Chimichurri sauce and steak are absolutely magical together, and this recipe is so easy. The steak is tender and loaded with flavor from the delicious chimichurri!&nbsp;

Chimichurri Flank Steak

Make the chimichurri: In a food processor, add the garlic. Pulse until minced. Add fresh parsley and cilantro and pulse until finely chopped. Add remaining chimichurri sauce ingredients and pulse until well combined. Set aside.

Marinate the steak: If the steak is large, about 2 pounds, or too big to fit into your skillet, cut it down the middle now. Make sure to cut against the grain (See Tips section in post content for help). Place steaks in a large baking dish or plastic food storage bag and add 1/3 cup chimichurri. Turn to coat. Marinate for at least 30 minutes, preferably 1-2 hours.

Sear the steaks: Heat a large cast iron skillet over medium-high heat for about 3 minutes. Remove steaks from chimichurri and scrape off excess marinade. Pat dry and sprinkle with a modest amount of salt.

If working with two pieces of steak, pour 1 tablespoon of avocado oil into a cast-iron skillet and let heat about 30 seconds or until shimmering but not smoking. If working with steak in one piece, pour 2 tablespoons avocado oil in and heat.

When the oil is shimmering, use a pair of long tongs and carefully place steaks in skillet. Cook 3-4 minutes on each side, depending on the thickness of the steak. See Note 1 for details.

Remove steak from skillet and let rest on a cutting board for 5 minutes. Repeat with the second piece of steak, if steak had been cut in two. After resting, cut the steak into 1/2" slices against the grain. Arrange on a large serving platter and top with fresh chimichurri sauce. Serve with additional chimichurri.

Chimichurri Steak Bowls with Roasted Potatoes

organic, grass-fed flank steak

organic extra-virgin olive oil (, plus 2 tablespoons)

Preheat oven to 425F.

Rub 1 tablespoon olive oil into steak, and liberally season with salt and pepper on both sides. You can cook the steak on the grill or in a cast-iron pan. I recommend 5 minutes per side for medium-rare. Let rest for 5-10 minutes after cooking, and then thinly slice against the grain.

Meanwhile, toss diced potatoes with 2 tablespoons olive oil and season with salt and pepper. Roast for 30 minutes, tossing halfway through.

Evenly distribute cooked rice across 4 bowls. Top with steak, roasted potatoes, avocado and pickled onions. Drizzle chimichurri evenly across each bowl. Serve and enjoy!

Simple Chimichurri Sauce

tsp Lane's SPF 53 Seasoning

Salt

Black pepper (16 mesh)

red chili pepper

Flat leaf Parsley

tbsp Red Wine Vinegar

Olive Oil

Chop Parsley finely. Remove seeds and ribs of red chili pepper and dice.

Add Parsley, Olive oil, Red chili pepper, Garlic, 2 large pinches of salt and pepper, Red wine vinegar, and 1-2 tsp Lane&#39;s SPF53 Rub

Mix well and place in the refrigerator up to 24 hours.

Fresh Chimichurri Sauce for Flank or Skirt Steak

oregano leaves ((or sub 1 tbsp dried))

To make the chimichurri sauce, add all of the sauce ingredients to a food processor or high-powered blender. Process until everything is finely chopped. Don't overprocess and puree. Transfer to a container and refrigerate while you cook the steak.

Heat your grill to high heat (450-500° F). Season steak with salt and pepper on both sides.

Add the steak to the grill and grill for 3-4 minutes and flip. Grill for another 2-4 minutes, or until the steak is cooked to your liking. Remove and place on a cutting board to rest for at least 5 minutes.

Slice the steak against the grain. Serve topped with chimichurri sauce and with your favorite side dish!

For grilling:

Heat a large skillet over medium high heat and add in some avocado oil or ghee. Season steak with salt and pepper on both sides. Depending on the size of your skillet, you may have to cut your steak in half and cook it in two batches.

Once the skillet is hot and shimmering, sdd the steak and cook for 3-4 minutes. Flip and cook for another 2-4 minutes, or until the steak is cooked to your liking. Remove and follow directions above for resting, cutting and serving.

Transfer into a small bowl. Add oil, gently stir. Set aside for 1 hour before use, overnight is even better!

Store in an airtight container in the refrigerator and use within 3 days (Note 3). Makes 3/4 cup.

Take steak out of the fridge 30 minutes prior to cooking.

Heat BBQ or heavy based skillet with 1 tbsp vegetable or canola oil over high heat until smoking.

Sprinkle each side of steak generously with salt and pepper.

Add steak and cook to your liking.&nbsp;

Cook times:&nbsp;for steak 2cm / 4/5” thick, 2 min on each side for medium rare (until internal temp is 52C/125F, will rise to 54C/130F after resting) OR 2 1/2 min each side for medium (internal temp 57C/135F, will rise to 60C/140F).&nbsp;

Transfer to a plate, cover loosely with foil and rest for 5 - 10 minutes.

Cut thin slices against the grain (see photo below) and serve with Chimichurri Sauce on the side so people can help themselves.
