of seeds and veins.

First, prepare the chiles for stuffing:

Stuff each chile with about 1/3 cup cheese or as much as will fit allowing them to close. You may seal with a toothpick.

Place 1/2 cup all purpose flour on a plate, roll the stuffed chiles in the flour, and let them sit. The flour coating will help the batter coat and stay on the chiles later on.

Second, stuff your chiles:

In a mixer, beat the egg whites until they can hold stiff peaks. Gently, over low speed, fold in the egg yolks and only beat enough to incorporate them, a few seconds.

Third, prepare your batter:

In a large casserole, heat about 1/2” depth of oil, over medium to medium-high heat. Once hot, test the oil by dipping in a piece of tortilla or bread — if there are active and happy bubbles all around it, the oil is ready. If and when oil is ready, dip each of the stuffed and floured chiles into the egg batter, making sure that they are entirely covered in batter. Gently place them in the hot oil, trying to keep the side that was open or sealed with the toothpick facing up. Spoon some of the hot oil on top, so that it will seal the chile. Make as many as will fit in the casserole without overcrowding them. Fry for about 2 minutes per side, until golden brown. Make sure you flip them gently with a slotted spoon. Once ready, place on a paper covered drying rack or platter.

(Note: If you are going to eat later, you may warm up the chiles in a baking dish in a 300℉ oven for 10 minutes.)

To make tacos, place the chiles rellenos in flour tortillas and top with shredded cabbage, colorado chile salsa, Mexican crema, and crumbled queso Cotija or queso fresco.

Fourth, batter and fry the chiles:

This casserole is Weight Watchers friendly, but it also makes for an easy and delicious dinner!

Preheat oven to 350°F.

Cook chicken or turkey and chopped onion in a nonstick skillet over medium-high heat until meat is browned, stirring to crumble. Remove from heat; add cumin and next 5 ingredients. Stir well; set aside.

Arrange half of green chiles in an 11x7-inch baking dish (or a 9x9); top with 1/2 cup cheese. Spoon mounds of meat/bean mixture onto the cheese; spread gently, leaving a 1/4-inch border around edge of dish. Top with corn. Arrange remaining green chiles over corn; top with 1/2 cup cheese.

Combine flour and 1/4 teaspoon salt in a bowl; gradually add milk and next 3 ingredients, stirring with a whisk until blended. Pour over casserole.

Bake for 1 hour and 5 minutes or until set; let stand 5 minutes. Garnish with onion and cilantro sprigs, if desired.

Authentic Chiles Rellenos de Queso Recipe

Place the poblano peppers over direct flame or a hot pan and roast on all sides until blackened. Use your oven or stove fan!

Put the blackened poblano peppers in a ziploc bag and let it sweat for about 10 minutes.

Remove from the bag, and place under a stream of cool water, removing the skin.

Slice down the middle from the bottom to just short of the stem

Add the cheese to each pepper and then seal closed with toothpicks

Coat in the flour, then in the egg white batter and fry until golden brown.

Serve immediately with the salsa

To prepare the chiles

Separate the egg whites from the yolks

Add the salt and then beat the egg whites until soft peaks form

Use to coat the chiles rellenos as shown in the first part of this recipe.

For the Batter

Boil the chile ancho and chile guajillo in sufficient water for 5 minutes.

Once softened, remove the seeds from the chile ancho and chile guajillo. Set aside.

Roast the tomatoes, garlic, and onion in a hot pan until browned. Set aside.

Take the chiles, the tomatoes, garlic and onion and blend with the chicken stock, salt, and oregano until smooth.

Add to a hot pan with the oil and bring to a boil. Lower heat and let simmer until ready to serve.

Pon los chiles en una charola sobre el asador, directamente en una parrilla o sobre la hornilla de la estufa. Yo prefiero ponerlos en el asador, pero sin importar el método que escojas, voltea los chiles cada 2 ó 3 minutos hasta que los ases de 6 a 9 minutos. Deben verse quemados por fuera, mientras que por dentro deben estar cocidos sin haberse quemado. Ponlos inmediatamente en una bolsa de plástico, ciérrala bien y deja sudar los chiles de 10 a 20 minutos. Por último, saca los chiles de la bolsa y bajo el chorro de agua fría, quítales la piel quemada, que debe desprenderse fácilmente. Haz un corte lateral a cada chile y retira las semillas y las venas. Una vez que todos los chiles estén limpios, sécalos con una toalla o servilleta de cocina.

Rellena cada chile con 1/2 taza de queso rallado, o lo que le quepa, dejando espacio para poder cerrarlos con un palillo. Pon 1/2 taza de harina en un plato; pasa cada chile por la harina y deja reposar. La capa de harina ayudará a que el empanizado no se desprenda.

Para preparar los chiles poblanos:

En una batidora, bate las claras de huevo hasta que formen ondas duras. Con cuidado, a velocidad baja, incorpora las yemas y sólo bate lo necesario, unos segundos nada más.

Para preparar el empanizado:

En una olla grande, calienta 2 cm aprox. de aceite a fuego medio-alto. Una vez que esté caliente, checa el aceite poniendo una cucharadita de empanizado, si burbujea alrededor, está listo. Pasa cada uno de los chiles por el empanizado de huevo, cubriéndolos por completo. Pon los chiles en el aceite cuidando de no encimarlos, con el lado de la abertura hacia arriba. Pon un poco del aceite caliente encima de los chiles con una cuchara, para sellarlos. Fríe durante 2 minutos de cada lado, volteándolos con cuidado con una cuchara, hasta que estén dorados. Pasa los chiles a una rejilla o platón cubierto con servilletas de papel para absorber el aceite.

Calienta la salsa roja. Sirve los chiles con una porción generosa de salsa encima. También puedes poner los chiles rellenos en un refractario con la salsa encima. Cómanlos mientras estén calientes.
