Chipotle Black Beans Recipe Copycat

olive oil

yellow onion (finely diced)

garlic (minced)

black beans (rinsed)

bay leaves

cumin

parsley

oregano

paprika

chili powder (or more)

water (or more as needed)

Salt

Rinse the beans, sort and discard any that seem bad.

Place a large Dutch oven or large stock pot over medium heat, add oil and bring to a shimmer.

Add the diced onion and cook until softened, about 3-5 minutes.

Add garlic, stir and cook until fragrant, about 30 seconds.

Add the black beans, cumin, dried parsley, oregano, bay leaves, and stir to combine. Add enough water to cover the beans.

Bring to a boil and reduce heat to medium-low, simmer until beans are tender, about 2 hours. Add more water as needed if the beans are not covered.

Once done, remove from heat and discard bay leaves.

Add the lime juice, add paprika and chili powder, stir to combine. Taste and adjust for salt and spiciness.

Serve over rice with lime wedges.

How to Make Chipotle Black Beans Copycat Recipe - Sweet and Savory Meals

Mexican Black Beans just like the ones you love from Mexican restaurants but homemade! With  a short list of budget-friendly pantry ingredients and 40 minutes, you can achieve gourmet flavors and the perfect creamy texture. Use them as a protein-packed addition in burrito bowls, tacos, nachos, and more!

Mexican Black Beans

(15-ounce 425 grams) cans black beans, undrained*

½ tablespoons extra virgin olive oil

garlic cloves, (chopped)

jalapeño or serrano pepper, (diced**)

chipotle chile flakes

kosher salt

black pepper

(454 grams) fresh tomatoes tomatoes

extra virgin olive oil****

lime juice

(16 grams) fresh cilantro leaves and stems, chopped

Don’t drain the beans!

Prep the fresh tomatoes, if using. Wash, and then add to a food processor and pulse until pureed. Or grate the tomatoes using the wide holes of a box grater.

Make the sofrito. Heat a large sauté pan over medium heat with 1 ½ tablespoons of oil. Once hot, add the onion with a pinch of salt and cook until the onion has softened and is golden but not browned, 5 to 6 minutes, stirring occasionally. Add the garlic, jalapeño, cumin, oregano, and chipotle flakes (if using) and cook for 1 to 2 minutes, stirring frequently.

Add the diced tomatoes. Adjust the heat as needed to maintain a rapid simmer and cook until the tomatoes break down and most of the liquid has evaporated, 8 to 10 minutes. Season with the kosher salt and several cracks of black pepper.

Pour the black beans with their liquid into the sofrito. Bring to a simmer and simmer for 15 minutes until thickened and saucy.  If it gets too thick, add a splash of vegetable broth if you have it, or water.

Stir in a glug of extra virgin olive oil, a squeeze of lime juice, and cilantro. Taste, and add salt/pepper or more lime juice to taste.

These Chipotle Black Bean Burrito Bowls are both nourishing and tasty! Full of spicy Black Beans, seared Corn, Brown Rice, and other fresh veggies.

Chipotle Black Bean Burrito Bowls with Seared Corn

Corn,

tsp Lime Zest

Lime

Chipotle Garlic Black Beans, cooked

dry Brown Rice

Seared Corn, above

Kale,

Vegan Chipotle Mayo, plus more for topping

Cherry Tomatoes, sliced

Avocado, Cilantro, and diced Red Onion for garnish

First, prep your Rice. Add the dry Brown Rice to a pot with 1 3/4 cups of water; bring the mixture to a boil, cover, and then simmer on low heat for 45 minutes. You can also cook your Beans here as well, if you haven&#8217;t already.

In the meantime, wash and prep your Veggies. Add the chopped Kale to a large bowl with the Vegan Chipotle Mayo; use your hands to massage the Mayo into the Kale for a minute or so, adding more dressing as necessary. Set aside on the counter or fridge, if you&#8217;d like it to be cold for serving.

Next, prepare the Seared Corn. Add the Corn and Lime Zest to a large non-stick pot over Medium-High Heat. My Corn was very juicy so I did not need to add any water to get this “started”, but if your Corn is dry, add 1/3 cup of Water to the pot as well to get things going. “Sear” the Corn for 10-12 minutes, stirring occasionally to ensure that all sides are evenly cooking. The Corn will gradually become brown around the edges, and you may have some brown marks on the bottom of the pot – don’t worry though, this is creating flavor!

Next, “de-glaze” the pot by adding the Lime Juice to it and quickly stirring it throughout the Corn. This will remove the brown marks on the bottom of the pan, and incorporate that flavor into the Corn. Turn off the heat, add Salt to taste, and set aside.

Finally, assemble each bowl. Place your desired amount of Massaged Chipotle Kale, Black Beans, Brown Rice, and Seared Corn into each bowl. Top with Tomatoes, Avocado, Cilantro, Red Onion, and an extra drizzle of Chipotle Mayo*.  Refrigerate leftovers in an airtight container for up to 7 days.

