A Tex-Mex style casserole with seasoned ground beef, layered between a biscuit crust, with tomatoes, topped with a sour cream and cheese sauce and finished with a cornbread topping, perfect for potlucks, church suppers, or just dinner at home!

South Mississippi-Style John Wayne Casserole

full fat sour cream

mayonnaise

cheese,

(10 ounce) can diced tomatoes with green chilies (like Rotel), well-drained

butter

onion

sweet bell pepper

jalapeno

beef

(1 ounce) packet taco seasoning mix or equivalent homemade

cayenne

water

(8 ounce) package biscuit mix (like Jiffy or Pillsbury)

(8 ounce) package cornbread/muffin mix (like Jiffy)

milk

The north Midwestern potluck fare of choice.

Church Supper Hot Dish

potatoes

celery, finely chopped

carrots, finely chopped

green bell peppers, finely chopped

onions,

condensed cream of mushroom soup, undiluted

cheddar cheese

Preheat oven to 350˚. Grease a 2-quart baking dish.

Brown beef in large skillet. Remove from pan and set aside.

In same skillet sauté potatoes and vegetables in butter on medium heat for 5 minutes. Cover with water and let simmer for 10 minutes.

Line casserole dish with half the chow mein noodles and spoon beef and vegetable mixture on top.

Sprinkle cheese and remaining chow mein noodles on top of casserole and bake uncovered for another 10-12 minutes.