Just finished making these bowl and they turned out amazing! Especially love the seared corn - I used canned corn and it turned out great! It took me about an hour to prep and cook all the components and now I have a delicious lunch for the the rest of the week. Thanks Caitlin!

I already had mayo and didn't want to buy cashews, so I used that and I also added chili lime seasoning to the corn and it was super delicious. Definitely making this again, thanks for the recipe !

Hearty and flavourful, this black bean recipe using black turtle beans makes for a delicious dinner or filling side. The black beans are infused with lots of flavour from ground chipotle chili pepper and smoked paprika. Once you try this easy baked black bean recipe, you&#39;ll want to make it again and again, it&#39;s that yummy!

Smoky Baked Black Beans

black turtle beans

water (you'll need water

chipotle chili pepper

smoked paprika

chili powder

tomato paste

BBQ sauce (divided (1/3 cup plus 2 tablespoons))

vegetable broth

fancy molasses

onion

salt (or

Lime wedges (for serving (optional))

Pick over beans and discard any foreign bits, rocks and imperfect beans. Rinse beans with fresh, cold water and drain. Place beans in a large bowl and generously cover with fresh, cold water so they&#39;re submerged (and at least two inches or so of water over top). Cover and soak overnight in the refrigerator, for about 12 hours.

The next day, drain beans and rinse again with fresh, cold water.

Place beans in a pot, cover with water (there should be an inch or two of water above the beans, basically ensuring that they are fully submerged and covered by the water). Bring to a boil over medium-high heat, then reduce the heat (to about medium-low) to maintain a simmer. Cover and cook for 35 to 45 minutes or until beans are tender, but not mushy (they&#39;ll finish cooking in the oven). Drain.

Preheat oven to 350 degrees Fahrenheit.

Meanwhile, transfer beans to an enameled cast-iron Dutch oven (about 5 quart). Add oregano, garlic, bay leaves, chipotle powder, smoked paprika, chili powder, tomato paste, 1/3 cup of BBQ sauce, vegetable broth, molasses, onion and black pepper. Stir to combine. Cover and bake for 3 hours.

After 3 hours, carefully remove the pot from the oven and add 1.5 cups of water. Stir. Place back in oven. Bake for about 2.5 to 3 hours more until beans are cooked through and tender.Note: Time may vary, depending on how fresh your beans are and how you like them done. Continue cooking and adding water until you&#39;ve reached your desired doneness and consistency.

Carefully remove from the oven and add another 1/2 cup or so of water (depending on desired consistency) and stir to combine. 

Stir in remaining 2 tablespoons of BBQ sauce. Stir in salt and adjust to taste, if necessary. Remove and discard bay leaves. I love serving up and squeezing a fresh lime wedge over top. Enjoy!

Copycat Chipotle Black Beans

Place a skillet over medium heat, add oil, then add onions and cook until translucent, approximately 4 - 5 minutes, stirring occasionally. Add garlic and cook for 30 seconds.

Add black beans, water, chili powder, oregano, bay leaf, cumin, salt, and pepper and bring to a boil; reduce the heat and simmer for 15 minutes, until the mixture has thickened. Remove from the heat and add lemon and lime juice; serve and enjoy.

For the Chipotle Black Beans

These Chipotle Lime Black Bean Bowls have the right amount of smoky flavor mixed with citrus for the perfect bite. Cooks in less than 30 minutes and great to meal prep ahead of the week.

Chipotle Lime Black Bean Bowls

red onion, diced

red bell pepper, diced

green bell pepper, diced

chipotle peppers, finely minced

maple syrup

Zest and juice of 1/2 a lime

Kosher salt

unsweetened plant-based yogurt

avocado

tsp red wine vinegar

garlic, grated

chives

water

Heat up the oil in a large skillet over medium low heat. Once hot, add the onions and a pinch of salt and sauté until softened. Stir in the bell pepper and sauté again for 2 minutes.

Add the garlic and cilantro stems, stirring well until fragrant then stir in the spices until well combined.

To the pan, add the chipotle peppers, black beans and vegetable broth. Stir to combine then bring everything to a boil before reducing the heat to a simmer. Cook for 10-15 minutes, stirring occasionally.

Using the back of your cooking spatula or spoon, lightly mash 1/3 of the beans and stir again to combine. This will help thicken the stew.

Remove the pan from heat, stir in the maple syrup, lime juice and lime zest. Once combined, taste and adjust salt as desired.

For the sauce place the yogurt, avocado, vinegar, lime juice and zest, garlic, fresh and dry herbs, a pinch of salt, and water in a blender cup and blend until smooth. If too thick stir in 1-2 tbsp of water at a time until the sauce is at your desired consistency.

When ready to enjoy, serve the beans over rice and top with the avocado cilantro sauce.

This was delicious and simple to prepare. I just noticed frozen plantains at Trader Joe's so I used those as a shortcut. Great meal! Thank you!
